3/4 cup packed dark brown sugar
1/4 cup Dijon mustard
3 tablespoons extra-virgin olive oil
2 cups coarse fresh bread crumbs made from rustic white bread

Steps:

  • In a bowl, stir sugar and mustard into a smooth paste and set aside.
  • In a large skillet, heat olive oil over medium heat. Add bread crumbs and toast them, stirring frequently, until crisp and golden, 5 to 10 minutes.
  • Brush sugar-mustard paste over ham, then use hands to pack on bread crumbs.

2 cups stone-ground graham flour
1/3 cup flour
1/3 cup packed light brown sugar
1 teaspoon salt
1 1/4 cups buttermilk
1/3 cup molasses
one large egg
3/4 cup raisins
1 teaspoon baking soda
1/3 cup boiling water

Steps:

  • 1. adjust an oven rack to middle position and heat the oven to 350°. Grease an 8/2 by 4 1/2 inch loaf pan and set aside.
  • 2. Whisk the flours, sugar, and salt together in a bowl. Whisk the buttermilk, molasses, and egg together in another bowl. Gradually stir the buttermilk mixture into the flour mixture until mixed. Stir in the raisins. Stir the baking soda into the boiling water until dissolved, then stir into the batter until just incorporated.
  • 3. Scrape the batter into the prepared pan and smooth the top. Bake until a skewer inserted into the center of the loaf comes out clean, 50 to 60 minutes. Rotate the pan halfway through.
  • 4. Cool the loaf in the pan for 10 minutes. Run a small knife around edge of the pan to loosen, then turn out onto a wire rack and cool for one hour before serving. Makes one eight inch loaf

One of the best bread recipes in Grandma's Recipe Box. Grandma would have this bread in the oven before my sister and I got up. We'd wake to the smell of it baking. Breakfast would include thick, warm slices spread with apple butter. My sister still craves this bread.

Number Of Ingredients 10

1 1/2 cups sifted all-purpose flour
2 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 cup granulated sugar
2 cups graham flour
1 cup raisins
2 eggs, well beaten
2 cups sour milk or 2 cups buttermilk
1/3 cup shortening, melted
1/2 cup molasses

Steps:

  • Sift flour, soda, salt and sugar together.
  • Add graham flour and mix well.
  • Add raisins and stir.
  • In separate bowl, combine beaten eggs, milk, melted shortening and molasses.
  • Turn liquids into dry ingredients.
  • Stir vigorously until all flour is dampened.
  • Pour batter into 14x9x2" greased bread pan.
  • Bake at 350 degrees for 35 to 40 minutes.
