For french toast
1 1/4 cups orange marmalade
10 4 x 4 x 1-inch-thick slices egg bread
1 1/4 cups whole milk
3/4 cup whipping cream
1/2 cup sugar
3 large egg yolks
3 large eggs
1 1/4 teaspoons ground cardamom
1 teaspoon grated orange peel
1 teaspoon grated lemon peel
For citrus syrup
1 1/4 cups light corn syrup
3 tablespoons fresh lemon juice
2 tablespoons grated orange peel
1 tablespoon grated lemon peel
4 teaspoons sugar
Powdered sugar

Steps:

  • Make french toast:
  • Butter 15 x 10 x 2-inch glass baking dish. Spread marmalade evenly over 1 side of each bread slice. Cut slices diagonally in half, forming triangles. Arrange triangles crosswise in dish, marmalade side up and overlapping slightly.
  • Whisk milk and next 7 ingredients in large bowl. Pour custard over bread. Let bread stand 1 hour, basting occasionally, or cover and refrigerate overnight.
  • Make citrus syrup:
  • Mix first 5 ingredients in small bowl, stirring until sugar dissolves. Let stand at least 1 hour. (Can be made 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 350°F. Bake French toast, uncovered, until puffed and golden brown, about 50 minutes. Sprinkle with powdered sugar; serve with citrus syrup.

If you don't have self rising flour, use plain and add 1/2 teaspoon baking powder, and if calories are not an issue, use some more butter or margarine for frying, it makes it even nicer and more like cake. Serve with honey or syrup.

1 pinch salt
cinnamon
1/2 grated limes, zest of or 1/2 grated orange, zest of, more if you like
1/2 cup milk
1/2 teaspoon vanilla extract
1 small egg
1/4 cup melted butter or 1/4 cup margarine
4 slices at least one day old bread, cut diagonally

Steps:

  • In a bowl mix together the flour, sugar, salt, cinnamon and zest.
  • Add the milk and mix until you have a smooth and lump free batter.
  • Add the egg and vanilla, mix, now add the melted butter and mix again.
  • Heat a non-stick frying.
  • Dip and coat the bread in the batter, fry until light golden.

2 to 4 tablespoons butter, melted
2 tablespoons honey
1/2 teaspoon ground cinnamon
3 large eggs
1/2 cup orange juice
1/8 teaspoon salt, optional
6 slices bread
Additional honey, optional

Steps:

  • Preheat oven to 400°. In a small bowl, mix the butter, honey and cinnamon. Pour into a greased 13x9-in. baking pan; spread to coat bottom of pan. , In a shallow bowl, whisk the eggs, orange juice and, if desired, salt. Dip both sides of bread in egg mixture. 4 large eggs
2 tablespoons sugar
1 tablespoon brown sugar
2 teaspoons vanilla extract
1 teaspoon maple extract
1/4 teaspoon kosher salt
2 cups whole milk
1/2 cup heavy whipping cream
TOPPING:
1/4 cup all-purpose flour
3 tablespoons brown sugar
3 tablespoons unsalted butter, cut into 1/4-inch cubes
1 teaspoon ground cinnamon
Freshly grated nutmeg, optional
Fresh blueberries or raspberries
Confectioners' sugar

Steps:

  • Cut bread into 1-in.-thick slices. Arrange in a single layer in a greased 13x9-in. baking dish. Lightly beat next 6 ingredients; stir in milk and cream. 1 cup (2 sticks) unsalted butter, at room temperature, plus more for greasing
3/4 cup maple syrup, plus more for serving
2 teaspoons vanilla bean paste
One 12-ounce package Hawaiian slider rolls
1 tablespoon lemon zest
1 pint fresh blueberries
3/4 cup whole milk
1/2 cup heavy cream
1/2 cup sugar
3 large eggs
Kosher salt
4 pieces cooked bacon, finely chopped, for garnish

Steps:

  • Grease an 8-inch square baking dish with butter.
  • Add the butter to the bowl of a stand mixer fitted with a whisk attachment and whip on medium speed for 1 minute. With the mixer running, slowly pour in the maple syrup and 1 teaspoon of the vanilla bean paste and whip until completely combined. Transfer to a serving bowl and reserve.
  • Keep the rolls intact and slice across the equator to create 1 large top and 1 large bottom roll. Place the bottom roll in the baking dish, then spread with 2 tablespoons of the maple butter. Sprinkle with the lemon zest and half of the blueberries and top with the top roll.
  • In a medium bowl, whisk together the milk, cream, sugar, eggs, remaining 1 teaspoon vanilla bean paste and a pinch of salt. Pour the mixture over the rolls. Cover and refrigerate at least 8 hours.
  • Preheat the oven to 400 degrees F.
  • Cover the baking dish with foil and bake for 40 to 45 minutes. Remove the foil, then continue to bake until golden brown, about 10 more minutes.
  • Arrange scoops of the maple butter on top and sprinkle with the bacon and remaining blueberries. Serve with additional maple syrup.
