HOMEMADE HAM & CHEESE POCKETS



Homemade Ham & Cheese Pockets image

Make freezer-friendly homemade ham & cheese pockets with this easy recipe!

Number Of Ingredients 9

2 and 1/4 teaspoons Platinum Yeast from Red Star (1 standard packet)
1 and 1/3 cups (320ml) warm water, about 110°F (43°C)
3 and 1/2 cups (438g) all-purpose flour (spoon & leveled), plus more for work surface
1 Tablespoon (13g) granulated sugar
2 Tablespoons (30ml) olive oil
3/4 teaspoon salt
egg wash: 1 large egg beaten with 1 Tablespoon milk
8 slices cheese or 2 cups shredded (I use sharp cheddar)
16 thin slices deli ham or 2 cups cubed ham

Steps:

  • In a large mixing bowl or the bowl of your stand mixer fitted with a hook attachment, combine the yeast and warm water. Stir it around and let sit for 5 minutes until the mixture is foamy. If the yeast doesn't dissolve or foam, your yeast is dead. Start again with active yeast. Add flour, sugar, olive oil, and salt. Mix by hand or with the dough hook on low speed for 1 minute. Once all of the ingredients are mixed, slowly knead for 7 minutes by hand or with your dough hook on low-medium speed. If your dough is too wet, add up to 1/4 cup more flour. After kneading, your dough should be smooth and elastic. Poke it with your finger - if it slowly bounces back, your dough is ready to rise. If not, keep kneading.
  • Shape the dough into a ball and place in a large mixing bowl that has been greased lightly with olive oil. Turn it over to coat all sides. Cover tightly with plastic wrap and allow to rise in a warm environment (about 75°F or 80°F/24°C or 27°C)* for 1 hour or until doubled in size.
  • Preheat oven to 400°F (204°C). Line 2 large baking sheets with parchment paper or silicone baking mats.
  • Once risen, punch the dough down to release the air. Turn the dough out onto a lightly floured surface. Using a sharp knife, slice dough in half. Then slice each half into quarters. You'll have 8 pieces of dough, as shown in the photo above. Flatten each piece with your fingers or use a rolling pin. You want each piece of flattened dough to be about 6 inches long and 4 inches wide. They don't have to be perfect rectangles, as you can see in my photos! Transfer flattened dough to the baking sheets. Place the cheese (I fold the slice in half) and ham (2 slices for each) on top of the dough on one side, then fold the other side over top. Pinch the edges to seal as best you can. Use a fork to crimp the edges. Brush the tops and sides of each pocket with egg wash, then slice 2-3 slits in the tops for air vents (use a super sharp knife to do that).
  • Bake the pockets for 20-25 minutes, or until the tops are golden brown. Make sure to rotate the baking sheet once or twice during bake time. Remove pockets from the oven and allow to cool on the pan until ready to handle and serve.

1 tablespoon extra-virgin olive oil
2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips and onions
2 cups leftover cheeses, cut into pieces, such as Brie, Parmesan, and/or Gruyere
1/4 pound Canadian bacon or Black Forest ham, chopped
1/2 cup chopped scallions
12 eggs, at room temperature
2 cups milk, at room temperature
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham, and then the scallions.
  • Whisk together the eggs, milk, salt and red pepper flakes in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.

3 tablespoons butter
3 tablespoons all-purpose flour
1 cup milk
Pinch of ground nutmeg
Coarse salt and ground pepper
8 slices white sandwich bread
3/4 pound cooked ham, thinly sliced
2 cups shredded Gruyere, or other melting white cheese
Dijon mustard, for serving (optional)

Steps:

  • Preheat oven to 400 degrees. Heat butter in a medium saucepan over medium heat until foamy. Add flour; cook, whisking constantly, until smooth, 1 to 2 minutes (do not let color).
  • Add milk and nutmeg to saucepan. Whisking constantly, bring to a simmer; continue cooking until thickened, 2 to 3 minutes. Season with salt and pepper. Transfer to a shallow dish; cover with plastic wrap, pressing it directly on the surface of the sauce. Refrigerate at least 10 minutes.
  • Place 4 slices of bread on a baking sheet. Spread each slice with sauce, dividing evenly; layer with ham, and sprinkle each with 1/4 cup cheese. Top with remaining bread; sprinkle with remaining cup cheese. Bake until cheese is melted and golden, about 15 minutes. Serve hot, with mustard on the side, if desired.

2-12 count Hawaiian dinner rolls
2 lbs. shaved Virgina ham (not honey ham)
12 slices swiss cheese
1 1/2 tsp. Dijon mustard
1 1/2 tsp. Worchestire sauce
1 1/2 tsp. dried onions
3/4 cup butter
Poppy seeds (optional)

Steps:

  • You will need 2 13x9 pans. Split rolls in half and place bottom half in pan. Place 2 slices of ham on the rolls. Cut the slices of cheese into quarters and place 2 quarters on top of ham. Place tops back on dinner rolls. In small saucepan, mix butter, mustard, dried onions, and worchestire sauce until butter melts. Pour this mixture over rolls, sprinkle with poppy seeds. Cover with foil and refrigerate overnight. Pre-heat oven to 350 degrees, uncover sandwiches and bake 15-20 minutes.

4 slices bread
2 slices fully cooked ham
2 slices cheddar cheese
2 eggs
1-1/4 cups milk
1 tablespoon prepared mustard
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
Fresh asparagus tips, cooked
Shredded cheddar cheese, optional

Steps:

  • Place two slices of bread in a greased 11x7-in. baking dish or two individual baking dishes. Top each with a slice of ham and cheese; top with remaining bread. , In a small bowl, beat the eggs, milk, mustard and parsley. Pour over sandwiches. Let stand for 5 minutes; carefully turn sandwiches over and let stand 5 minutes longer. , Bake, uncovered, at 350° for 30-35 minutes. Top with asparagus and cheese if desired. Bake 5 minutes more or until cheese is melted and a knife inserted into the egg mixture comes out clean. Serve immediately.

5 tablespoons butter, softened
4 tablespoons mayonnaise
3 tablespoons strong mustard or 3 tablespoons creole mustard
1/2 teaspoon onion powder
2 -4 teaspoons poppy seeds
8 best hamburger buns, split
2 1/2 lbs thinly sliced baked deli ham
8 thick slices deli swiss cheese, up to 12 ounces
aluminum foil

Steps:

  • Preheat oven to 350 degrees. Cut aluminum foil into pieces large enough to hold each sandwich.
  • Whisk or beat the butter with the mayonnaise, mustard, onion powder and poppy seeds.
  • Spread sauce on both sides of each bun, if desired, sauce quantity may be doubled, and more can be used, although not all of it will be required.
  • Place ham slices on the bottom side of each bun. Put cheese slices evenly on top of ham.
  • Replace bun tops, wrap in foil.
  • Bake sandwiches, on a sheet tray, for up to 25 minutes, unwrap and serve.
  • If desired, buns may be frozen thoroughly, and baked at 350 for 1 hour, up to 1 month later.

8 hamburger buns, split
16 slices deli ham

  • In a small bowl, combine the butter, onion, mustard and poppy seeds; spread about 2 tablespoons on each bun. Layer with ham and cheese; replace tops.
