This is a great make-ahead dish from Marcia C. Adams of Fort Wayne, Indiana. It took the top $10,000 prize in the National Chicken Cooking Contest in Dallas, Texas. It sounds weird, but it is good.

6 breast half, bone and skin removed (blank)s skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 (16 ounce) can sauerkraut, drained and pressed
4 slices Swiss cheese
1 ¼ cups thousand island salad dressing
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle with salt and pepper. Place sauerkraut over chicken and top with cheese slices. Pour dressing over all and cover dish with aluminum foil.
  • Bake in preheated oven for 90 minutes, or until chicken is cooked through (fork can be easily inserted and juices run clear). Sprinkle with chopped parsley and serve.

6 boneless skinless chicken breast halves
1 cup Thousand Island salad dressing
1 can (14 ounces) sauerkraut, rinsed and well drained
6 slices Swiss cheese

Steps:

  • Pound chicken between two pieces of waxed paper to flatten. Place in a greased 13-in. x 9-in. baking dish. Spoon salad dressing over chicken; cover with sauerkraut. Cover and bake 350° for 30 minutes. Uncover; top with cheese. Bake 20-30 minutes longer or until chicken juices run clear.

1 whole chicken, 3 to 4 pounds, trimmed of excess fat
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Put a cast-iron skillet on a low rack in the oven and heat the oven to 500 degrees. Rub the chicken all over with the oil and sprinkle it generously with salt and pepper.
  • When the oven and skillet are hot, carefully put the chicken in the skillet, breast side up. Roast for 15 minutes, then turn the oven temperature down to 350 degrees. Continue to roast until the bird is golden brown and an instant-read thermometer inserted into the meaty part of the thigh reads 155 to 165 degrees.
  • Tip the pan to let the juices flow from the chicken's cavity into the pan. Transfer the chicken to a platter and let it rest for at least 5 minutes. Carve and serve.

I have been making baked chicken reubens like this for years, the cast iron skillet heats evenly and with all the moisture in the kraut along with the chicked it works to perfection. I used a 9 inch skillet (Grisswold) along with the cast iorn lid.

4 boneless chicken fillets
32 ounces sauerkraut, drained
1/4 teaspoon salt
1/2 teaspoon black pepper
6 slices big swiss cheese
1 1/4 cups thousand island dressing
2 tablespoons fresh parsley
3 drops hot sauce
1 1/2 teaspoons oil

Steps:

  • Wash chicken well and pat dry. Sprinkle on the salt and pepper on each side of the chicken. In the cast iorn skillet with the oil, brown both sides of the chicken on medium heat. When browned on both sides, pour the kraut over the browned chicken. Add the thousand island dressing on top of the kraut.
  • Spread the dressing across the kraut so it blended well. Place the swiss cheese on top of the kraut and bake at 325 for 1 hour or until desired doness. Sprinkle the fresh parsley on top of the cheese.
  • Depending on your oven, it could take 45 minutes to be baked in the cast iorn skillet because of the even heat from the cast iron along with the cast iron lid. Serve hot! Goes great with mashed potatoes.
