This is not diet food. But oh so yummy. Wonderful for pot luck meal or picnic. It is one of the few meal I make that is not from scratch but I find canned baked beans have a nice taste and bake well. I have used french fried onions on top instead of bread crumbs for variation.

2 can(s) baked beans, large cans
1 package(s) hot dogs
1/3 cup(s) catsup
1/4 cup(s) spicy mustard
2 tablespoon(s) horseradish
1 stick(s) butter
1 pound(s) bacon
1-2 cup(s) bread crumbs
1/2 cup(s) chedder cheese grated

Steps:

  • In a crock pot put the 2 cans of beans. Cut the bacon into small pieces and add to the beans. Add the catsup, mustard, horseradish and stir well. Put on high and cook for 3 hours.
  • Once the beans are cooked, put the oven on 400 deg to pre heat. In a sauce pan, melt the butter and once melted pour in the bread crumbs and stir until coated.
  • Remove the bean mixture from the crock pot and put into a baking pan. Put the cheddar cheese on the top then add the bread crumb mixture. Smooth out evenly.
  • Bake for about 30 minutes until the top is browned and slightly crunchy. Let it sit for 5 or so minutes before serving.

2 teaspoons margarine
3 tablespoons chopped onion
1 (16 ounce) can baked beans with pork
1 (16 ounce) package frankfurters, sliced
⅓ cup brown sugar
1 teaspoon prepared mustard
1 teaspoon celery salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium heat. Saute onions in butter until tender. Stir in the baked beans and sliced frankfurters. Season with brown sugar, mustard and celery salt. Transfer to a 2 quart casserole dish.
  • Bake for 40 minutes, stirring occasionally.

2 cans (16 ounces each) pork and beans
1 package (12 ounces) hot dogs, halved lengthwise and sliced
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons prepared mustard
1 package (8-1/2 ounces) cornbread/muffin mix
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine the pork and beans, hot dogs, brown sugar, Worcestershire and mustard. Transfer to a greased 9-in. square baking dish. , Prepare cornbread batter according to package directions; stir in cheese. Drop by spoonfuls onto bean mixture. bake, uncovered, at 350° for 40-45 minutes or until heated through.

You may reduce or increase the amount of hot dogs if desired, I also like to add in some cayenne pepper, 3/4 cup of brown sugar will produce a sweet taste you may if you prefer a less sweeter taste then use 1/2 cup or adjust the amount to taste.

5 slices uncooked thick bacon, diced (can use more)
1 large onion, chopped
2 tablespoons fresh minced garlic
2 (28 ounce) cans baked beans
3 tablespoons molasses
2 tablespoons prepared yellow mustard
1 tablespoon mustard powder
1/2 teaspoon seasoning salt
1/2 cup canned diced tomato (do not use the juice)
1/2-3/4 cup brown sugar
4 large hot dogs, chopped (preferably a good brand of beef hot dogs)

Steps:

  • Set oven to 350 degrees F.
  • Grease a 2-quart casserole dish.In a large bowl.
  • In a skillet cook the bacon with onions until evenly browned.
  • Add in garlic and cook stirring for 2 minutes; drain and place into a large bowl.
  • Add in the 2 cans baked beans, molasses, prepared yellow mustard, dry mustard powder, seasoned salt, tomatoes and brown sugar (start with 1/2 cup and add in more to taste) mix well to combine.
  • Mix in the hot dogs.
  • Transfer to prepared casserole dish.
  • Bake uncovered for 1 hour and 15 minutes or until thickened and bubbly.

How about topping these delicious baked beans with crunchy rye bread crumbs? I bet you'll be glad you did. I've adapted this recipe from one I "found" in a Cuisine at Home magazine.

4 slices thick-sliced bacon, diced
1 cup minced onion
2 (15 ounce) cans pinto beans, rinsed and drained
1 (15 ounce) can crushed tomatoes
1/2 cup ketchup
1/2 cup brown sugar
3 tablespoons Worcestershire sauce
3 tablespoons prepared yellow mustard
2 -3 slices rye bread, buttered, pulsed in food processor

Steps:

  • Preheat oven to 400 degrees.
  • Brown bacon in cast iron skillet over medium heat until crisp. A regular large frying pan will work, but you'll need to use an oven-proof pan or transfer to casserole dish.
  • Drain bacon on a plate covered with paper towel.
  • Pour off bacon drippings from skillet reserving 1 tablespoon.
  • Sweat onion in the tablespoon of drippings until soft.
  • Add remaining ingredients (but not the bread crumbs) along with bacon pieces; stir to mix.
  • Sprinkle crumbs on top of beans; bake in your preheated, 400 degree oven until nice and bubbly. I check after about 20 minutes. I put my beans in a casserole dish in lieu of the skillet.
  • You may bake the beans in individual serving dishes. Simply top each with crumbs and bake as above.
