Cranberry Relish with Grand Marnier® and Pecans image

After making this relish, you will never eat the canned stuff again.

1 ½ cups white sugar
¼ cup brandy-based orange liqueur (such as Grand Marnier®)
1 cup orange juice
1 tablespoon minced fresh ginger root
1 tablespoon grated orange zest
4 cups fresh cranberries
½ cup chopped toasted pecans

Steps:

  • Bring the sugar, orange liqueur, orange juice, ginger, and orange zest to a boil in a saucepan over medium-high heat. Stir until the sugar has dissolved, then stir in the cranberries, and cook until they pop, about 5 minutes. Add the pecans, pour into a bowl, and refrigerate several hours until cold.

2 cups dried cranberries
1/2 cup Grand Marnier (orange liqueur)
1/2 cup butter, softened
1 package (8 ounces) cream cheese, softened
2 cups sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange yogurt
GLAZE:
2 tablespoons Grand Marnier (orange liqueur)
1-1/4 to 1-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a microwave-safe bowl, toss cranberries with Grand Marnier; microwave, covered, on high just until heated through. Cool slightly., In a large bowl, beat butter, cream cheese and sugar until blended. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder, salt and baking soda; add to butter mixture alternately with yogurt, beating well after each addition. Drain cranberries; fold cranberries into batter., Transfer batter to prepared pan. Bake 55-65 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely., In a small bowl, mix Grand Marnier and enough confectioners' sugar to reach a drizzling consistency. Spoon over cake.

This is wonderful with turkey, pork roast or any holiday feast. Recipe was repeated in the local Illinois paper Christmas edition year after year in the 1970's. Readers wouldn't stop requesting the recipe. Feel free to use any orange flavored liquor you have or hand. You can't make a mistake with this side dish.

2 cups sugar
1 (1 lb) bag fresh cranberries
2 cups water
4 tablespoons Grand Marnier (to taste)
1 tablespoon grated orange rind
1 tablespoon fresh lemon juice
2 tablespoons sugar

Steps:

  • Combine 2 cups sugar and water in a large saucepan. Bring to a boil and boil 5 minutes.
  • Add washed cranberries. Boil 10 minutes or until almost jelled. Remove from heat.
  • Fold in Grand Marnier, orange zest and lemon juice. Sprinkle with 2 tablespoons sugar. Fold sugar into mixture.
  • Chill or freeze until ready to use.

1 12-ounce package fresh cranberries
1 1/4 cups sugar
2 tablespoons frozen orange juice concentrate, thawed
2 tablespoons Grand Marnier or other orange-flavored liqueur

Steps:

  • Preheat oven to 325°F. Place cranberries in 8x8x2-inch glass baking dish. Sprinkle sugar, then orange juice concentrate over. Cover tightly with foil. Bake until juices form and cranberries are very soft, about 1 hour. Uncover; mix in liqueur. Cover and refrigerate until very cold, about 4 hours. Can be prepared 3 days ahead. Keep chilled.

BAKED CRANBERRY SAUCE

1 (12- ounce) bag cranberries, fresh or frozen
1 1/4 cups sugar
1/4 teaspoon ground cinnamon
Pinch nutmeg
1/4 cup bourbon, or more

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the cranberries, sugar, cinnamon, and nutmeg in a small baking dish and cover. Bake for about 55 minutes. Remove the cover and stir to melt any un-dissolved sugar. Return the dish to the oven and bake for about 5 to 10 more minutes, or until the cranberries are soft and surrounded by a syrupy sauce. Remove the dish from the oven and immediately stir in the bourbon, to taste. Let the dish cool to room temperature, then chill for at least hour before serving. The sauce will keep for several weeks in the refrigerator.

Baked Brandied Cranberries image

I enjoy my cranberries baked this way. The brandy helps to cut down on the tartness of the cranberries, while the sugar gives it just enough sweetness.

2 (12 ounce) bags cranberries
2 cups granulated sugar
1/4 cup brandy
1/3 cup granulated sugar

Steps:

  • Place the cranberries in a glass 13x9x2-inch baking dish.
  • Cover the cranberries with the 2 cups of sugar, but do not stir.
  • Cover baking dish tightly with aluminum foil.
  • Bake 50-55 minutes in a 350º oven; until the cranberries burst.
  • Remove baking dish from the oven.
  • Remove the foil and stir.
  • Let stand 10 minutes, then drizzle with the brandy.
  • Stir in the 1/3 cup of sugar.
  • Cool to room temperature; then refrigerate.
