Whenever I take this casserole to a potluck, I come home with an empty dish...and with many recipe requests! Macaroni makes it a nice switch from other chop suey recipes.

2 pounds pork stew meat
1 package (7 ounces) shell macaroni, cooked and drained
2 cups diced celery
2 medium onions, diced
1 cup chopped green pepper
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (4 ounces) mushroom stems and pieces, drained
1/4 cup soy sauce
1 jar (2 ounces) diced pimientos, drained
2 cups chow mein noodles

Steps:

  • In a large skillet cook the pork over medium heat until meat is no longer pink; drain. Stir in the next nine ingredients. , Pour into a greased 13-in. x 9-in. baking dish. Top with chow mein noodles. Bake, uncovered, at 350° for 1 to 1-1/4 hours or until pork is tender.

My mother-in-law's chop suey recipe. It's one of her grandchildren's favorite dishes.

Number Of Ingredients 11

1 pound ground beef
1 medium onion, chopped
1 ½ cups chopped celery
1 (10.5 ounce) can condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of mushroom soup
2 (10.5 ounce) cans water
1 (8 ounce) can mushrooms, drained
½ cup uncooked white rice
3 tablespoons soy sauce
salt and ground black pepper to taste
1 (5 ounce) can chow mein noodles

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly and onion is translucent, 5 to 7 minutes. Drain and discard grease and remove from the heat.
  • Add celery, condensed soups, water, mushrooms, rice, soy sauce, salt, and pepper; mix to combine. Transfer to a 9x13-inch casserole dish.
  • Bake in the preheated oven for 1 1/2 hours. Top with chow mein noodles and bake for 10 more minutes.

1/3 cup chopped onion
1 1/4 cups chopped celery
1/3 cup rice
1 cup water
1 tablespoon soy sauce
1 (10 3/4 ounce) can mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (15 ounce) can bean sprouts, drained

Steps:

  • Fry pork steak and drain.
  • Combine all ingredients and bake in an ungreased casserole for 2 hours at 350.
  • Stir once while baking.

BAKED CHOP SUEY - AMERICANIZED!

I grew up having this at least once a month. I've tweaked it over the years but it is still close to what my mother made. I hope you enjoy!

1 can(s) cream of mushroom soup
1 can(s) cream of chicken soup
3/4 can(s) uncooked rice
1 1/2 lb ground chuck, cooked
5 Tbsp soy sauce
1 pkg chow mein noodles

Steps:

  • 1. Cook the ground chuck, drain and rinse. Optional: diced onions, diced celery about 1/2 cup each. Pepper and garlic powder to taste.
  • 2. Pre-heat oven to 350 degrees. In a baking dish put the meat, both cans of soup and the rice - mix thoroughly. Add water and soy sauce, the water should just cover the meat mixture. Use the soup can to measure out the rice and the water. Put in oven and bake for 35 minutes or until rice has cooked, using all the liquids. For the last 10 minutes, sprinkle chow mein noodles over the top and put back into the oven for 10 minutes. Remove from oven and let sit for 5 minutes before serving.
  • 3. Alternate cooking plans: Instead of baking in the oven, you can use the microwave for a 35 minute cooking time. Place in microwave on high for 20 - 25 minutes, or until rice has cooked using all liquids. Stir, then put the noodles on top and cook for 10 minutes. Let rest for 10 minutes before serving.
  • 4. My mother used to make cherry jello to serve with this and believe it or not, it was delicious...even though it would melt into the meal! I never had time, as a working mom, to make the jello after work but no one ever walked away hungry!!
