2 cups regular grits
16 ounces cheddar cheese, cubed
1/2 cup milk
4 large eggs, beaten

8 ounces grated sharp white cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 4-quart casserole dish.
  • Bring the broth, salt, pepper, and garlic powder to a boil in a 2-quart saucepan.
  • Stir in the grits and whisk until completely combined.
  • Reduce the heat to low and simmer until the grits are thick, about 8 to 10 minutes.
  • Add the cubed Cheddar and milk and stir. Gradually stir in the eggs and butter, stirring until all are combined.
  • Pour the mixture into the prepared casserole dish.

4 cups low-sodium chicken broth
3 cups milk
Kosher salt
1/4 teaspoon cayenne pepper
1 1/4 cups grits (not instant)

3 large eggs, lightly beaten
1 scallion, thinly sliced, optional

Steps:

  • Preheat the oven to 350 degrees F. Butter a deep casserole dish.
  • Bring the chicken broth, milk, 1 1/2 teaspoons salt and cayenne to a boil in a medium saucepan. Slowly whisk in the grits and lower the heat to a simmer. Cover and cook, stirring occasionally, until thick, about 30 minutes.
  • Remove from the heat and stir in the Cheddar and pepper-jack cheeses and butter until melted and smooth; cool slightly. Stir in the eggs and transfer the mixture to the prepared casserole dish. Smooth the top of the grits and then bake until just set and lightly brown, about 1 hour. Let rest for at least 5 minutes. Scatter with the scallions, if using, and cut into squares.

6 thick-sliced bacon strips, chopped
3 cups water
3 cups chicken stock
1 teaspoon garlic powder

12 ounces Velveeta, cubed (about 2-1/3 cups)
1/2 cup butter, cubed
1/2 cup 2% milk
4 large eggs, room temperature, lightly beaten
2 cups shredded white cheddar cheese

Steps:

  • Preheat oven to 350°. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove pan from heat. Remove bacon with a slotted spoon; drain on paper towels., Add water, stock, garlic powder and pepper to bacon drippings; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5-7 minutes or until thickened, stirring occasionally. Remove from heat., Add Velveeta and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Transfer to a greased 13x9-in. baking dish. Sprinkle with bacon and shredded cheese. Bake, uncovered, 40-45 minutes or until edges are golden brown and cheese is melted. Let stand 10 minutes before serving. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove casserole from refrigerator 30 minutes before baking. Bake grits as directed, increasing time to 50-60 minutes or until heated through and a thermometer inserted in center reads 165°.

1 ¾ teaspoons salt

2 tablespoons minced garlic
1 (8 ounce) package shredded Cheddar cheese
3 eggs
1 cup whole milk
¼ cup clarified butter
2 tablespoons minced garlic
1 leek, halved and cut into 1/4-inch pieces
2 ounces fresh morel mushrooms, chopped
3 ounces fresh oyster mushrooms, chopped
3 ounces fresh chanterelle mushrooms, chopped
2 tomatoes, peeled, seeded, and chopped
1 tablespoon Creole seasoning
½ cup cognac
½ cup shrimp stock
⅓ cup veal stock
1 pound peeled and deveined gulf shrimp
2 tablespoons chopped fresh thyme
3 tablespoons unsalted butter
salt and black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring the water and 3/4 teaspoon of salt to a boil in a large pot. Whisk in the grits and return to a boil. Reduce heat to low, and cook, stirring frequently until the grits are tender and very thick, about 30 minutes. Remove from the heat, and stir in 1 3/4 teaspoons of salt and 1/2 teaspoon of pepper, 1/2 cup butter, 2 tablespoons garlic, and the Cheddar cheese until the cheese has melted. Beat the eggs in a bowl with the milk until smooth, then stir into the grits until evenly combined. Pour into the prepared baking dish.
  • Bake in the preheated oven until the grits are hot in the center, and the top is golden brown, about 1 hour.
  • Meanwhile, melt the clarified butter in a skillet over medium heat. Stir in 2 tablespoons of garlic, and cook until golden, about 2 minutes. Add the leeks, and cook 1 minute more. Stir in the morel mushrooms, oyster mushrooms, chanterelle mushrooms, tomatoes, and Creole seasoning; cook and stir until the mushrooms begin to release their liquid, about 3 minutes. Pour in the cognac and simmer 2 minutes before pouring in the shrimp stock and veal stock. Return to a simmer, and cook until the liquid has reduced by half. Stir in the shrimp, thyme, and 3 tablespoons of butter. Cook and stir over low heat until the shrimp is no longer translucent, about 4 minutes; season to taste with salt and pepper.
  • Serve the shrimp and mushroom sauce alongside the baked grits.

My very favorite comfort food! Discovered this several years ago on the back of the grits box and I knew I would love it. Nobody eats it except me, so I either pig out or have many leftovers.

1 1/4 tsp salt
1 c uncooked quick-cooking grits
8 oz extra sharp cheddar cheese, shredded and separated
1 Tbsp butter
3/4 c milk
2 clove garlic, minced
2 large eggs
cooking spray, butter flavor

Steps:

  • 1. Bring water and salt to a boil in a medium saucepan. Gradually add grits, stirring constantly. Cover and simmer 8 minutes or until thick, stirring frequently.
  • 2. Remove pan from heat. Add the butter and 6 oz. of the cheese, stirring until cheese melts. Combine milk, garlic and eggs, stirring with a whisk. Stir milk mixture into grits mixture. Pour into a greased or sprayed 2-qt. casserole dish.

1 cup quick-cooking grits (not instant!)
1 1/2 cups shredded sharp cheddar cheese

1 garlic clove, minced

Steps:

  • Bring the water and salt to a boil.
  • Stir in the grits.
  • Cook until the grits are done.
  • Remove from the heat and add the next 4 ingredients; stir until the cheese and butter has melted.
  • Add a very small amount of grits to the eggs and stir well.
  • Add a little more and stir well again.
  • The pour this mixture back into the grits and mix well.
  • Pour the mixture into a greased 2 quart casserole dish.

1 pound veal top round, cut into 2-inch pieces, about 1/4-inch thick
1 tablespoon Essence, recipe follows
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 cup all-purpose flour, plus more for dusting work surface
1/2 cup vegetable oil
2 cups chopped onions
1 cup chopped bell peppers
1 cup chopped celery
1/4 teaspoon cayenne
2 cups peeled, seeded, and chopped tomatoes
1 tablespoon chopped garlic
5 bay leaves
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
2 cups beef stock
1/2 cup dry red wine
2 tablespoons finely chopped parsley leaves
Baked Cheese Grits, recipe follows
3 tablespoons chopped green onion tops
1 tablespoon cayenne pepper
2 1/2 tablespoons paprika
1 tablespoon dried oregano
2 tablespoons salt
1 tablespoon dried thyme
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
2 tablespoons butter
6 cups whole milk
1 1/2 teaspoons salt

2 cups grated sharp white Cheddar

Steps:

  • Combine the beef and veal in a large mixing bowl. Season the meat with the Essence, 1 teaspoon of the salt, and 1/4 teaspoon of the pepper, tossing to coat well. Add the flour and toss to coat the meat completely. Turn the meat out onto a well-floured surface and lightly pound the meat with a meat mallet. Turn the meat over and lightly pound the other sides of the meat.
  • Heat 1/4 cup of the oil in a large cast iron pot over medium-high heat. When the oil is hot, add the meat, in batches, if necessary and brown evenly on both sides, for 5 to 6 minutes. Drain the meat on paper towel-lined plates. (Add the remaining half of the oil to the pan, as needed between batches, waiting for the oil to heat before adding the meat.)
  • Add the onions, bell peppers, and celery to the oil. Season with 1/2 teaspoon of the salt and the cayenne. Continue stirring, scraping the bottom and sides of the pot to loosen any browned particles. Cook for 5 to 6 minutes, or until the vegetables are wilted. Add the tomatoes and garlic. Cook, stirring often and scraping the bottom and sides of the pot for 3 to 4 minutes. Add the bay leaves, thyme, oregano, basil, stock, and wine. Return the browned meat to the pot and season with the remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Bring the liquid to a simmer, cover partially, and reduce the heat to low. Cook for about 1 3/4 to 2 hours, stirring occasionally, or until the meat is very tender. Remove the bay leaves and stir in the chopped parsley.
  • Place a portion of the Baked Cheese Grits into a shallow serving bowl and spoon the grillades and some of the gravy over the grits. Garnish with some chopped green onions and serve immediately.
  • Combine all ingredients thoroughly.

  • Preheat the oven to 350 degrees F.
  • Lightly grease a 9 by 9-inch baking dish with 1 tablespoon of the butter.
  • Heat a saucepan over medium heat and add the milk, salt, cayenne and remaining tablespoon of butter. Bring to a boil, stir in the grits, and reduce the heat to medium. Stir for 30 seconds, then add 1 cup of the cheese and stir until the cheese melts. Cook, uncovered, for 6 to 8 minutes, stirring constantly, until the grits are tender and creamy. Pour the grits into the prepared pan and sprinkle the remaining cheese over the grits. Bake for 20 to 25 minutes, or until the cheese is melted and slightly golden. Serve hot.

This is a delicious side dish, I make this recipe quite often, and my family just loves it! (note: prep time includes the first cooking of the grits)

2 cups yellow corn grits (not quick or instant grits)
1/2 cup butter
salt and pepper
2 tablespoons chopped fresh garlic
2 cups cheddar cheese, grated
3 eggs
1 cup milk or 1 cup half-and-half cream

Steps:

  • Set oven to 350 degrees Butter an 8-inch square baking pan Prepare the grits according to package directions Add in butter, salt, pepper, garlic and cheese Mix until the butter and cheese are melted In a small bowl, beat the eggs with the milk; add to the grits, mix well Transfer the mixture into a prepared baking dish Bake for 1 hour, or until the mixture sets Serve immediately.

6 c chicken broth
1 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
2 c regular grits
16 oz cheddar cheese, cubed or shredded
1/2 c milk
4 large eggs, beaten
1/2 c unsalted butter
8 oz grated sharp white cheddar, or other white cheese

Steps:

  • 1. Preheat the oven to 350 degrees F. Grease a 4-quart casserole dish (13x9-inch baking dish)
  • 2. Bring the broth, salt, pepper, and garlic powder to a boil in a 2-quart saucepan. Stir in the grits and whisk until completely combined. Reduce the heat to low and simmer until the grits are thick, about 8-10 minutes. Add the cubed cheese and milk, and stir.
  • 3. Temper the eggs by adding a 1/2 cup of the grits to the eggs and whisk. Gradually stir in the eggs and butter to the pot of grits, stirring until all are combined. Pour the mixture into the prepared casserole dish. Sprinkle with the white Cheddar and bake for 35-40 minutes or until set.

2 tablespoons unsalted butter
1 teaspoon unsalted butter
1 onion, minced
1 cup heavy cream
1/2 teaspoon hot sauce
1/2 teaspoon salt
1 1/8 cups old-fashioned grits
2 cups shredded extra-sharp cheddar cheese
3 large eggs, lightly beaten

Steps:

  • Adjust an oven rack to the lower-middle position and preheat oven to 350°.
  • Grease a 9 x 9 inch baking dish with 1 teaspoon butter.
  • Heat the remaining 2 tbs butter in a large saucepan over medium heat until the foam begins to subside.
  • Add the onion and cook until softened but not browned, about 4 minutes.
  • Add 3 cups water, the cream, hot sauce, and salt and bring to a boil.
  • Whisk in the grits and decrease heat to low.
  • Cook, stirring frequently, until the grits are thick and creamy, about 15 minutes.
  • Off the heat, thoroughly stir in 1 1/2 cup cheese, the eggs, and pepper to taste.
  • Pour the mixture into the prepared baking dish, smooth the top with a rubber spatula, and place the grits in the oven.
  • Bake for 30 minutes.
  • Remove the dish from the oven, sprinkle the remaining 1/2 cup cheese evenly over the top, and return to the oven.
  • Continue baking until the top is browned, about 15 minutes.
  • Let rest for 5 minutes and serve.

The best cheese grits I have ever had, courtesy of my mom's recipe box. Bake it the night before and re-bake it in the morning. You can make this the morning, of, but I recommend you follow it as written to get the same consistency.

6 cups water
2 1/2 teaspoons salt
1 1/2 cups grits (not instant)
1/2 cup butter
3 eggs, beaten
1 lb medium cheddar or 1 lb sharp cheddar cheese, shredded and divided

Steps:

  • Preheat oven to 350°F.
  • Bring water to a boil in a saucepan; add salt and grits.
  • Cook according to the package directions, for the minimum time recommended.
  • Remove from heat.
  • Stir in remaining ingredients except for 1/4 cup of cheese.
  • Pour into buttered 2 quart baking dish (I use a 9-inch fluted Pyrex dish with 2" sides) and top with remaining cheese.
  • Bake at 350°F for 1 hour.
  • Let cool, then refrigerate, covered with foil.
  • The next morning, bake at 350°F for 30 minutes.
  • If making the morning of, bake for a full 1 hour 15 minutes.

6 thickly sliced bacon strips, chopped
3 cups water
3 cups chicken stock
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
2 cups quick cooking grits
1 (12-ounce) package Velveeta cheese, cubed, about 2 1/3 cups
1 stick of butter, cubed
1/2 cup 2% milk
4 large eggs, lightly beaten
2 cups shredded white cheddar cheese, about 8-ounces

Steps:

  • Preheat oven to 350°F. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove pan from heat. Remove bacon with a slotted spoon; drain on paper towels. Add water, stock, garlic powder, and black pepper to bacon drippings; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat. Add Velveeta and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Transfer to a greased 9x13-inch baking dish. Sprinkle with bacon and shredded cheese. Bake, uncovered for 40 to 45 minutes or until edges are golden brown and cheese is melted. Let stand 10 minutes before serving. TO FREEZE: Cool unbaked casserole, cover, and freeze. To use, partially thaw in refrigerator overnight. Remove casserole from refrigerator and set on counter 30 minutes before baking. Preheat oven to 350°F. Bake grits as directed, increasing time to 50 to 60 minutes or until heated through and a thermometer inserted in center reads 165°F.
