My mom was queen of easy recipes, and this is a good one for a cold night. Creamy and full of corn. I usually serve it w/ homemade corn bread.

Steps:
- In lg pot, over med-high heat, cook bacon until crisp. Remove bacon to paper towels. Cool, then crumble and reserve.
- Over medium heat, cook onion in bacon drippings until tender, stirring often. Add potatoes and water. Bring to a boil.
- Cover, reduce heat to low. Simmer until potatoes are tender, about 15-20 mins. Stir in remaining ingredients. Cook, stirring, until heated through. Sprinkle w/ bacon right before serving.
