Bacalhau Portuguese ao Forno (Salt Cod with Tomatoes and Olives) image

Portuguese recipe for baked cod with potatoes, tomatoes and lots of olive oil. You need to soak the cod in water overnight to remove the salt. Serve hot.

2 pounds salted cod fish
2 lemons, juiced
salt to taste
1 pound potatoes, cut into thick slices
2 large onions, cut into 8 wedges
3 tomatoes, cut into 8 wedges
2 fresh bay leaves
2 tablespoons olive oil
¼ cup chopped black olives
2 tablespoons chopped parsley, or to taste

Steps:

  • Soak cod in a large bowl of water in the refrigerator for 24 hours, changing soaking water 4 times to remove excess salt.
  • Drain water off cod; add lemon juice and salt. Let marinate in the refrigerator, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange layers of cod, potatoes, onions, and tomatoes in a large baking dish. Place bay leaves on top. Drizzle olive oil over baking dish and season with salt.
  • Bake in the preheated oven until potatoes are tender and cod flakes easily with a fork, about 30 minutes. Add olives and parsley and continue baking until heated through, about 3 minutes more.

One of my favorites as child i loved watching my mother making this dish,i always ask it i could help by learning.

2 lb fresh scrod fillets (or other white fish
6 Tbsp olive oil, extra virgin (portugeses or italian
1 tsp paprika, sweet mild
1/4 tsp white pepper
3 clove garlic,finely chopped
2 Tbsp butter, softned
2 Tbsp lemon juice
8 small red bliss potatoes,peeled,halved,and part boiled.
2 tsp coarse salt(taste )

Steps:

  • 1. PREHEAT Oven to 350* and bake for 20 25 minutes.
  • 2. 1) DRAIN the fish and pat it dry.Brush the fish with 1 tablespoon of the olive oil, then season with paprika, pepper , and half of the garlic. PLACE the fish skin down in a baking dish pan and dot top with butter. Sprinkle with lemon juice.
  • 3. (2) Combine potatoes in a small bowl with the remaining olive oil,garlic, and 1 teaspoon of salt. TOSS Well and arrange around the fish in the pan.. SPRINKLE the remaining salt over the fish.

Number Of Ingredients 9

3 pounds fish steaks
salt and pepper
3 large tomatoes cut in half
1/4 pound sliced mushrooms
1/2 cup oil
1/2 cup white wine
2 tablespoons cilantro
1 grated yellow onion
lemon wedges

Steps:

  • Ask the fish merchant to slice the fish, but don't separate slices so that fish looks whole. Place the fish in a baking dish and season with salt and pepper. Surround fish with tomatoes and mushrooms. Mix together oil and white wine. Pour over the fish and bake in a hot oven at 400 degrees for 30 minutes, basting occasionally. Mix together cilantro and yellow onion. Remove fish from the oven and sprinkle with cilantro and onion mixture. Bake 10 minutes longer. Garnish with lemon wedges. Serve with buttery new potatoes with parsley.

lemon juice
salt and pepper
2 to 3 onions
butter
chopped cilantro

Steps:

  • Scale, clean and cut fish in slices. Marinate fish slices 2-3 hours in lemon juice, salt and pepper. In a grinder, grind up 2-3 onions. Arrange fish slices in a baking dish. Dot with butter and pour ground onion all around the edges of the fish. Sprinkle with chopped cilantro. Bake at 350 degrees for 25 minutes. Serve with whatever sauce you prefer. The Shrimp Sauce is a good choice.
