A delicious way to serve canned fruits. Use at least 3 cans of fruit; however, you can substitute other canned or fresh fruits, such as, grapefruit, fruit cocktail, bing cherries, apples or whole cranberries. Adjust sugar according to the tartness of the fruits you use.

1 (15 ounce) can pineapple chunks, in juice
1 (15 ounce) can peach halfes in juice
1 (8 ounce) can mandarin oranges, in juice
1 (15 ounce) can pear halves in natural juice
8 maraschino cherries, halved
3 tablespoons light brown sugar
1 -2 teaspoon curry powder
1/4 teaspoon nutmeg (optional)

Steps:

  • Drain all fruits, reserving 1/2 cup of mixed juices.
  • Place fruit in layer in 8x8-inch glass baking dish.
  • Mix brown sugar and spices with reserved 1/2 cup mixed fruit juice.
  • Pour over fruit.
  • Bake at 350 degrees for 45-60 minutes.

My family first sampled baked fruit years ago while dining out. They liked it so much I decided to create my own version. The result was this attractive and tasty dish.

1 can (16 ounces) apricot halves, drained
1 can (16 ounces) pear halves, drained
2 cans (15 ounces each) plums, drained and halved
1 can (29 ounces) peach halves, drained
1 can (8 ounces) pineapple slices, undrained
1/3 cup packed brown sugar
1 tablespoon butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • In a greased 13-in. x 9-in. baking pan, starting at the 9-in. end, arrange rows of fruit in the following order: half of the apricots, pears and plums, all of the peaches, then remaining apricots, pears and plums. , Drain pineapple, reserving 1/2 cup of juice. Lay pineapple over fruit in pan. In a saucepan, combine the pineapple juice, brown sugar, butter, cinnamon and cloves. Cook and stir until sugar is dissolved and butter is melted. Pour over fruit. , Bake, uncovered, at 350° for 20-25 minutes or until heated through.

4 lbs mixed fresh tender fruit (e.g. plums, nectarines, peaches, figs, apricots, strawberries, firm bananas)

Steps:

  • Preheat oven to 425*F Using a food processor, combine vanilla pod and sugar.
  • Wash fruit.
  • Halve and remove pits from plums, nectarines, peaches and apricots, if using, and peel bananas and cut into chunks.
  • Place fruit in a single layer on baking sheet (s).
  • Sprinkle with about 1/2 cup of vanilla sugar.
  • (Store leftover vanilla sugar in an airtight container.) Bake fruit 10-15 minutes, or until fruit is soft but still holds its shape.

Steps:

  • Preheat oven to 400°. In a bowl, mix oats, baking powder and cinnamon. In another bowl, whisk eggs, milk, brown sugar and oil until blended; stir into oat mixture. Fold in apple, cranberries and walnuts., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until set and the edges are lightly browned, 35-40 minutes. Slice and serve with milk., Freeze option: Freeze cooled individual pieces on waxed paper-lined baking sheets until firm. Transfer pieces to airtight freezer containers; return to the freezer. To use, microwave each piece on high until heated through, 1-2 minutes.

Came up with this as a quick and filling breakfast while I was pregnant. The whole family loves it. I've found the leftovers are a little better because the flavors have a chance to blend more. It looks like a lot but it's actually quick & easy to put together. Please follow the steps for mixing ingredients as they're listed... This prevents the "floating" of the dry ingredients and makes for a smooth & blended caramel colored egg mix. Also, I always spread the cream cheese & pie filling over the bread slices rather than pouring it on top so they end up as "sandwiches". We dish them out as sandwiches but have to eat with forks :)

2/3 cup milk, divided

Steps:

  • For the egg mixture:.
  • Mix all dry ingredients together (flour, sugar, salt, & cinnamon).
  • Add 1/3 cup milk & stir until blended. This will make a bit of a "paste.".
  • Add the remaining 1/3 cup milk. Mix.
  • Add the melted butter & vanilla. Mix.
  • Add the eggs. Mix until completely blended.
  • For the cream cheese mixture:.
  • Use a mixer to blend cream cheese & sugar until smooth.
  • Add egg & vanilla. Blend until smooth.
  • Grease a 9x13 pan & dip 6 of the slices of bread into the egg mixture, allowing it to drain a few seconds before placing in the bottom of the pan.
  • Place dollops of cream cheese mix over each slice of bread & spread to cover bread.
  • Place dollops of fruit filling over cream cheese & spread over the area of each piece of bread.
  • Dip the remaining 6 slices of bread into the egg mixture and allow to drain a few seconds before placing on top of the pie filling.
  • Sprinkle with chopped nuts and cinnamon sugar.
  • Bake at 350 for approximately 45 minutes (may vary based on ovens.).
  • Allow to cool and enjoy :).

This grand appetizer uses store-bought puff pastry. Express your artistic side with the pastry leaf decoration.

1/2 cup pecans
1 package (14 to 16 ounces) all-butter puff pastry, thawed
Unbleached all-purpose flour, for dusting
2 tablespoons Dijon mustard
1 round wheel (about 6 inches) Brie (1 pound)
Boozy Fruit, for serving
Apple wedges and baguette slices, for serving

Steps:

  • Preheat oven to 350 degrees. Toast pecans on a baking sheet until darkened slightly, 10 to 12 minutes. Grind in a food processor.
  • Increase heat to 400 degrees. Unfold pastry on a lightly floured work surface. Sprinkle pecans evenly over half of pastry; fold over other half and pinch edges to seal. Cut pastry in half crosswise; pinch cut edges to seal. Roll out one half to an 8-inch square.
  • Brush 1 tablespoon Dijon on one side of Brie. Place in center of rolled-out pastry, mustard-side down. Brush remaining 1 tablespoon Dijon on top of Brie. Roll out remaining half of pastry to a 9-inch square. Center over Brie and gently press around it to remove any air pockets. Trim pastry, leaving a 1/2-inch border around Brie. Transfer to a parchment-lined baking sheet. Gather dough scraps and reroll to 1/8 inch thick. Using cookie cutters or a paring knife, cut out leaf shapes and score cutouts to create veins. Transfer cutouts to sheet with Brie. Freeze until pastry is firm, about 20 minutes.
  • Brush top and sides of pastry with egg. Adhere cutouts to top of pastry in a decorative pattern, and brush cutouts with egg. Bake 30 minutes. Reduce heat to 350 degrees and continue baking until pastry is puffed and golden brown, 25 to 30 minutes more (if it's browning too quickly, loosely cover with foil). Serve hot, with Boozy Fruit, apple wedges, and baguette slices.

This recipe was a suggestion from my Mother that she found but never tried. I altered it a little to fit my taste. I will publish the altered recipe. It was delicious and a perfect ending to a light dinner of fish and veggies. It left everyone full and satisfied, but not rolllling away from the table. You can make the caramel ahead and reheat right before serving.

13 ounces brie round
2 tablespoons butter
3/4 cup brown sugar
1/4 cup corn syrup
1 1/2 tablespoons flour
1/4 cup milk
coarsely chopped pecans, amount based on taste
2 red apples (Braeburn are a GREAT choice!)

Steps:

  • Preheat oven to 350.
  • Melt butter in saucepan over medium heat. Add brown sugar, corn syrup, and flour. Bring to a boil stirring constantly. Reduce heat and simmer for 5 minutes continuously stirring. Remove from heat. Once mixture is lukewarm, add milk and stir until smooth. (It will be lumpy at first- just keep stirring.) Add pecans - I used about a handful of halved pecans broken into fairly large pieces.
  • Place brie into oven until melted- only 5 minutes or so- you will know if you touch the outside and it moves with the melted cheese inside.
  • Take brie from oven and onto a serving platter. Warm caramel/pecan mixture if it has cooled, and pour over the top. Serve with sliced apples. Enjoy!
  • **NOTE: If you choose a slice of brie instead of a round, you should not bake the brie. It would melt all over the place. Just take out to room temperature, pour warm caramel sauce over it-- that should soften it enough to still be delicious.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a sheet pan with parchment paper.
  • Pour the can of coconut milk into a large bowl. Add chicken tenders and toss to coat.

5 eggs
3 tablespoons sugar
1 teaspoon vanilla extract
2 1/2 cups whole milk
1/4 cup flour
6 tablespoons brown sugar, packed
1/2 teaspoon cinnamon
1/4 cup butter
1 cup blueberries
1 cup strawberry, sliced

Steps:

  • Lightly grease 9x13 pan.
  • Cut the bread in 3/4-inch slices.
  • Layer in the pan, fitting snugly. In a bowl, lightly beat the eggs, sugar and vanilla.
  • Stir in the milk.
  • Pour over bread; turn bread slices over.
  • Cover and refrigerate overnight.
  • In the morning, pre-heat the oven to 375 degrees.

Steps:

  • 1. Preheat the oven to 400°F. In a small bowl, mix together the brown sugar, dried fruit, and nuts.
  • 2. Place the apples in a baking pan or casserole dish and stuff their cavities with the fruit and nut mixture. Place a piece of butter on top of the stuffing.
  • 3. Pour the apple cider and maple syrup into the bottom of the baking pan and bake the apples, basting every 5 to 7 minutes, until they are tender, 25 to 35 minutes.
  • 4. When the apples are tender, transfer them to a serving platter and cover with foil to keep warm. Pour the pan juices into a small saucepan and bring to a boil over high heat. Simmer the mixture until it becomes syrupy and reduces to a sauce, about 10 minutes. Serve over the apples.

Steps:

  • For the baked yogurt: Preheat the oven to 275 degrees F.
  • Whisk the sour cream, creme fraiche, condensed milk and vanilla seeds in a medium bowl. Divide the honey among six 4-ounce ovensafe glass ramekins or jelly jars. Divide the sour cream mixture evenly among the ramekins and bake until just set, about 20 minutes. Refrigerate until chilled, at least 30 minutes.
  • For the tropical fruit compote: Combine the pineapple, mango puree, dried mango, dried papaya, bananas, brown sugar, granulated sugar and vanilla seeds in a medium saucepan. Bring to a boil, lower to a simmer and cook until the juices are thick and the fruit is translucent, about 30 minutes. Cool until warm, 20 to 30 minutes.

Steps:

  • Preheat oven to 350°F. Core apples with corer. Stand apples up and make 4 evenly spaced vertical cuts starting from top of each apple and stopping halfway from bottom to keep apple intact. Brush inside of apples with lemon juice and stand apples in a 9-inch ceramic or glass pie plate.
  • Toss together apricots, currants, pecans, brown sugar, cinnamon, and nutmeg in a bowl. Rub softened butter into dried-fruit mixture with your fingers until combined well, then pack center of each apple with mixture. Put a piece of remaining butter on top of each apple. 2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
2 tablespoons brown sugar
½ cup butter, chilled and diced
¾ cup milk
6 apples, peeled and cored
1 cup blueberries
¼ cup maple syrup
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon dried orange peel

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, mix flour, baking powder, salt and brown sugar. Cut in butter. Pour in milk and stir to form a dough. Turn out onto a well-floured surface and roll out. Cut into 6 - 6 inch squares.
  • Place a whole apple in the center of each square. Fill the core with blueberries. Drizzle with maple syrup. Pull up corners of dough and pinch edges together to seal. Place dumplings in prepared pan and sprinkle with cinnamon and nutmeg.
  • Combine remaining maple syrup with enough water to pour over dumplings to a 1 inch depth in dish. Submerge remaining blueberries and apple peelings with dried orange peel in liquid.
  • Bake in preheated oven 45 minutes, basting as necessary, until crisp and browned. Serve warm with sauce.

It comes closer to the German Kaiserschmarrn. You can use peaches, pears, nectarines, whole blueberries, strawberries, raspberries, blackberries, or a combination of fruits (or frozen berries), plus raisins if you like them.

⅓ cup white sugar
⅓ cup chopped walnuts
¼ cup rolled oats
1 tablespoon ground cinnamon
1 teaspoon baking powder

3 cups sliced fresh plums
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Set butter in the middle of an 8-inch baking pan.
  • Heat butter in the pan in the preheated oven until butter melts, about 2 minutes.
  • Whisk flour, sugar, walnuts, oats, 1 tablespoon cinnamon, baking powder, and salt together in a bowl. Add milk and vanilla; stir well to create a batter.

finely diced apple, to make up the rest of the 1/3 cup
1/3 cup chunky mashed banana (coarsly mashed so there are still chunks)
3/8 teaspoon banana extract (banana flavour)
1/3 cup brown sugar
1/2 cup egg substitute
1 cup skim milk
3/4 cup blueberries, can be subbed for other berries

  • Mix all ingredients and pour into a lightly greased 8x8 dish the night before. Cover and refridgerate until morning.

I generally make this with cream sherry, but you can use dry if you want it not quite so sweet. The refrigerating overnight is to allow the fruit and sherry sauce flavors to blend more thoroughly. It's good served hot out of the oven or cold later on (after baking of course). May be served in dishes or poured over pound cake, pudding or ice cream. Or you can put a dollop of vanilla ice cream on top. Times do not include chilling time overnight.

1 (29 ounce) can pear halves in natural juice
1 (29 ounce) can peach halves in syrup

1/2 cup sugar
1 cup sherry wine

Steps:

  • Combine butter and flour in small saucepan over low heat, blending until smooth.
