BAKED POLLOCK
I'm always looking for ways to enjoy baked fish. This recipe works not just for pollock but for just about any fish fillet. Cook time will depend on the thickness and size of your fillets. I used frozen pollock fillets, thawed.

Steps:
- Preheat oven to 350 degrees.
- Cover half sheet pan with foil and spray with non stick cooking spray.
- Mix all ingredients except fish.
- Spread mixture on one side of each fillet.
- Bake uncovered for 15 to 25 minutes (depending on the thickness of you fish) till fish is done.
- Brown slightly with broiler if desired.

GARLIC-BUTTER BAKED SALMON

Steps:
- Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs. Brush with 1 teaspoon oil. Wrap each bulb in heavy-duty foil. , Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. , Squeeze softened garlic into a food processor; add butter and remaining oil. Cover and process until blended; set aside. , Place salmon in a greased 15x10x1-in. baking pan. Sprinkle with salt and pepper; drizzle with lemon juice. Spoon 1 tablespoon garlic butter over each fillet. , Bake, uncovered, at 425° for 8-10 minutes or until fish flakes easily with a fork. Sprinkle with parsley and rosemary.

- Preheat the oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray it with cooking spray.
- Season fish fillets with herbs, salt, and pepper. Place on the prepared baking sheet.
- Mix sour cream, Parmesan cheese, and melted butter together in a small bowl. Apply sour cream mixture to each fillet.
- Bake in preheated oven until fish flakes easily with a fork, 15 to 25 minutes.

FANTASTIC LEMON BUTTER FILLET
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a medium saucepan over medium heat. Mix in lemon juice, salt, pepper, parsley flakes, and garlic. Bring to a boil. Cook and stir about 10 minutes, until thickened.
- Arrange cod fillets in a single layer on a medium baking sheet. Cover with 1/2 the butter mixture, and sprinkle with lemon pepper. Cover with foil.
- Bake 15 to 20 minutes in the preheated oven, until fish is easily flaked with a fork. Pour the remaining butter mixture over the fish to serve.

BROILED LEMON THYME POLLOCK

Steps:
- Preheat broiler. Oil broiler pan.
- Put fish, skin side down, on broiler pan and sprinkle with 1/4 teaspoon each of salt and pepper (total).
- Whisk together remaining ingredients and spread evenly over top of fish. Broil 5 to 7 inches from heat until just cooked through, 6 to 8 minutes.
BREADED POLLOCK FILLETS FOR 2
This is a nice baked fish. I enjoy making this with garlic mashed potatoes :-) (prep time does not include time to thaw frozen fillets)

Steps:
- If your fillets are frozen, thaw in advance.
- When your fillets are ready to prepare, preheat your oven to 350F degrees and lightly grease a shallow pan.
- Melt your butter, and set aside.
- Take a large plate (NOT PAPER) and pour breadcrumbs on to plate.
- Add spices to breadcrumbs and mix through with your fingers.
- Add butter to breadcrumbs and mix through with fingers again.
- Melt the other 1/2 teaspoon butter.
- Take melted butter (allow to cool a little so you do not burn your fingers!!!) and lightly spread over the fillet and then roll fillet in breadcrumbs.
- Pat breadcrumbs into both sides of the fillet over and over again until nicely coated.
- Put fillets on pan and bake for 20 minutes, or until fish flakes nicely.
- Enjoy alone or with your favorite sauces!
BAKED GARLIC
Baked garlic is sweet and very yummy, as well as being very spreadable. Serve as an appetizer with a good crusty bread or with crackers. People can peel a piece of garlic off of the bulb and squeeze the soft, warm garlic our of its shell.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut aluminum foil into 3 6-inch squares (large enough to wrap each garlic head). Place 2 teaspoons of butter in each square of foil and place one garlic head into each square of foil. Fold the packets up, and arrange them in a 9 inch pie pan.
- Bake for 30 minutes, or until the garlic is soft.
