RIB EYE STEAKS WITH MUSHROOMS AND ONIONS



Rib Eye Steaks with Mushrooms and Onions image

These delicious, tender rib eye steaks are made in the oven and topped with an easy, buttery mushroom and onion topping.

1 Vidalia onion (sliced thin)
3 garlic cloves (pressed)
8 oz baby bella mushrooms (quartered)
3 tbsp butter
1/2 cup mushroom stock ((substitute beef stock of needed))
1 tsp dried thyme
salt
fresh cracked black pepper
20 oz rib eye steaks (select any size of steak desired)

1/2-1 tbsp butter

Steps:

  • Let the steaks rest and warm up on the cutting board for 15-30 minutes before cooking.
  • Pat steaks dry with a paper towel and season generously with salt and pepper on both sides.
  • Preheat a well seasoned cast iron skillet over medium heat and add butter. Once butter is mostly melted, add sliced onions and cook until onions start to brown.
  • Press in garlic and saute until fragrant. Add mushrooms to the pan and cook vegetables for a few minutes.
  • Pour in mushroom stock and season with salt, pepper, and thyme. Cook until mushrooms soften, take everything out of the skillet and set it aside.
  • Wipe the skillet down with a paper towel to get rid of any small pieces left behind.
  • Preheat the oven to 450°.
  • Preheat the skillet over medium-high heat and add a little bit of butter. Spread butter all over the pan and place the steaks in the hot skillet. Sear steaks for 30-45 seconds on each side.
  • Spread mushrooms and onions mixture over the steaks and place the skillet in the oven. Bake until the steaks reach your desired temperature. Depending on the steak thickness and temperature wanted, it could take between 5 and 15 minutes.
  • You can use a leave-in thermometer to take temperature of the steak but make sure to slide it through the side of the steak, towards the middle. (If leave in thermometer is not available, take the temperature with a regular meat thermometer but make sure to take the steak out of the oven and close the oven door while taking the temperature.)

Mmmm...mmm... This is the recipe that my momma passed down to me. Born and raised in the South, and my momma was raised on a farm, so my family knows a lot about southern cookin'. With this recipe, don't be shy to add other spices to it. This goes great with mashed potatoes, green beans and sweet tea. You can use the gravy from the steak for the mashed potatoes.

1 cup all-purpose flour
1 teaspoon cracked black pepper
1 teaspoon seasoned salt
¼ teaspoon garlic powder
1 pound beef cube steaks
½ cup olive oil
2 cups beef broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the flour, black pepper, seasoned salt, and garlic powder together in a shallow bowl, and coat the cube steaks thoroughly with the flour mixture, patting the flour onto the steaks to get a good coating. Retain 3 tablespoons of seasoned flour.
  • Heat the olive oil in a skillet over medium heat, and pan-fry the cube steaks until golden brown on both sides, about 5 minutes per side. Place the steaks into a 9x12-inch baking dish. Whisk the retained seasoned flour into the beef broth until smooth, and pour the broth over the steaks. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the meat is tender and the gravy has thickened, about 2 hours.

1/3 1/3 1/3 cup cornstarch
1/4 1/4 1/4 cup vegetable oil
1 1 1 tablespoon water
1 1 1 tablespoon soy sauce
1 1 1 tablespoon tomato paste
2 2 2 onions, halved and sliced thin

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 300 degrees. Pat steaks dry with paper towels and season with salt and pepper. Spread cornstarch in shallow dish. Working with 1 steak at a time, dredge steaks in cornstarch, shaking off excess, and transfer to plate. 2. Heat 2 tablespoons oil in 12-inch skillet over medium-high heat until just smoking. Add 3 steaks at a time and cook until browned, about 3 minutes per side, then return to plate. Repeat with remaining 2 tablespoons oil and remaining 3 steaks. 3. Remove skillet from heat and discard oil. Combine water, soy sauce, and tomato paste in now-empty skillet, scraping up any browned bits. 1 1/2 pounds ground beef sirloin
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
1 shallot, finely chopped
1 clove garlic, finely chopped
3 tablespoons finely chopped parsley leaves
1/2 teaspoon ground mustard
2 tablespoons panko bread crumbs
1/4 cup all-purpose flour
Kosher salt and freshly ground pepper
1 tablespoon canola oil
1 tablespoon butter
2 tablespoons butter
8 ounces crimini mushrooms, cleaned well and quartered
1 small onion, minced
1 teaspoon finely chopped thyme leaves
Salt and freshly ground black pepper
1/4 cup all-purpose flour
1/2 cup brandy
2 cups low-sodium beef stock

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the ground beef, egg, Worcestershire, shallots, garlic, parsley, ground mustard, bread crumbs, flour, and salt and pepper, to taste, in a large bowl. Shape the mixture into 6 equal-sized oval patties and set aside on a plate.
  • Heat a large frying pan over medium heat and add the canola oil and butter. When the butter foams add the patties and brown, about 3 to 4 minutes per side. Transfer the patties to a 13 by 9-inch baking dish. Drain all of the fat from the pan but leave any browned bits.
  • Return the pan to medium heat and melt the butter for the gravy. Add the mushrooms, onion, and thyme and season with salt and freshly ground black pepper, to taste. Cook, stirring rarely, until the mushrooms are slightly browned and soft, about 4 minutes. Sprinkle in the flour and mix until fully incorporated. Stir occasionally, until the flour is lightly toasted, about 3 minutes. Add the brandy and stir, scraping up any browned bits from the bottom of the pan. Slowly pour in the stock and stir until smooth. Let the mixture come to a boil and cook until sauce is reduced and thickened, about 8 minutes.
  • Taste and add salt and freshly ground black pepper, if needed. Lots of pepper is good in this dish! Pour the sauce over the patties in the baking dish and cover with aluminum foil. Bake until the meat is tender and slightly pink in the middle, about 20 minutes. Remove the dish from the oven and serve.
