CHEESY CHILI MAC CASSEROLE

1 tablespoon olive oil
1 cup diced yellow onion (1 small onion)
2 pounds lean ground beef
3 cloves garlic, minced
1 (15- ounce) can fire roasted diced tomatoes, undrained
1 (15- ounce) can tomato sauce
1 (6- ounce) can tomato paste
1 (4- ounce) can chopped green chilis
1 1/2 teaspoons kosher salt
2 tablespoons chili powder
1 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 (7- ounce) can Mexicorn, drained
1 (15- ounce) can black beans, drained and rinsed
2 cups uncooked large elbow macaroni
1 1/2 cups grated Mexican cheese blend

Steps:

  • Preheat oven to 375°F. Lightly coat a 9×13 baking dish with nonstick spray. Set aside.
  • In a large, deep skillet or Dutch Oven heat the olive oil over medium heat. Add the onions to the pan and cook until softened, about 5 minutes. Turn the heat up to medium-high and add in the ground beef. Cook until no longer pink. Add in the garlic and cook for 2 more minutes. Drain excess liquid in pan if necessary.
  • Add in the fire roasted tomatoes, tomato sauce, tomato paste, green chilis, salt, chili powder, cumin, smoked paprika, corn, and black beans. Stir to combine. Bring mixture to a boil and then turn heat to low and simmer, stirring occasionally.
  • Bring a pot water to a boil and cook the macaroni according to package directions. Drain and add the pasta to the chili mixture, stirring to combine.
  • Transfer mixture to your prepared baking dish and top with the grated cheese.
  • Bake for 25 minutes, or until the cheese is melted and mixture is bubbly.
  • Serve immediately.

This is my version of chili Mac. I haven't made this dish in a long long time. I had all of the ingredients in my home to make this. I thought I would make it, and share with you all. I hope you all enjoy it.

1 - 1 1/2 lb of cooked hamburger
1 large sweet onion or other
1 red bell pepper
1 green bell pepper
28 oz can of chopped tomatoes
7 oz mild salsa like chi chi's or tostito's
1 c uncooked macaroni
1 15 ounce can of black beans rinsed and drained
1 can(s) 11 ounce can crisp sweet corn such as green giant or dellmonte
4 oz can of green chilies
2 tsp chili powder
1 tsp dried cilantro leaves optional
1 tsp parsley
1- 1 1/2 tsp garlic salt ( salt according to your taste )
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/2 tsp ground black pepper
2 Tbsp corn starch
8-16 oz shredded mexican cheese

Steps:

  • 1. Fry the hamburger drain and pour into large stock pot. In the same fry pan add 1 to 2 tablespoons of oil of your choice. Fry the peppers and onions together. Add the peppers and onions to pot.
  • 2. Add the rest of the ingredients except for the cornstarch, macaroni and cheese.
  • 3. Bring ingredients to a boil on stove while stirring well. Remove from heat. Mix in Uncooked macaroni. sprinkle with cornstarch and stir to combine well.
  • 4. Pour into a 2 1/2 quarts or larger casserole dish. you may also use a 9 x 13" baking pan and cover with foil. Bake about 20-30 minutes, or until macaroni is tender. Bake at 350° covered. Uncover casserole. Sprinkle with Mexican cheese. Bake casserole in oven until cheese melts. Remove from oven and serve. This taste even better the second day after it sits. If you wish you can bake this ahead of time and reheat. If you are planning on reheating this. Do not top with cheese until you reheated and let cheese melt.

1 (16 ounce) package elbow macaroni
2 pounds lean ground beef
½ cup chopped onion
2 (8 ounce) cans tomato sauce
1 (14.5 ounce) can diced tomatoes
1 (14 ounce) can whole kernel corn, drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (1.25 ounce) package taco seasoning mix
1 (1.25 ounce) package chili seasoning mix
1 (10.75 ounce) can condensed cheddar cheese soup
1 (10.75 ounce) can milk
1 cup shredded Cheddar cheese
½ cup sour cream
1 ½ teaspoons garlic powder
½ teaspoon salt
½ teaspoon black pepper
1 cup shredded Cheddar cheese
1 cup crushed tortilla chips
½ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • In a large skillet over medium heat, cook and stir the ground beef with onion until the meat is browned, about 10 minutes. Break the meat up into crumbles as it cooks; drain excess grease. Mix in the tomato sauce, diced tomatoes, corn, kidney beans, taco seasoning, and chili seasoning; bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, for about 20 minutes.
  • Whisk the Cheddar cheese soup and milk in a saucepan until smooth, and bring to a simmer over medium-low heat. Whisk in 1 cup of shredded Cheddar cheese, 1/2 cup of sour cream, and garlic powder; season to taste with salt and black pepper.
  • Arrange the cooked macaroni into the bottom of a 10x15-inch baking dish, and mix with the soup mixture. Pour the ground beef chili over the macaroni, and sprinkle with 1 more cup shredded Cheddar cheese and crushed tortilla chips.
  • Bake in the preheated oven until the casserole is hot and bubbling and the cheese topping has melted, 20 to 30 minutes. Serve topped with dollops of sour cream.

1 cup elbow macaroni, uncooked
1 1/2 lbs lean ground beef
1 medium onion, chopped
2 large garlic cloves, minced
1 (28 ounce) can diced tomatoes, undrained

1 (6 ounce) can tomato paste
1 (4 ounce) can green chilies, chopped
1 teaspoon salt
3/4 teaspoon chili powder

2 cups reduced-fat Mexican cheese blend, shredded

Steps:

  • Cook macaroni according to package directions.
  • Meanwhile, in a large nonstick skillet, cook beef, onion & garlic over medium heat until meat is no longer pink, then drain.
  • Preheat oven to 375 degrees F & coat a 13"x9" baking dish with nonstick cooking spray.
  • Add tomatoes, beans, tomato paste, chilies & seasonings to beef mixture & stir to combine.

In searching what to make for dinner tonight, I took out a package of ground meat (buffalo, specifically) from the freezer, and found a box of elbow macaroni. Looked like Chili Mac makings to me! :) I had never made Chili Mac before (I just remember having it in the cafeteria when in grade school), so I took a look at what was here on Zaar... and was surprised not find many recipes for it. I put together a recipe out of what I found here and elsewhere online, but the below meat chili mac was somewhat adapted from Miss Annie's vegetarian Marvelous Macaroni Chili. Very tasty, very flexible! :) This is a Pantry Challenge recipe.

1 cup uncooked elbow macaroni (we use Mission lower-carb macaroni)
1 lb ground chicken or 1 lb ground turkey
1 cup chopped yellow onion

1 (6 ounce) can tomato paste
1 (7 ounce) can chopped mild green chilies, with liquid

1 teaspoon dried ancho chile powder
2 teaspoons dried oregano
1 teaspoon ground cumin

Tabasco sauce, to taste
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Cook the pasta according to package directions until al dente (if using regular macaroni this will take about 6 to 7 minutes, if using lower-carb versions it'll take about 15 minutes); drain and set aside.
  • While pasta is cooking, in a large sauté pan cook the ground meat, onion, and garlic until meat is browned, about 5 to 7 minutes; drain fat if desired or necessary.
  • Add the tomatoes, tomato paste, mild green chiles, beans, chili powder, ancho, oregano, cumin, pepper, salt, and tabasco (to taste) and simmer for 5 minutes.
  • Add the cooked macaroni and stir well to incorporate.
  • Pour mixture into a lightly pan-sprayed large casserole dish and sprinkle with the cheddar cheese.
  • Bake at 350 degrees F for 20 to 30 minutes or until the cheese is golden and bubbly.
  • Serve with a bit of sour cream for topping and veggies.
