This is a delicious breadcrumb topping for haddock, scallops or cod. I have lightened it up by using light butter. The lemon and white wine provide a great flavor.

2 haddock fillets (or scallops) or 2 cod fish fillets (or scallops)
1/2 cup plain breadcrumbs
1 small lemon, juice of
1 tablespoon light butter, melted
Pam cooking spray
salt
pepper
garlic powder
1/2-3/4 cup white wine

Steps:

  • Preheat oven to 425.
  • Wash and dry fish fillets, then season with salt.
  • Meanwhile, mix breadcrumbs, melted butter, juice of a lemon, salt, pepper, and garlic powder.
  • You will need to spray some cooking spray on the breadcrumbs to make sure they are moist enough. The breadcrumbs should be forming into moist crumbs.
  • Place fish in shallow baking pan.
  • Pour the white wine around the fish, making sure it does not actually cover the fish.
  • Place the breadcrumb mixture evenly over the fish.
  • Put the fish(for haddock or cod) in the oven for about 10-12 minutes, until almost done.
  • You then may want to broil the fish for a minute or two just to crisp up the topping.

2 lbs haddock or 2 lbs cod fish fillets
32 Ritz crackers, crushed (32 crackers in a sleeve)
1/4 cup parmesan cheese, grated
2 teaspoons garlic powder
1/4 cup chopped fresh flat leaf parsley
3 tablespoons extra virgin olive oil
3 tablespoons butter, drawn

Steps:

  • Preheat the oven to 400 degrees.
  • Mix all ingredients together in a bowl except for the butter and fish. Use a food processor or your hands to make an evenly consistent bowl of crumbs.
  • Place the fish in a cooking dish(es), cover with a good handful of crumbs and sprinkle with drawn butter.
  • Place two tablespoons of water around the bottom of the fish.
  • Bake for 10 to 14 minutes, until the breadcrumbs become brown. Serve immediately with a lemon wedge and your favorite vegetable.

6 slices haddock (about two inches thick)
6 slices lemons
1 1/2 cups breadcrumbs (or rusk crumbs, which were originally called for in this cookbook)
salt, to taste
butter, to personal preference (no substitutions)

Steps:

  • Spray a cooking pan with cooking spray (Pam) and preheat oven to 350°F.
  • Arrange fish in pan and place a lemon slice on each piece.
  • Sprinkle with crumbs, season with salt and dot liberally with butter.
  • Bake for 45 minutes or until fish is done (it will easily flake).
  • Serve hot.

5 tablespoons butter, melted, divided
2 shallots, minced
1/2 cup dry white wine, divided
1 1/2-2 lbs haddock fillets (cut into 4 serving pieces)
1 tablespoon lemon juice
salt and pepper, to taste
1 cup fresh breadcrumb
2 teaspoons Dijon mustard
3 tablespoons fresh parsley, minced or 1 -2 tablespoon dried parsley
1 lemon, cut into 8 wedges

Steps:

  • Preheat oven to 400F/200°C.
  • Pour 3 tablespoons of the melted butter into a baking dish large enough to hold the fish fillets in a single layer.
  • Sprinkle the shallots over the butter and pour in 1/4 cup of the wine.
  • Arrange the fish fillets on top. Sprinkle each with a little lemon juice and season with salt and pepper.
  • In a small bowl, toss the bread crumbs with the remaining 2 tablespoons melted butter. Mix in the mustard and parsley.
  • Pat the bread crumb mixture evenly over the top of the fish fillets. Drizzle the remaining 1/4 cup wine over the fish.
  • Bake until the fish flakes easily when tested with a fork, about 15-20 minutes.
  • Serve with lemon wedges.

¾ cup milk
2 teaspoons salt
¾ cup bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon ground dried thyme
4 haddock fillets
¼ cup butter, melted

Steps:

  • Preheat oven to 500 degrees F (260 degrees C).
  • In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.
  • Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

This is my favorite way to cook haddock. The recipe was originally for baked stuffed shrimp, so you could use it for that also.

1 1/2 lbs haddock
3/4 cup milk (for soaking the fish in) (optional)
6 tablespoons butter
2 tablespoons onions, chopped fine
1 garlic clove, minced
1/4 cup dry sherry
1 tablespoon dried parsley
1 dash paprika
salt, to taste
1/2 cup breadcrumbs
1/2 cup crushed butter flavored cracker (such as Ritz or Townhouse)

Steps:

  • Preheat oven to 350°F.
  • Rinse fish and then soak in milk (This will take away any "fishiness").
  • Melt butter in a small frying pan. Add onion and saute until softened, then add garlic.
  • Remove from heat, add sherry, parsley, paprika and salt to taste.
  • Mix bread crumbs with crushed cracker crumbs.
  • Remove fish from milk, rinse again, then place in a baking dish.
  • Pour crumb mixture over fish.
  • Then pour butter/sherry mixture over crumbs.
  • Bake at 350°F for about 25 minutes. Place under broiler on high until golden brown and slightly crispy. (Watch it closely, this does not take long.).
  • Enjoy!
