2 pounds cremini or shiitake mushrooms (trimmed), halved if large
4 tablespoons plus 1 teaspoon extra-virgin olive oil
2 teaspoons fresh thyme leaves, plus 4 whole sprigs
Coarse salt and ground pepper
4 firm white-fleshed fish fillets, such as striped bass or cod (6 ounces each)
1/2 cup packed fresh parsley leaves
1 tablespoon fresh lemon juice, plus lemon wedges for serving

Steps:

  • Preheat oven to 450 degrees. On a rimmed baking sheet, toss mushrooms with 3 tablespoons oil and thyme leaves; season with salt and pepper. Roast until mushrooms are lightly browned, 15 minutes.
  • Rub fish with 1 tablespoon oil; season with salt and pepper. Arrange fish over mushrooms; top with thyme sprigs. Roast until fish is opaque throughout, 10 to 12 minutes. Toss parsley with lemon juice and 1 teaspoon oil; season with salt and pepper. Serve fish and mushrooms with parsley salad and lemon wedges.

2 (4 ounce) fillets tilapia
1 splash dry white wine
salt and ground black pepper to taste
2 tablespoons olive oil, divided
1 medium onion, diced
4 cloves garlic, minced
3 large plum tomatoes, chopped
1 large zucchini, sliced and quartered
¾ (6 ounce) can chopped black olives
¼ cup dry white wine
20 sprigs cilantro, chopped
½ teaspoon hot sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange tilapia in a baking dish. Add a splash of white wine and season with salt and pepper.
  • Heat 1 tablespoon oil in a skillet over medium heat; stir in onion and garlic. Cook and stir until garlic is fragrant and onion is tender, about 3 minutes. Add tomatoes. Cover and simmer until tomatoes begin to release their juices, about 4 minutes.
  • Add zucchini, olives, and wine; simmer for 5 minutes. Add cilantro and hot sauce. Season with salt and simmer for 3 to 4 minutes longer. Spoon sauce over and around tilapia and drizzle with remaining olive oil. Cover tightly with foil.
  • Bake in the preheated oven until fish flakes easily with a fork, about 45 minutes.

12 ounces marinated artichoke quarters (about 1 1/3 cups), drained and chopped, plus 1 tablespoon marinade
1 medium zucchini, sliced
1 lemon, cut into 4 wedges
2 cloves garlic, crushed
1 medium shallot, sliced into rings
2 teaspoons fresh thyme
1 tablespoon plus 2 teaspoons extra-virgin olive oil
1/4 teaspoon red pepper flakes
Kosher salt and freshly ground pepper
4 6-ounce skin-on arctic char fillets
3/4 cup bulgur
2 tablespoons finely chopped fresh chives

Steps:

  • Preheat the oven to 425˚ F. Toss the artichokes and marinade, zucchini, lemon wedges, garlic, shallot, thyme, 1 tablespoon olive oil, the red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a 9-by-13-inch baking dish. Bake until the vegetables are tender, 15 to 20 minutes.
  • Meanwhile, pat the fish dry with a paper towel and brush with the remaining 2 teaspoons olive oil; season with salt and pepper. Remove the baking dish from the oven and stir the mixture. Stir in the bulgur and 1 1/4 cups water. Nestle the fish fillets skin-side down in the vegetables and bulgur. Return to the oven and bake until the fish flakes easily with a fork and the bulgur is tender, about 12 minutes.
  • Transfer the fish to plates. Season the bulgur mixture with salt and pepper, if needed. Add to the plates. Top with the chives.

1 small onion, chopped
3 large garlic cloves, chopped
3 small zucchini, trimmed, cut into 1/2-inch pieces

1 28-ounce can diced tomatoes in juice, drained, 1/2 cup juice reserved
4 6- to 7-ounce sea bass or other white fish fillets (such as orange roughy)

Steps:

  • Heat oil in heavy large skillet over medium heat. Add onion and garlic and sauté until onion is almost tender, about 3 minutes. Add zucchini and oregano and sauté until zucchini is beginning to soften, about 5 minutes. Add tomatoes and 1/2 cup reserved juice and bring to boil. Sprinkle fish with salt and pepper. Place fish atop vegetables in skillet. Cover skillet, reduce heat to medium-low and simmer until fish is just opaque in center, about 5 minutes. Transfer fish to platter; tent with foil to keep warm. Increase heat; boil mixture in skillet until liquid thickened to sauce consistency, about 5 minutes. Season sauce with salt and pepper. Spoon sauce over fish.

1/4 cup cognac or 1/4 cup brandy
1/2 cup canned crushed tomatoes, with added puree
1/2 cup whipping cream
2 teaspoons minced fresh thyme or 1 teaspoon dried thyme
2 (8 ounce) orange roughy fillets
1/2 cup grated gruyere cheese

Steps:

  • Preheat broiler.
  • Melt 2 tablespoons butter in heavy large skillet over medium-high heat.
  • Add mushrooms; sauté until golden, about 7 minutes.
  • Add Cognac; simmer until liquid reduces to glaze.
  • Reduce heat to medium.
  • Add tomatoes, cream and thyme; simmer until sauce thickens, stirring occasionally, about 7 minutes.
  • Season with salt and pepper.
  • Melt remaining 2 tablespoons butter in another heavy large skillet over medium-high heat.
  • Season fish with salt and pepper.

I wanted to add more fish to my diet so one day I bought fresh Tilapia and looked online for an easy recipe to cook that evening because I never buy fresh fish and didn't know the first thing how to cook it. I found a recipe similar but I added my own special touch to it and pretty much changed the original. My husband and I loved it. Here's my version!

2 teaspoons olive oil
1/4 cup chopped onion
1 garlic clove, minced
1/4 cup green bell pepper, thin slices
1 medium zucchini, thin slices
4 ounces fresh large mushrooms, thin slices
2 -6 ounces tilapia fillets
cajun seasoning
powdered cayenne pepper
1 lime, cut in half
olive oil flavored cooking spray (optional)
marjoram (optional)

Steps:

  • Instructions.
  • Heat oil in large skillet over medium heat. Stir-fry onion, garlic clove and pepper until crisp-tender, then add zucchini and continue to cook for a short time. Finally add mushrooms. Push veggies off to the side. Sprinkle one side of Tilapia with Cajun seasoning. Add to skillet. Cook about three minutes and turn.
  • Cut lime in half and squeeze lime juice on tilapia from one half of the lime. Use the other half for serving if you like to squeeze it fresh on your fish. Sprinkle cayenne pepper according to taste. Then cover and continue to cook until fish is done, about another three minutes. Serve.
  • Pan may dry after sautéing veggies, so I spray some olive oil spray before I place tilapia in pan to keep it from sticking. I also like to add a sprinkle of Marjoram on fish.
  • I like to serve it with Steamed Jasmine Rice.
