Baked Sweet Potatoes with Chipotle-Honey Butter image

I love baked sweet potatoes, but wanted something sweet/smoky to serve them with. Whipped these up to try and they are a great combination - and even better with BBQ!

4 sweet potatoes
8 tablespoons unsalted butter, softened
1 tablespoon chipotle peppers in adobo sauce
1 teaspoon honey
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Pierce sweet potatoes several times with a fork and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are tender, about 45 minutes.
  • While potatoes bake, combine butter, chipotle peppers, honey, salt, and pepper in a food processor. Blend well until smooth. Transfer butter to a bowl and refrigerate until ready to serve with baked potatoes.

6 medium baking potatoes (about 3 pounds)
1 1/4 cups low-fat buttermilk
1 1/4 cups (5 ounces) shredded extrasharp cheddar cheese, divided
1/3 cup thinly sliced green onions
2 tablespoons finely chopped chipotle chile, canned in adobo sauce
1 teaspoon salt
4 bacon slices, cooked and crumbled (drained)

Steps:

  • 1. Preheat oven to 450°. 2. Pierce potatoes with a fork. Bake potatoes at 450° for 50 minutes or until done; cool slightly. Cut each potato in half lengthwise; scoop out pulp, leaving a 1/4-inch-thick shell. Combine potato pulp, milk, 3/4 cup cheese and remaining ingredients in a large bowl. 3. Spoon potato mixture evenly into 10 shells; discarding remaining 2 shells. Sprinkle remaining 1/2 cup cheese evenly over potatoes. Bake at 450° for 15 minutes or until thoroughly heated.

Chipotle Twice Baked Sweet Potatoes image

Chipotle chile enhances the flavor of these twice baked sweet potatoes - a tasty side dish.

4 small sweet potatoes (about 1 3/4 lb)
1/4 cup fat-free half-and-half
1 chipotle chile in adobo sauce (from 7-oz can), finely chopped
1 teaspoon adobo sauce (from can of chipotle chiles)
1/2 teaspoon salt
8 teaspoons reduced-fat sour cream
4 teaspoons chopped fresh cilantro

Steps:

  • Heat oven to 375°F. Gently scrub potatoes but do not peel. Pierce potatoes several times with fork to allow steam to escape while potatoes bake. Bake about 45 minutes or until potatoes are tender when pierced in center with a fork.
  • When potatoes are cool enough to handle, cut lengthwise down through center of potato to within 1/2 inch of ends and bottom. Carefully scoop out inside, leaving thin shell. In medium bowl, mash potatoes, half-and-half, chile, adobo sauce and salt with potato masher or electric mixer on low speed until light and fluffy.
  • Increase oven temperature to 400°F. In 13x9-inch pan, place potato shells. Divide potato mixture evenly among shells. Bake uncovered 20 minutes or until potato mixture is golden brown and heated through.
  • Just before serving, top each potato with 2 teaspoons sour cream and 1 teaspoon cilantro.

1/2 cup KRAFT Light Mayo
1/2 cup light sour cream
1/4 cup KRAFT Grated Parmesan Cheese
2 Tbsp. chopped canned chipotle peppers in adobo sauce
1-1/2 lb. red potatoes (about 5), peeled, thinly sliced
1/2 lb. Mexican chorizo, cooked, drained
1 cup KRAFT Shredded Queso Quesadilla Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat oven to 400°F.
  • Mix first 4 ingredients until blended.
  • Place half the potatoes in 2-qt. casserole sprayed with cooking spray; top with half each of the mayo mixture and chorizo. Repeat layers; cover.
  • Bake 1 hour or until potatoes are tender. Sprinkle with shredded cheese; bake, uncovered, 5 min. or until melted.
