Put the chicken mixture into the bowl with the cooked pasta. Add the canned tomatoes, mozzarella cheese, parsley, salt, and pepper. Stir to combine. Place the mixture in a buttered 8 by 8 by 2-inch baking dish. In a small bowl mix together the bread crumbs and the Parmesan cheese. Sprinkle over the top of the pasta mixture. BAKED ITALIAN CHICKEN THIGHS
These juicy chicken thighs are topped with a flavorful blend of three cheeses and your favorite marinara sauce. Serve over pasta or rice or alongside roasted potatoes for a tasty weeknight meal. I like to shred my own cheese, as I find it melts better, but feel free to use pre-shredded to save time.

BAKED ITALIAN CHICKEN BREAST WITH BRIE
Relatively simple baked boneless chicken breast with Italian flavorings topped with melted Brie...aka suuuuper yummy. Good for a romantic dinner (you can skip the garlic) or to impress family and friends. This dish is really fun because you can customize it easily. For example, instead of prosciutto try sliced artichoke hearts, or try a different soft cheese on top. Make it more southwestern with pepperjack cheese, light beer, and bell peppers. Guys love it.

ITALIAN BAKED CHICKEN AND PASTA
Courtesy of Giada DeLaurentiis! I made this today after sitting on the recipe for quite some time. I am sorry I held on to it. It will be in my regular rotation from now on, it was easy, quick and very tasty. I will change a few things though...I will use tomatoes with Italian seasoning and maybe a little more cheese next time! I even think it would be good if you added some ricotta to the mix. There are a lot of possibilities, but it was good as it is written. I doubled the recipe and it was fine. Enjoy!
