1 tablespoon sliced almonds
¼ cup honey

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a baking dish with cooking spray.
  • Arrange peaches cut-side up in the prepared baking dish.
  • Put butter in a saucepan over medium-low heat, add almonds, and heat together until butter melts, about 2 minutes. Stir honey, brown sugar, and cinnamon into the melted butter; bring to a simmer and add brandy and salt. 2 (4 -5 ounce) center cut boneless pork chops
salt and pepper
2 medium peaches, peeled and sliced
1 shallot, diced
1/2 ounce whiskey or 1/2 ounce Bourbon
1 tablespoon reduced fat margarine
2 tablespoons lemon juice
1 tablespoon brown sugar substitute (of course you can use regular brown sugar, or honey)
1/2 teaspoon dried thyme
salt and pepper, to taste

Steps:

  • Preheat oven to 400* F.
  • On the stovetop, heat a small pot over medium heat. Add butter and shallot and cook for 2 minutes, until shallot begins to soften. Add peaches, whiskey, lemon juice, thyme, and brown sugar substitute and mix well.
  • Bring to a boil, reduce heat, and simmer for about 5-7 minutes, until it starts to thicken. Salt and pepper to taste.
  • Place pork chops in a baking dish, salt and pepper to taste. Top with peach sauce.
  • Cover casserole dish, and bake for 25-30 minutes, until chops are cooked through and peach sauce is bubbly.
  • NOTE: Depending on how juicy your peaches are, you may want to thicken the sauce with some cornstarch after baking the chops.

4 tablespoons butter
1 cup honey graham crackers, crushed (if you use cinnamon graham crackers, just leave out the cinnamon)

  • Cut up nectarines into bite sized pieces. (Figure about 1-1/2 nectarines per person.).

2 tablespoons honey
4 tablespoons unsalted butter
4 sheets graham crackers
1/4 cup pecans, chopped

Steps:

  • Arrange the oven racks in the center and lower third of the oven. Preheat the oven to 350 degrees F. Nestle the peaches, cut-side up, in a small baking dish. Drizzle with the honey and dot with 2 tablespoons of the butter cut into small pieces. Pour 2 tablespoons water into the bottom of the dish and cover tightly with aluminum foil. Place on the center rack and bake until the peaches are soft, 25 to 30 minutes. Let stand, uncovered, for 5 minutes.
  • While the peaches bake, make the crumble topping. Put the graham crackers in a small plastic bag and coarsely crush with a rolling pin or can.   • Preheat the oven to 375°F. Halve the peaches and remove the pits. Arrange the peaches in a shallow gratin dish, cut-side up, in a snug single layer. If you like, fill the cavity of each peach with berries. Sprinkle the sugar over the peaches and berries-more or less, depending on the fruits' sweetness. Drizzle the wine or water over the fruit. Bake the peaches for about 20 minutes, until juicy and tender. Serve warm with their juices and, if you like, with softly whipped cream or vanilla ice cream.
  • Notes
  • If you prefer, peel the peaches before baking: Drop the peaches in boiling water for 20 seconds or so, just enough to loosen the skins. Lift them out and plunge immediately into ice water. When cool, slip off the skins.

2 eggs (50g, small)
2 tablespoons skim milk (or buttermilk)
1/4 teaspoon ground cinnamon
90 g vanilla yogurt (low fat)
6 peach slices (canned drained)

Steps:

  • Preheat oven to 200C (fan forced).
  • Line a baking tray with baking paper.
  • Cut each slice of raisin bread in half to form 2 triangles out of each slice.

  • Preheat the oven to 350 degrees F.
  • Combine the flour, sugar, cinnamon and nutmeg in a small bowl. Add 8 tablespoons of the melted butter and combine until crumbly. Refrigerate for 15 minutes.
  • Slice a very thin piece off the bottom of each peach half so they have flat bottoms. To hurry along not-very-ripe peaches, put them in a paper bag, close the top, and let them sit at room temperature until they ripen. I wish I could give you a specific length of time, but you just need to keep checking until they're ready.

Steps:

  • Butter a baking dish large enough to hold 8 peach halves in a single layer.
  • Cut the peaches in half with a small knife and remove the pits. Cut off the peel in strips. Place the peach halves in the baking dish as you finish peeling them.
  • Use a melon baller to scoop out some of the center pulp from each peach, being careful not to perforate the edges, to make little containers for the filling.
  • Put the peach pulp on a cutting board and finely chop it; transfer it to a small bowl. Add the cookie crumbs, the egg yolk, and the cocoa powder, and stir to combine.
  • Preheat the oven to 350°F and center a rack in the oven. Divide the filling among the peach halves. Pour the wine into the dish around the peaches. Bake 30 to 35 minutes or until a thin crust forms on the filling. Let cool to room temperature or refrigerate until chilled. Serve with whipped cream, if you like.

Baked Peaches With Chocolate image

This is a delicious variation on the classic Italian pairing of peaches baked with a filling of amaretti cookies. From a book called "chocolate treats".

2 tablespoons unsalted butter, softened
3 ounces amaretti cookies, coarsely crushed
1 ounce semisweet chocolate, finely grated
4 large peaches
1 tablespoon golden superfine sugar
8 tablespoons , crem fraiche or 8 tablespoons sour cream

Steps:

  • Preheat the oven to 375.
  • Grease a shallow baking dish with butter.
  • Place cookies, grated chocolate, and butter in bowl and mix together.
  • Place the peaches in a separate heatproof bowl and cover with boiling water.
  • Let stand for one minute, then transfer to a bowl of cold water and let stand for additional minute.
  • Remove the peaches from the skin.
  • Cut each peach in half and remove pit.
  • Using a teaspoon, scoop out a little flesh from each peach half.
  • Chop the flesh and add to the cookie mixture.
  • Fill each peach half with the amaretti cookie mixture, then sprinkle with sugar.
  • Bake in the oven for 30 minutes, or until the peaches are soft and the filling is crisp.
  • Transfer to a serving plate and serve hot with creme fraiche or sour cream.

Life's peaches and cream with chocolate and ginger baked peaches

6 peaches, firm but ripe
12 gingernut biscuits
85g dark chocolate, coarsely grated or finely chopped
3 pieces of stem ginger, finely chopped
1 egg yolk
2 tbsp sweet dessert wine or marsala
finely grated zest of 1 orange
150ml white wine
50g butter

Steps:

  • Preheat the oven to fan 160C/conventional 180C/gas 4. Butter a large, shallow ovenproof dish. Cut the peaches in half and remove the stones, then stand the peaches cut-side up in the dish.
  • Put the ginger biscuits into a tough plastic bag, seal the bag and bash the biscuits with a rolling pin until they're roughly crushed. Tip them into a bowl and mix in the chocolate, two-thirds of the chopped ginger, the egg yolk, dessert wine and orange zest until everything is evenly mixed.
  • Divide the mixture equally between the peach halves, mounding it into the holes left by the stones. Pour the white wine around the peaches, dot them with the butter and bake for 20 minutes, or until tender. (This can be made up to a day ahead, kept in the fridge once cool, then gently reheated, in two batches, on Medium in the microwave for 4-5 minutes each batch.) To serve, spoon over the cooking juices and scatter with the remaining ginger. Serve warm.
