We love to eat potato skins, but I got tired of just using the starch that we scooped out for mashed potatoes. I thought: 'Hmmm, latkes, that could be interesting.' So I tooled around with a the basics of latkes until I had a recipe that I liked. They were such a hit with the family that it's been a staple ever since.

3 cups peeled and mashed baked potatoes
1 cup chopped white onion
1 tablespoon minced garlic
1 ½ teaspoons salt
1 teaspoon freshly ground multi-colored peppercorns
5 tablespoons all-purpose flour
2 eggs, whisked
2 cups extra-virgin olive oil, or as need for frying

Steps:

  • Pour potatoes, onion, garlic, salt, ground peppercorns, flour, and eggs into a bowl, respectively. Fold mixture together with a rubber spatula until ingredients are well coated with egg and garlic, salt, and pepper are evenly mixed throughout. Break up any large potato chunks.
  • Heat oil in a deep-fryer or large skillet to 375 degrees F (190 degrees C).
  • Form latke dough into baseball-size balls and flatten into 1-inch thick rounds.
  • Working in batches, place latkes in hot oil and cook until edges are a rich brown, 3 to 5 minutes. Flip latkes using a slotted spoon and cook until crisp and golden brown, 2 to 3 minutes more. Transfer to a paper towel-lined plate to cool.

BAKED ZUCCHINI POTATO LATKES

this is probably not at all traditional but it is way healthier and very tasty. easy and quick enough to throw together after work and it will use up some of the garden's bounty. i just eyeball this so all measurements are approximate. feel free to improvise. you can use more or less potato and zucchini, you just may need to add a bit more egg or flour to get it to come together nicely.

1 zucchini (large)
1 potato (large, peeled)
1/2 cup low-fat cheddar cheese (shredded)
1/4 cup flour
1/2 white onion (chopped)
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dill
1/2 teaspoon garlic powder

Steps:

  • shred the potato and zucchini with a cheese grater, chop the onion. mix together with the salt and let sit for 10 min to draw out some of the liquid.
  • drain the veggies well, give them a little squeeze. they don't have to be perfectly dry but do the best you can.
  • mix in the remaining ingredients, preheat the oven to 425f and line a baking sheet with parchment paper. just greasing it wont work, they'll stick anyways.
  • form the mix into little cakes about 1/2 inch thick by 2-3 inches around. bake for 10-15 min, flip and bake another 10-15 min or until crispy and browned on both sides.
  • serve with sour cream with chopped green onion mixed inches.

These delicious low-fat potato pancakes or latkes are baked, not fried. A wonderful recipe to have on hand, especially if you're feeding a crowd or watching your fat intake. Best eaten while still warm from the oven; enjoy them with sour cream or applesauce, dusted with a little cinnamon sugar or jam, or accompanied with warm fruit compote (recipe included). 3 -4 russet potatoes (about 1 1/2 pounds)
1 medium onion
1 egg
salt and pepper
1 tablespoon milk
2 tablespoons oil
1 fresh pineapple (peeled, cored, quartered and sliced)
4 fresh oranges, in sections
1 cup pitted prunes
3/4 cup dry white wine
1/4 cup light brown sugar
1/8 teaspoon ground cloves
1/4 teaspoon cinnamon
2 teaspoons grated orange zest

Steps:

  • Scrub potatoes; steam until almost tender. Plunge into cold water, then peel. Grate coarsely.
  • Grate onion; add.
  • Beat egg with salt, pepper, milk; add to potato-onion mixture.
  • Combine lightly.
  • Preheat oil on rimmed cookie sheet. Drop by tablespoonfuls onto sheet and flatten with back of spoon. Bake at 350F until bottoms brown, about 20 minutes. Turn and brown other side, about 15 minutes more.
  • Makes 16 pancakes. Serve with sour cream, applesauce, cinnamon sugar or jam, or with Baked Fruit Compote.
  • Make Baked Fruit Compote:.
  • Arrange pineapple slices, orange sections, and pitted prunes in a shallow 2-quart baking dish.
  • Pour wine over the fruit.
  • Combine brown sugar with spices and orange zest; sprinkle over fruit.
  • Cover and bake at 350F until pineapple is tender, about 45 minutes. Makes 10 servings.

1/4 teaspoon minced yellow onion
1/4 cup plus 1 tablespoon brown rice flour
1 tablespoon ground flax seeds mixed with 3 tablespoons water
3/4 teaspoon sea salt
A pinch of crushed red pepper flakes, optional
1/4 teaspoon paprika, optional, try smoked
Vegan Sour Cream
3/4 cup vegan mayonnaise (Vegenaise or home made)
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon minced fresh dill or a pinch of dried dill, option

  • Preparation 1. Preheat the oven to 400°F. Place all of the ingredients in a large bowl and mix well. You can speed this process up by using the grater attachment on a food processor for the potatoes. 2. Scoop approximately 1/4 cup of the mixture for each latke on to a very well-oiled baking sheet. Flatten to approximately 1/4-inch thick. Bake for 8 minutes. 3. Flip the pancakes and bake, until golden brown, approximately 8 minutes before serving. Variations Make smaller latkes by using 2 tablespoons, instead of 1/4 cup of the batter in each pancake. Replace 1 cup grated potato with grated sweet potato or yam. Add 1 tablespoon of minced fresh dill, parsley, or basil. Add 2 tablespoons finely chopped green onion. Add 1 clove pressed or minced garlic and 1/2 teaspoon seeded and diced chile pepper. 1/2 cup peeled and grated parsnip or carrot. Create Italian latkes by adding 1 tablespoon Italian Spice Mix Go Mexican by adding 1 tablespoon minced cilantro and 1 teaspoon each of chile powder and cumin. 1 pound (approx 1 large) sweet potato
1/2 cup spelt flour
1 tsp unpacked brown sugar
2 tsp white sugar
1 tsp baking powder
1/4 tsp (or more, to taste) cayenne pepper
2 tsp curry powder
1 tsp Cumin seeds
1/4 tsp black pepper
1 tsp table salt
2 eggs, lightly beaten
1/4 cup skim milk

Steps:

  • Preheat oven to 400. Spray two cookie sheets with oil. Peel and grate the sweet potatoes coarsely. In a separate bowl, mix the flour, sugars, baking powder, cayenne, curry powder, cumin, salt and pepper. Ad the eggs and just enough milk to the dry ingredients to make a stiff batter. Add the potatoes and mix. The batter should be moist but not runny. If too stiff, add milk. Drop batter by tablespoons onto the cookie sheets, spacing them a few inches apart, and flatten. Bake for 20 minutes, until bottoms start to brown. Spray tops of latkes with cooking spray, then flip and bake another 15 minutes or so.
