1 teaspoon cayenne pepper
1 teaspoon Himalayan pink salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place chicken legs in a large bowl. Spread chili powder, garlic powder, cayenne, and salt onto the chicken; pour sauce over top. Mix thoroughly and transfer to a baking sheet.
  • Bake, uncovered, in the preheated oven until chicken is no longer pink at the bone and the juices run clear, 45 to 50 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

This is SOOOO good! You can double the complete recipe and bake in a roaster pan, throw in a chopped green bell pepper and/or a jalapeno pepper also if desired! Four small turkey legs can be used in place of the chicken, if using larger turkey legs then double the cranberry sauce and BBQ sauce, also the cooking time will need to be increased.

1 tablespoon vegetable oil
2 tablespoons butter
salt and black pepper
1 onion, chopped
1 -2 tablespoon minced fresh garlic (or to taste)
1 large celery rib, finely diced
1 pinch cayenne pepper (optional)
1 (16 ounce) can ocean spray whole berry cranberry sauce
1 cup favorite barbecue sauce

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Heat butter with oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper, then add to the skillet; cook on both side until lightly browned, then place the chicken skin-side up into the baking dish (leave the drippings in the pan).
  • Add in the onion, celery, garlic and cayenne pepper (if using) adding in a little more oil if needed; sate for about 3 minutes; stir in the cranberry sauce and BBQ sauce; bring to a light simmer, stirring until completey combined, then pour over the chicken.
  • Bake uncovered for about 50 minutes or until chicken is tender and cooked through, basting with the sauce a couple times during baking.

2 cloves garlic, minced
4 stems rosemary, leaves picked and roughly chopped
4 cups panko bread crumbs
Kosher salt and freshly ground black pepper
2 eggs
2 cups milk
3 cups all-purpose flour
Extra-virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F. Put a sheet tray in the oven to preheat.
  • Wash and trim the chicken legs of any excess fat. Mix the garlic, rosemary and panko together in a shallow rimmed dish and season well with salt and pepper. Alternately, crush the garlic and rosemary with some olive oil and salt in a mortar and pestle.
  • Crack the eggs into a similar dish, add the milk and whisk to combine. Season with salt and pepper, to taste. In another dish add the flour and season with salt and pepper, to taste.
  • Take the chicken legs and 1 at a time, dredge in the flour, then the egg wash and then coat well with the rosemary-garlic panko bread crumbs. Lay the chicken legs out on a tray lined with parchment paper, as you work. Refrigerate the legs for about 15 to 20 minutes for the breading to set.

Arrange the chicken legs carefully on the tray, spacing them out evenly (the chicken will sizzle when added to the hot oil). 4 chicken legs (about 2 pounds total)
Kosher salt
1 orange, washed
1 tablespoon Aleppo pepper
1 tablespoon fresh thyme leaves, chopped
1/2 cup extra-virgin olive oil, plus more for drizzling
1 can (15 ounces) chickpeas, drained
3 small shallots, halved and peeled
1 cup mixed olives, such as Cerignola, Niçoise, and Castelvetrano, pitted if desired

¼ cup apple cider vinegar

3/4 c honey
1/2 c soy sauce
1/4 c catsup
2-3 cloves of garlic

  • 1. Preheat oven to 350. Line a 9x13 pan with aluminium foil.
  • 2. Lay chicken out and give them a good sprinkle of salt and pepper.Put them in the prepared pan.
  • 3. In a glass measuring cup measure out the honey , soy sauce, and catsup. Add minced garlic and stir. If mixture doesn't combine well, microwave for 30 seconds.
  • 4. Stir again and pour over chicken legs.
  • 5. Put in preheated oven. Bake 45 minutes.
  • 6. Take out of oven and turn over and return to the oven .

1 large bottle of your favorite barbecue sauce
- salt and pepper to taste

Steps:

  • Preheat oven to 300 degrees.
  • Spray a large baking sheet with PAM and place the chicken legs on it in 2 rows. Sprinkle the chicken with salt and pepper. Use whatever BBQ sauce you want and drizzle each leg with some of the sauce. Bake for 1 1/2 hours.

Steps:

  • 1. Heat oven to 400 degrees. Trim excess skin and fat from chicken. Combine bread crumbs, garlic, parsley, tarragon and salt and pepper on a plate or waxed paper. Use a pastry brush to paint mustard lightly on chicken legs. Carefully coat chicken legs with bread crumb mixture. 2. Gently place chicken in a roasting pan and bake for 30 to 40 minutes, or until completely cooked. Serve hot or cold.

1/2 cup pitted green olives
8 cloves garlic, quartered
2 tablespoons olive oil
1 tablespoon fresh thyme leaves
4 bone-in, skin-on chicken legs
Kosher salt and black pepper
Bread, for serving

Steps:

  • Heat oven to 425° F with a rack in the highest position. Toss the tomatoes, olives, garlic, oil, and thyme in a 3-quart baking dish. Season the chicken with 1 teaspoon salt and ½ teaspoon pepper. Nestle the chicken, skin-side up, in the vegetables. Bake until the chicken is browned and an instant-read thermometer inserted into the thickest leg (avoiding the bone) registers 165° F, 40 to 45 minutes. Serve with the bread.
