2 cups buttermilk
Juice of 1/2 lemon
1 tablespoon hot sauce
1/2 yellow onion, sliced
5 sprigs fresh thyme
3 cloves garlic, smashed
Kosher salt and freshly ground black pepper
1 (3 pound) chicken cut into 8 pieces, rinsed and patted dry
2 cups crushed corn flakes
3/4 cup grated Parmesan cheese
2 teaspoons chopped fresh thyme

Steps:

  • Preheat the oven to 400 degrees F. Fit a sheet tray with a wire rack and spray with nonstick cooking spray.
  • Mix together buttermilk, lemon juice, hot sauce, onion, thyme, garlic, salt, and pepper to a large bowl. Add chicken and coat with mixture. Cover with plastic wrap and place in the refrigerator for 3 hours or up 12 hours.
  • Mix corn flakes, Parmesan cheese, and thyme together. Season with salt and pepper.
  • Remove chicken from the marinade, letting the excess drip off, and dredge through the corn flake-Parmesan mixture, pressing to help it adhere.
  • Place on the wire rack-fitted sheet tray and bake for 45 minutes until golden and crisp.

Steps:

  • Pour butter into two 13-in. x 9-in. baking pans. Pour 2 cups buttermilk into a shallow bowl. In another bowl, combine the flour, garlic salt, pepper and Creole seasoning. Dip chicken in buttermilk, then coat with flour mixture. Place bone side up in prepared pans. , Bake, uncovered, at 425° for 25 minutes. Turn; bake 10 minutes longer or until juices run clear. In a small saucepan, combine the soup and remaining buttermilk; cook and stir over medium heat for 5 minutes or until heated through. Serve with chicken.

4 chicken drumsticks (about 1 pound), skins removed
2 whole boneless, skinless chicken breasts (about 1 3/4 pounds), halved
2 1/2 cups low-fat buttermilk
4 cups cornflakes, finely crushed
3/4 teaspoon Old Bay seasoning
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/4 teaspoon cayenne pepper
Lemon wedges (optional)
Flat-leaf parsley sprig (optional)

Steps:

  • Preheat oven to 400 degrees. Generously coat a rimmed baking sheet with cooking spray; set aside. Rinse chicken, and pat dry. Transfer to a medium bowl. Pour buttermilk over chicken. Cover, and let marinate 1 hour in refrigerator.
  • Toss cornflakes, Old Bay, thyme, basil, and cayenne in a large bowl. Remove 1 piece of chicken at a time from buttermilk, letting excess drip back into bowl, and dredge in cornflake mixture.

2 pounds skinless, boneless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil
2 large carrots, cut into 1/4-inch pieces
1 large onion, chopped
½ teaspoon salt
1 teaspoon Cajun seasoning
¼ cup all-purpose flour
½ cup orange juice
1 (14.5 ounce) can chicken broth
1 cup frozen peas
¼ cup chopped flat-leaf parsley, divided
1 tablespoon chopped fresh dill
½ cup buttermilk
2 ½ cups corn flakes cereal

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place chicken in a large pot and cover with water; bring to a boil and cook until chicken is no longer pink in the center, about 5 minutes. Drain.
  • Heat olive oil in a large skillet over medium heat. Stir carrots, onion, and salt into hot skillet, cover the skillet, and cook, stirring occasionally, until onions are tender, 8 to 10 minutes. Stir Cajun seasoning into vegetables.

8 slices white bread
1 cup buttermilk
1 teaspoon hot pepper sauce
1 pinch salt

4 lbs chicken parts, rinsed and patted dry (preferably legs, thighs, and wings)

Steps:

  • Preheat oven to 400°. Generously rub a baking sheet with oil. In a food processor, pulse bread until it turns into coarse crumbs.
  • In a large bowl, stir together buttermilk, hot-pepper sauce, ¾ teaspoon salt, and ½ teaspoon pepper. In a separate bowl, mix breadcrumbs, Parmesan, thyme, and 1/8 teaspoon pepper.

A great recipe to try when you're in the mood for fried chicken, but can't afford all the calories and fat. If you're out of buttermilk, you can just substitute 1/4 C milk + 1 TSP vinegar. I like to spice this up by adding lots of hot sauce. If time allows, I would recommend soaking the chicken tenderloins in the buttermilk, garlic powder and hot sauce mixture in the refrigerator for at least 2 hours. 1 cup buttermilk
1 cup 2% low-fat milk (optional)
1 tablespoon vinegar (optional)
Pam cooking spray
1 cup panko breadcrumbs
1 tablespoon Mrs. Dash garlic and herb seasoning
1 tablespoon dried cilantro
1/2 teaspoon garlic salt
1/2 teaspoon white pepper

Steps:

  • Soak chicken breasts in buttermilk or buttermilk substitute. Soak at least 6 hours.
  • Turn breasts over after 3 hours on each side.
  • Drain breasts in a colandar and discard the buttermilk.
  • In a gallon ziplock sack, add Panko crumbs, Mrs. Dash, cilantro, garlic salt, white pepper and paprika. Shake, shake shake.
  • Spray Pam on flat baking pan.
  • Preheat oven 400.
  • Put the pan in the oven to heat.
  • Place one chicken breast at a time in the sack and shake until covered.
  • Do that with each piece. Place all on the hot pan and bake 10 minutes on each side.
  • Take a flat spatula to turn the chicken in the pan. Slice in strips if desired before serving. Marination time is not included in work time.

1 qt buttermilk
1/2 tsp poultry seasoning
1 Tbsp Lawry's seasoning salt
3 Tbsp butter, cut into pieces

  • 1. Wash and dry chicken parts.

1kg chicken pieces
1 1/4 cup (300 ml) buttermilk
1 clove garlic, finely chopped
1 teaspoon (5 ml) paprika
1/2 teaspoon (2.5 ml) ground cumin
1/2 teaspoon (2.5 ml) ground coriander
3 tablespoons (45 ml) flour
Warm water or milk
Salt and ground black pepper to season to taste

Steps:

  • Combine buttermilk, chopped garlic, paprika, cumin, and coriander. Place chicken pieces and the buttermilk marinade mix in an airtight container and refrigerate overnight. Pre-heat oven to 180 C. Transfer the chicken pieces and marinade to an oven-proof casserole dish with a lid and bake for approximately 1 3/4 to 2 hours, until golden brown and cooked to the bone. Transfer the chicken to a serving plate, cover, and keep warm. Cooking will turn the marinade into a clear sauce, though the buttermilk will tend to separate and rise to the top. Transfer to a small saucepan. Mix the flour and a little warm water into a smooth paste and stir into the saucepan. Simmer while stirring, until the liquid turns into a thick gravy. Add warm water or milk if it thickens too much.You may want to use a blender to ensure an extra-smooth smooth texture. Serve with rice or mash.

Two of my favorite things; chicken and buttermilk! This is a wonderful baked method and it "eats" like fried. Removing the skin saves calories and we all can stand to lose a few of those. My family loves it and I serve frequently. Enjoy!

2 c buttermilk
juice of 1/2 lemon
1/2 yellow onion, sliced
5 sprig(s) fresh thyme
3 clove garlic, smashed
kosher salt and freshly ground black pepper to your taste
1 tsp hot sauce - optional
1 3 pound chicken cut into 8 pieces, skin removed, rinsed an patted dry.
2 c cornflakes, crushed
3/4 c grated parmesan cheese
2 tsp fresh thyme, chopped

Steps:

  • 1. Mix together buttermilk, lemon juice, hot sauce (opt),onion thyme, garlic, salt and pepper in a large bowl. Add chicken and coat with mixture. Cover with plastic wrap and place in refrigerator for 3 hours or up to 12 hours (opt).
  • 2. After soaking chicken for 3 hours: Pre-heat the oven to 400 degrees. F. Fit a sheet tray with a wire rack and spray the non-stick cooking spray. Remove chicken from the marinade, letting the excess drip off. Mix corn flakes, parmesan cheese and thyme. Season with salt and pepper.

1 bag (16 oz.) coleslaw blend (cabbage slaw mix)
3/4 cup KRAFT Lite Zesty Italian Dressing
1 pkt. SHAKE 'N BAKE Chicken Coating Mix
1 tsp. poultry seasoning
8 small boneless skinless chicken breasts (2 lb.)
1/2 cup buttermilk
4 cups hot mashed sweet potatoes

Steps:

  • Preheat oven to 400°F. Empty coleslaw blend into medium bowl. Add dressing; toss to coat. Cover. Refrigerate until ready to serve. Place coating mix, poultry seasoning and pepper in shaker bag. Close bag; shake gently to mix.
  • Moisten chicken with buttermilk, turning to evenly coat both sides of each chicken breast. Gently shake off excess buttermilk. Add 1 or 2 pieces of chicken to shaker bag; shake until evenly coated. Place in single layer in foil-lined 15x10x1-inch baking pan. Discard bag and any remaining coating mix.
  • Bake 20 min. or until chicken is cooked through (170°F). Serve with the coleslaw and sweet potatoes.
