4 sprigs fresh thyme
8 sprigs fresh parsley
2 bay leaves, preferably fresh
8 cloves garlic, smashed
4 (6-ounce) skinless mahi mahi fillets
Kosher salt and freshly ground black pepper
3/4 cup dry vermouth
4 tablespoons extra-virgin olive oil
2 teaspoons freshly squeezed lemon juice
12 cherry or pear red and yellow tomatoes, for garnish

Steps:

  • Preheat oven to 450 degrees F.
  • Make a bed of herbs in a medium gratin dish or baking dish with the thyme, 4 of the parsley sprigs, and the bay leaves. Scatter the garlic on top. Season both sides of the fish with salt and pepper and place on top of the herbs. Add the vermouth and drizzle 2 tablespoons of the oil over the fish. Cover loosely with foil and bake until the fish is opaque, about 15 to 20 minutes, depending on how thick the fillets are.
  • Carefully pour the pan juices into a small saucepan and set the fish aside. Reserve the garlic and 4 thyme sprigs. Bring the sauce to a boil over high heat and cook until reduced by half, about 5 minutes. Whisk in the remaining 2 tablespoons olive oil and the lemon juice. Season with salt and pepper. Set aside.
  • Divide fish among 4 serving plates. Pour sauce over fish and garnish with the 4 remaining parsley sprigs, the reserved garlic and thyme, and tomatoes.

I have used this method for fresh albacore, yellowtail, and dorado (mahi mahi). I am sure it would work for any firm white fish. Don't fear the mayonnaise! I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

½ cup mayonnaise
2 tablespoons soy sauce, or more to taste
1 large clove garlic, minced
6 (5 ounce) mahi mahi fillets
¼ cup crushed saltine crackers, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stir mayonnaise, soy sauce, and garlic together in a bowl.
  • Place mahi mahi in a baking dish. Spoon mayonnaise mixture over the fish, then turn to coat. Sprinkle saltines over top.
  • Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes.

2 lbs boneless mahi mahi fillets, skinned (about 8 fillets)
2 tablespoons lemon juice
3 tablespoons butter, melted (optional)
1/2 teaspoon ground ginger
1/4-1/2 teaspoon salt
1/4-1/2 teaspoon pepper
1/4 teaspoon paprika
8 orange slices
20 ounces crushed pineapple, partially drained-you still want some juice

Steps:

  • Preheat oven to 375. Lightly grease one or two (you'll probably need two) baking dishes.
  • Wash and pat dry Mahi Mahi fillets and lay them in a single layer in the baking dishe(s).
  • Drizzle fillets with lemon juice, then melted butter (if using it). Sprinkle evenly with the ginger, salt, pepper, and paprika.
  • Place an orange slice over each fillet.
  • Evenly pour the crushed pineapple over all the fillets.
  • Bake at 375 for about 20-30 minutes or until fillets are opaque; do not overbake.

Found this recipe online and played with the ingredients till they were just right. It turned out wonderful and definitely a hit at our dinner table. It is simple, easy and very flavorful. I paired it with a steamed wild rice medley and steamed broccoli in a garlic butter sauce.

4 (6) oz mahi mahi filets
3 Tbsp local organic honey
3 Tbsp soy sauce
3 Tbsp balsamic vinegar
1 Tbsp ginger, freshly grated
1 Tbsp garlic, minced fresh
2 Tbsp olive oil
1/4 tsp black pepper, freshly ground
1 Tbsp parsley
extra olive oil to oil the baking dish

Steps:

  • 1. Take a small casserole dish and oil it very well inside with olive oil. Set it aside. Turn on your oven to 375 degrees and let it preheat.
  • 2. In a small bowl mix all ingredients together very well except the fish filets. Place the Mahi Mahi filets into a small baking dish and pour the marinade over the top making sure they are all covered well. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
  • 3. After marinading take the cover off of the baking dish and place it on the middle rack of your oven. Bake for about 20 minutes. Leave the marinade in the baking dish. The fish will be done when it flakes or hits a internal temperature of 165.
  • 4. After baking spoon marinade over top and serve. Hope you enjoy. ;)

3 tablespoons olive oil
3 tablespoons butter
2 large eggs
1 cup shredded Parmesan cheese
3 tablespoons all-purpose flour
4 (6 ounce) mahi mahi fillets
salt and ground black pepper to taste
½ cup finely chopped toasted macadamia nuts
1 cup mango salsa

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat olive oil and butter in an oven-proof pan over low heat until butter is melted. Remove from the heat.
  • Beat eggs in a small, shallow dish. Mix Parmesan and flour in a second shallow dish.
  • Season mahi mahi fillets with salt and pepper. Dip into beaten egg. Lift up so excess egg drips back in the bowl. Press into Parmesan mixture to coat both sides. Lay each fillet into the melted butter mixture, then turn each piece over to coat. Sprinkle macadamia nuts evenly over each fillet.
  • Bake, uncovered, in the preheated oven until fish is opaque and flakes easily with a fork, 7 to 11 minutes, depending on the thickness of the fillets.
  • Place each fillet on a serving plate and top with 1/4 cup mango salsa.

1 whole lemon, juice of
1 garlic clove, minced
10 ounces fresh mahi mahi
1/2 tablespoon ground black pepper
1 tablespoon unsalted butter
1 teaspoon fresh basil, chopped
1 tablespoon honey (maple syrup if not available)
1/4 teaspoon salt
1/2 teaspoon Worcestershire sauce (optional)
1 scallion, chopped
1 teaspoon Dijon mustard

Steps:

  • Preheat oven to 375 deg F.
  • Heat butter in small skillet on medium heat.
  • Add garlic and heat for 1 minute.
  • Add honey, worcestershire and mustard, cook for an additional minute.
  • Add lemon juice and allow to cool in refrigerator for 10 minutes, or until mixture is thick.
  • Chop scallions and basil.
  • Cut fish into 2oz portions.
  • Pinch a piece of foil so that it has four raised edges to trap the sauce.

Served with some tomato and mango salsa or some sauteed vegetables, this will play on your tastebuds. Any Kind of steak-like fish will do (swordfish, salmon) Try 1- 1 1/2 inch fish steaks

2 1/2 lbs mahi mahi
2 tablespoons orange zest
1/4 cup brown sugar
1/2 cup graham cracker crumbs
1/2 tablespoon fresh lemon juice
2 tablespoons fresh orange juice
2 tablespoons cilantro, chopped
2 tablespoons parsley, chopped
2 tablespoons onions, chopped
4 teaspoons extra virgin olive oil
2 tablespoons coriander, chopped
1/2 tablespoon fresh lemon juice

Steps:

  • Turn on oven to 375 degrees
  • Wash fish with lemon in a glass bowl and drain all liquid. Add all ingredients for fish marinade and let sit for 15 minutes.
  • In another bowl, combine orange zest, brown sugar, lemon juice, orange juice and graham cracker crumbs until thoroughly mixed (can also be placed in a food processor).
  • Once marinade is set, Coat fish with graham cracker mixture and place on non-stick baking tray.

HALIBUT OR MAHI MAHI BAKED IN FRESH GREEN SALSA

I found this in Sunset magazine and wanted to keep it around it was delicious. Recipe calls for poblano chilies but they weren't avail in the store so Jalapenos did the trick. I also tried it with Mahi Mahi fish and it turned out excellent. Recipe can be halved.

1 tablespoon butter
2 tablespoons flour
3/4 cup tomatillo, coarsely chopped (green tomatoes)
1/2 cup onion, coarsely chopped
2 poblano peppers, coarsely chopped (or sub in jalapeno for less heat)
1/4 cup fresh cilantro, packed coarsely chopped, plus 2 TBSP leaves for garnish
1/2 cup reduced-sodium chicken broth
3/4 cup sour cream, divided (I used Light Sour Cream)
kosher salt
1 tablespoon lime juice
1 3/4 lbs salmon fillets (about 1 inch thick) or 1 3/4 lbs mahi mahi (about 1 inch thick)

Steps:

  • Preheat oven to 375. In a large frying pan, melt butter over high heat. Stir in flour, remove from heat, and mix to form a smooth paste.
  • Scrape flour paste into a blender. Add tomatillos, onion, chilies, chopped cilantro, chicken broth, and 1/2 cup sour cream. Puree in blender. Pour green sauce back into frying pan; add salt and lime juice to taste and bring to a boil.
  • Rinse fish, pat dry with paper towels, cut into 6 equal pieces, and season with salt. Set pieces slightly apart in an 8 by 12 in baking dish.
  • Pour evenly over fish.
  • Bake fish until it flakes but still looks moist in the center of the thickest part (cut to test), 15 to 20 minutes.
  • Serve up fish and spoon sauce over portions. Top off with small spoonfuls of remaining sour cream, and sprinkle with cilantro leaves.

1 large lemon, zested

1/2 lemon, juiced
1 tablespoon fresh dill

  • Preheat oven to 375°F. Spray baking sheet with cooking spray, or line the cooking sheet with foil. Curl up the edges to keep the butter and seasoning in the foil. This makes for easy clean-up. Place fish fillets on pan. Pour melted butter or oil and lemon juice over fish. Sprinkle evenly with lemon zest and dill. Add a few turns of the pepper mill, if you like. Place in oven and back approximately 20 minutes or until fish is white, fully opaque, and flaky. While fish is baking, put cream cheese, lemon juice, and dill into a microwave safe bowl and cook for 1 minute, stirring at 30 seconds. You may need to do some extra cooking and mixing to make it smooth. Mixture will thicken as it cools. Place fillets on a plate and garnish with sauce. This recipe would be great with any white fish or even salmon.

2 shallots, sliced
2 lemons
1/4 c butter, melted
salt/pepper to taste
1/4 c parsley , chopped

  • 1. cut mahi-mahi into about 6 pieces, salt and pepper each side.
  • 2. slice the peppers and shallots,place on the bottom of a oil sprayed baking dish.
  • 3. place the mahi-mahi pieces on top and squeeze the juice of 1 lemon and drizzle with butter, top with sliced lemon and sprinkle with the parsley and cilantro, cover and bake at 350 about 30 mins or slightly firm to touch.

2-3 tomatoes, peeled and thinly sliced
1 c italian seasoned dry bread crumbs
2 large mahi-mahi (or other light, flakey fish
salt and pepper to taste
wine sauce(recipe follows)
1/2 c grated parmesan cheese

Steps:

  • 1. Preheat oven to 450 degrees. Arrange tomatoe slices in a single layer on the bottom of an 11x7 inch glass baking dish. sprinkle crumbs on fish and season with salt and pepper. Arrange fillets on tomatoes. Cover with Wine Sauce and sprinkle with Parmesan. Bake 12-18 minutes. Do not overbake. Fish is done when it flakes easily. Parmesan will form a nice crust on top.
  • 2. wine Sauce 1/2 cup white wine 1/2 stick butter 2 teaspoons lime juice Bring wine, butter and lime juice to a boil in a saucepan over low heat. Increase heat to medium. Boil 3 minutes. Pour over fish. NOTE: Recipe may be doubled or tripled.
