Berry-Walnut Bread image

I volunteered to make a quick bread for a snack at our garden club. Since the topic was roses, I thought there should be something rosy in the bread - so strawberries!

1/2 cup(s) vegetable oil
1/2 cup(s) plain yogurt or plain greek yogurt
2 eggs
1 teaspoon(s) vanilla
1 1/2 cup(s) flour
3/4 cup(s) sugar
1/2 cup(s) chopped walnuts
1/2 cup(s) oatmeal
1 teaspoon(s) baking powder
1 teaspoon(s) cinnamon
1/2 teaspoon(s) salt
1/4 teaspoon(s) baking soda
1/4 teaspoon(s) nutmeg
1 1/4 cup(s) chopped strawberries and blueberries

Steps:

  • Preheat oven to 350ºF Spray a 9-by-5-inch loaf pan or 4 mini loaf pans with baking spray. Optional: line pans with parchment paper, leaving an overhang on two sides; then coat well with baking spray.
  • Mix together the oil, yogurt, eggs and vanilla.
  • In a separate bowl, whisk flour, sugar, chopped walnuts, oatmeal, baking powder, cinnamon, salt, baking soda and nutmeg.
  • Fold the wet ingredients into the dry ingredients.
  • Add berries tossed with 1 tablespoon flour to the batter.
  • Add the batter to prepared pan/s and bake until a toothpick inserted into the center of the loaf comes out clean about 55 to 65 minutes. About 45 minutes if making mini loaves.
  • Let cool 1 hour, then remove the loaf from the pan and transfer to a rack to cool completely.
