Dump-and-Bake Ground Beef Casserole with Rice image

Let the oven do the work, and just stir together the raw ingredients for this Dump-and-Bake Ground Beef Casserole with Rice -- an easy and healthy dinner!

1 lb. extra lean ground beef (at least 96% or 97% lean)*
1 (28 ounce) can diced tomatoes, drained
1 (10.75 ounce) can condensed tomato soup, NOT diluted
1 ½ cups beef broth
1 cup uncooked long grain white rice
1 tablespoon Worcestershire sauce
1 tablespoon minced fresh garlic
1 teaspoon dried Italian seasoning
½ teaspoon onion powder
Salt and pepper, to taste (about 1 teaspoon salt and ½ teaspoon pepper)
1 cup grated mozzarella cheese
¼ cup grated Parmesan cheese
Optional garnish: fresh chopped parsley or basil

Steps:

  • Preheat oven to 375 degrees. Spray a large baking dish (about 9 x 13 inches) with cooking spray.
  • In the prepared dish (or in a large bowl), use your fingers to crumble uncooked ground beef into small pieces. Add tomatoes, tomato soup, beef broth, uncooked rice, Worcestershire sauce, garlic, Italian seasoning, onion powder, salt and pepper. Stir to combine.
  • Cover tightly with foil. Bake for 60-75 minutes (or until the rice is tender). During the final 5 minutes of cooking, remove dish from oven, uncover, and sprinkle with mozzarella and Parmesan. Place back in the oven (uncovered) for the final 5 minutes, or until cheese is melted. Garnish with fresh herbs, if desired.

1 1/2 cups brown rice, medium or short grain
2 1/2 cups water
1 tablespoon unsalted butter
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the rice into an 8-inch square glass baking dish.
  • Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
  • After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

1 stick (1/2 cup) butter
2 cups uncooked long-grain white rice
4 10.5-oz cans beef consommé

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter in a large skillet over medium-high heat. Add rice then sauté for about 5 minutes or until rice is light brown. The butter will become foamy and lovely and the rice will start to smell somewhat nutty.
  • Pour rice and butter into a 2-quart baking dish then add beef consommé. Cover tightly with two layers of aluminum foil then bake at 375 degrees for 1 hour.
  • Remove from oven, fluff rice with a fork, then serve.

I hated making brown rice on the stove top, so I have used this for almost 20 years. Smells like popcorn when it is baking. Be creative! Add spices to match any meal. Make a double recipe and you have the beginnings for a breakfast frittata or stir fried rice.

3 cups cooked brown rice
2 cups frozen peas
1 (10.75 ounce) can condensed cream of celery soup
¼ cup milk
2 tablespoons soy sauce
1 clove garlic, minced
1 cup shredded Cheddar-Monterey Jack cheese blend, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

1 can Campbell's French onion soup
1 can Campbell's beef consomme
1 carton sliced mushrooms (or 8-oz canned sliced)

Steps:

  • Place stick of butter in 11 x 13 casserole dish.
  • Place in oven; turn temperature to 350 degrees.
  • Remove dish when butter is melted.
  • Add rice, soups, and mushrooms to dish atop melted butter.
  • Stir loosely with fork or spoon so that all rice is dispersed in liquid.
  • Place dish in oven and bake for 30-40 minutes or until top is golden.
