These easy to make hot wings are crispy without being fried. Always yummy to snack on. They only take 10 minutes for prep, but need to be refrigerated for about an hour so the flour coating is firm. You can add more cayenne or use a higher hot sauce to butter ratio if you like them spicier! Enjoy.

¾ cup all-purpose flour
½ teaspoon cayenne pepper
½ teaspoon garlic powder
½ teaspoon salt
20 chicken wings
½ cup melted butter
½ cup hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk together the melted butter and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes. Turn the wings over halfway during cooking so they cook evenly.

3 garlic cloves, crushed
2 tbsp olive oil
3 tbsp cider vinegar
1 tbsp paprika
1 tbsp Worcestershire sauce
2 tsp celery salt
4 tbsp pepper sauce (we used Frank's hot sauce)
3 tbsp honey
1 ½kg chicken wings, halved at the joint

Steps:

  • In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
  • Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

1/4 cup crumbled blue cheese
2 tablespoons mayonnaise
1 small clove garlic, chopped
1 tablespoon skim milk or buttermilk

Cooking spray, for the baking sheet
3 pounds chicken wings, split at the joints, tips removed
4 stalks celery, cut into thirds
4 carrots, cut in half
2 bay leaves
1 cup fat-free low-sodium chicken broth
1 cup Frank's RedHot sauce (or 1/2 cup other hot sauce)
2 tablespoons paprika
2 tablespoons unsalted butter
1 tablespoon honey

Steps:

  • Make the dip: Pulse the yogurt, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
  • Make the wings: Preheat the oven to 425 degrees F. Coat a rimmed baking sheet with cooking spray. Put the chicken wings in a deep skillet; add 3 pieces of celery, 3 pieces of carrot, the bay leaves, chicken broth, hot sauce, paprika, butter, honey and 1/2 cup water and bring to a simmer over medium heat. Simmer until the chicken is almost cooked through, about 18 minutes. Transfer the wings to the prepared baking sheet and arrange in a single layer; reserve the sauce in the skillet.
  • Bake the wings, turning once, until the skin is golden and crisp, 30 to 35 minutes. Meanwhile, simmer the reserved sauce over medium-low heat until slightly thickened, about 15 minutes. Discard the celery, carrot and bay leaves. Reserve one-quarter of the sauce for serving. Return the wings to the skillet and toss with the remaining sauce. Serve the wings with the blue cheese dip and reserved sauce; cut the remaining celery and carrot into sticks to serve on the side.

Steps:

  • Make the blue cheese dip: In a small bowl, stir together blue cheese, mayonnaise, sour cream and lemon juice. Thin with milk until spoonable. Season with salt and pepper and set aside. (Dip keeps for up to 4 days in the refrigerator; thin as needed with more milk.)
  • Place an oven rack 4 to 6 inches from the broiler. Heat the broiler.
  • Prepare the chicken: Pat the wings dry. If the wings are not yet broken down into three pieces, cut each wing at the two joints. To do so, flip the wing over and wiggle each part to find the joint. Cut at the joint hinge to separate the meaty drumette from the wingette (also known as the flat) and the wingette from the smaller wing tip.

(To prepare them in advance and allow them to dry-brine, let the wings sit out at room temperature for up to 1 hour after coating, or in the refrigerator overnight.   • As wings cook, make the buffalo sauce: In a large bowl, stir together the hot sauce, butter, lemon juice and garlic. Season to taste with salt and pepper.
  • Transfer the wings to the hot sauce-mixture and toss to coat. Using a slotted spoon, return the wings to the baking sheet, leaving extra sauce behind. Broil until sizzling and browned in spots, about 5 minutes. (Depending on your broiler, you may need to rotate the pan so all the food is exposed to the heat source.)

1 lb chicken wings
1 tablespoon cayenne pepper
1 teaspoon crushed red pepper flakes
1 tablespoon salt
1/2 cup louisiana hot sauce
1 tablespoon margarine

Steps:

  • Fill a large pot half way with water and then add the first 4 ingredients.
  • Bring water mixture and wings to a boil and then boil for 15 minutes.
  • Transfer wings to an oven safe container coated with cooking spray. Bake wings on "Broil" (high) for 15 minutes on each side.(For crispier wings, cook longer on each side, maybe 20 minutes per side).
  • While waiting for wings, combine the Hot Sauce and Margarine in a microwave safe container and cook in microwave for 2 minutes or until melted. (You can cook the sauce longer for a thicker sauce).

1 c all-purpose flour
1/2 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp salt
1/2 c Franks Hot Sauce
1 stick butter (1/2 cup)
dash(es) garlic powder

Steps:

  • 1. In a small bowl mix together the flour, paprika, cayenne pepper, and salt.
  • 2. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated.
  • 3. Cover dish or bowl and refrigerate for 60 to 90 minutes. (I just make it and leave in the fridge until dinner.)
  • 4. Bake on a rack set over a jelly roll pan. I use my cooling cookie racks. That way they are not sitting in their own grease. Spray your rack so the chicken does not stick.
  • 5. Place chicken wings on the wire rack.
  • 6. Preheat oven to 375 degrees and bake for 45 min.
  • 7. Combine the butter, hot sauce, and garlic powder in a small saucepan over low heat.
  • 8. Stir together and heat until butter is melted and the mixture is well blended.
  • 9. Remove from heat and reserve for serving.
  • 10. Place wings in the serving bowl. Add hot sauce mixture and stir together.

This is an extremely simple oven baked chicken wing "recipe". It's roots came out of me being tired of paying premium prices for those frozen cooked Buffalo Wings in the grocery store! I hesitate to even call it a recipe, since it is so simple. Not fancy, but super simple on time and ingredients.. and still satisfying.

3 lbs chicken wings
2 tablespoons cooking oil
soul seasoning (I use "All Island Soul Seasoning") (optional)
2 teaspoons hot sauce (or more)
3 tablespoons butter

Steps:

  • Preheat oven to 400°F.
  • Prepare chicken wings by using poultry shears and sniping off the wing tips (discard, or freeze for other use, like stock), and snip at remaining wing joint. This gives you "2" wings per wing.
  • Spread oil on baking sheet.
  • Spread wings in single layer on baking sheet.
  • You may choose to slide wings around on the oiled sheet, to put a light coating of oil on the wings. Less oil on wings makes for slightly less crispness.a bit of oil helps seasoning stick. You could omit oil, and spray with a good quality non-stick olive oil product.
  • This step is optional. Sprinkle as liberally as you dare with your choice of seasoning. This is where experimentation comes in, be daring, try what's in your spice cabinet, however I've come to like a common "All Island Soul Seasoning", with a touch of cayanne or ground red or white pepper. If you're cutting back on salt, be cautious of prepared seasoning, as they have a lot of sodium.
  • Bake until browned, cooked through, and a bit crispy. About 40 minutes. Use your nose and eyes to check! I use my convection setting on my oven too, which cuts on the cooking time, but makes a nice crisp even coating.
  • Remove from oven, and cool for about 15 minutes.
  • Melt butter and mix with hot sauce. (again. amount of hot sauce to your taste).
  • Toss with the wings in a serving bowl with the butter/hot sauce mixture.
  • Serve with your favorite Blue Cheese Dressing and celery sticks.

I love buffalo wings, but not all the deep frying that is involved. I was watching "Good Eats" one day and Alton Brown's fool proof method to delicious buffalo wings was discovered! I did make a few adjustments to this recipe that helped me out... but stayed true to the original for the most part. This method may be a little time consuming, but the end result of crispy, fall of the bone, tender wings is well worth it. The cook time includes the 1 hour in which the wings rest/cool in the refrigerator before baking.

12 whole chicken wings (tips removed and cut at the joint)
3 ounces unsalted butter
1 small garlic clove, minced

  • Place a 6-quart saucepan with a steamer basket and 1-inch of water in the bottom, over high heat, cover and bring to a boil.

  • In a large zip lock bag, place 1/4 cup of the baking powder and 1 tsp of cayenne pepper. Add half the chicken and toss until coated. Place on the cooking rack. Repeat with other half of chicken and remaining powder and cayenne.
  • Bake coated chicken wings for 20 min at 250 F, then increase heat to 425 F and bake for 20 more minutes. Turn pieces over and bake for another 20 min or until golden brown and chicken is thoroughly cooked.
  • If making your own buffalo sauce, heat prepared hot sauce (commercial or homemade) and butter in a sauce pan until well blended. Pour sauce in a large bowl. If using a commercially prepared buffalo sauce just pour it in a large bowl. I highly recommend my habanero mango sauce (also paleo compliant), but Franks Red Hot Buffalo Sauce is quite good and not terrible from a paleo point of view.
  • Toss all the cooked chicken until evenly coated. Transfer to a platter and serve with your favorite sides.

Crispy, hot wings without the hassle of deep-frying or the lengthy marinating process. Though I live a mere hour's drive north of the city from which buffalo wings originated, I can't find a place that makes decent wings! This recipe is a combination of a wing recipe from Better Homes and Gardens cookbook and the sauce we always used at home. I don't claim credit for it by any means, but I think it should be posted, because it's awesome!

2 lbs chicken wings
1/4 cup butter
1/2 cup Frank's red hot sauce

Steps:

  • Cut off wing tips; discard. Separate wings at joint.
  • Place wings in a single layer on a wire rack inside a shallow pan (to catch grease). (You can use a broiler pan, but the super thin bars of the wire rack keep the meat from sticking).
  • Broil 4 to 5 inches from heat for 10 minutes or until lightly browned. Use the stove fan if you have one; the grease from the meat makes a lot of smoke.
  • Turn. Broil another 10 to 15 minutes or until meat is no longer pink.
  • Meanwhile, microwave butter in large, microwave-safe bowl.
  • Add hot sauce.
  • Add wings to bowl and cover. Shake until wings are well coated.
  • Serve hot with celery ribs, carrot sticks, and blue cheese dressing, if desired.

2 tablespoons honey
2 tablespoons ketchup
2 tablespoons red pepper sauce
1 tablespoon Worcestershire sauce
Paprika
Celery sticks, if desired
1/3 cup reduced-fat cottage cheese
1/2 teaspoon white wine vinegar
2 tablespoons milk
1 tablespoon crumbled blue cheese
1/8 teaspoon white pepper
1 clove garlic, finely chopped

Steps:

  • Heat oven to 350°F. Line 15x10x1-inch pan with foil. Remove skin from chicken.
  • In resealable food-storage plastic bag, mix honey, ketchup, pepper sauce and Worcestershire sauce. Add chicken. Seal bag; refrigerate at least 15 minutes but no longer than 24 hours, turning occasionally.
  • Place chicken in pan; sprinkle with paprika. Bake uncovered about 30 minutes or until crisp and juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Meanwhile, in blender or food processor, place cottage cheese, vinegar, milk, half of the blue cheese, the white pepper and garlic. Cover and blend on low speed until smooth and creamy. Spoon into serving dish. Stir in remaining blue cheese. Cover; refrigerate until serving. Serve chicken wings with sauce and celery sticks.

1/2 cup louisiana hot sauce, for marinade
1 cup flour
1 cup breadcrumbs
1 tablespoon ground cayenne pepper

1 tablespoon vinegar
1/4 teaspoon garlic powder

Steps:

  • Cut wings at joints dicarding tips then place wings in plastic bag with 1/2 cup of hot sauce mix together and set aside to marinate 2 hr.s minimum.
  • Pour milk in a bowl. mix remaining "Breading" ingredients together in another bowl. Take wing pieces from marinade and coat with breading mixture then dip in milk and coat again with breading mixture. Place wings on greased cookie sheet bake for 40 min.s at 400f turning once during cooking time.
  • In a saucepan mix sauce ingredients together and heat to melt butter. Once wings are cooked brush sauce over wings and serve with french fries,garlic bread, carrot sticks, celery sticks, and blue cheese dipping sauce.

I dislike fried food, but I love Buffalo wings! So instead of frying, I've been perfecting a technique for baking them that yields terrific results without the mess and greasiness of frying. We love Buffalo wings for dinner--it works well for thighs or drumsticks as well as wings. The cooking time as directed will work for wings, thighs, or drumsticks, but may need to be adjusted for larger pieces.

2/3 cup unsalted butter
1 cup cayenne pepper sauce (I use Frank's Red Hot Original Cayenne Sauce, the hot sauce used in the original recipe)
4 -5 lbs chicken wings, trimmed or left whole with tips tucked under meaty part to form a triangle (or 2-3 lbs of meatier pieces such as thighs)
blue cheese dressing (I prefer Marie's Premium Super Blue Cheese Dressing)
celery rib

Steps:

  • Heat oven to 350* F.
  • Combine butter and hot sauce in a small sauce pan. Heat over medium-low heat until butter is melted. Stir to combine.
  • Place chicken pieces on a broiler pan. Brush generously with sauce.
  • Bake for 15 minutes.
  • Brush with sauce, turn, and brush other side with sauce. Bake for another 15 minutes.
  • Turn oven up to 400* F. Brush chicken, turn, and brush again. Bake 15 minutes.

3 tablespoons cooking oil
4 cloves garlic, chopped
1 3/4 teaspoons salt
1 1/2 teaspoons cayenne
For Wing sauce:
1/2 cup butter, melted
1 cup hot sauce
For Dressing:
2/3 cup mayonnaise
1/3 cup sour cream
1/4 pound bleu cheese, crumbled (about 1 cup)
2 scallions, including green tops, chopped
5 teaspoons vinegar
1/4 teaspoon fresh ground black pepper

Steps:

  • Heat the oven to 425. In a large bowl, combine wings, oil, garlic, 1 1/2 teaspoons of the salt, and the cayenne. Arrange wings in a single layer on baking sheets. Bake until just done, about 25 minutes then turn on broiler to crisp them up a little. Meanwhile, in a medium bowl, combine the dressing ingredients and stir. In a large bowl, combine melted butter and hot sauce. Add the wings and toss to coat. Serve the wings with celery sticks and dressing alongside.
