BANANA BREAD BAKED OATMEAL BARS

This is the perfect breakfast for those days when you really want a muffin but need something hearty and healthy like oatmeal. For the best flavor use a very ripe banana. Any fruit can be substituted for the banana, including dried fruit (cranberries!) and nuts. The bars are great the next day, too. Once cool, put the bars into the fridge, then pop them in the microwave for a few seconds before eating.

½ cup unsweetened applesauce
½ cup white sugar
3 cups old-fashioned oats
1 ¼ cups 2% milk
2 large eggs, beaten
1 teaspoon baking powder
½ teaspoon salt
1 over-ripe banana, mashed
2 teaspoons packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.
  • Beat applesauce and white sugar together in a bowl. Add oats, milk, eggs, baking powder, and salt to applesauce mixture; beat until evenly mixed. Stir banana into oat mixture. Pour batter into prepared baking dish.
  • Stir brown sugar and cinnamon together in a small bowl; sprinkle mixture over banana batter.
  • Bake in the preheated oven until firm, 30 to 35 minutes. Cool for 5 minutes before slicing into bars.

I love baked oatmeal and make many different versions, but this is one of my kids favorites. It is really easy to throw together and smells so good. We like to eat it topped with vanilla yogurt.

2 cups rolled oats or 2 cups quick oats
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
3 tablespoons sugar
1 egg, beat
2 -3 bananas (1 mashed and 1 or 2 sliced)
1 1/2 cups skim milk
1 teaspoon vanilla
1 -2 tablespoon brown sugar
cooking spray

Steps:

  • Preheat oven to 375.
  • Spray an 8 inch square pan with cooking spray.
  • Stir together oats, baking powder, salt and cinnamon.
  • Add sugar, an egg, 1 mashed banana, milk and vanilla. Stir just until combined.
  • Pour into prepared pan and top with a layer of sliced bananas.
  • Bake for 25 minutes.
  • Top with brown sugar and broil until golden. About 3-4 minutes, but watch it carefully!

2 cups oatmeal (regular or quick)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups nonfat milk
3 bananas, ripe (mashed)
1 teaspoon vanilla
1/2 teaspoon nutmeg
2 teaspoons cinnamon
4 tablespoons Splenda Sugar Blend for Baking
1/2 cup walnuts (chopped)
2 tablespoons protein powder

Steps:

  • Preheat oven to 325 degrees F.
  • In a large bowl combine oatmeal, cinnamon, nutmeg, sugar, salt and chopped walnuts.
  • Bring milk to almost a boil add mashed bananas, vanilla, and protein powder together until well mixed.
  • Combine wet and dry ingredients together and mix well.
  • Pour into greased casserole dish.
  • Bake at 325 for 45 minutes.
  • Serve hot or chilled in bars.

1/2 teaspoon fine salt
2 tablespoons whole milk
1 teaspoon pure vanilla extract

1/4 cup pecans, roughly chopped and toasted

Steps:

  • In a medium pot, bring 4 1/2 cups water to a boil. Stir in oats and salt and cook 1 minute. Let cool, cover, and refrigerate overnight.
  • Bring oatmeal to a simmer over medium-high. Cook until tender, about 10 minutes. Stir in milk and vanilla. Transfer to a 9-inch pie plate.

1 1/2 cups rolled oats
2 tablespoons dark brown sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts or almonds, optional
1/8 teaspoon fine table salt
1 very ripe large banana
1 cup nonfat milk
1 tablespoon unsalted butter, melted
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup blueberries

Steps:

  • Preheat the oven to 375 degrees F. Spray an 8-inch square glass or ceramic baking dish with nonstick cooking spray. You want the mixture to be 3 to 4 inches high in the dish so it doesn't dry out.
  • Combine the oats, 1 tablespoon of the dark brown sugar, baking powder, cinnamon, nuts, if using, and salt in a large bowl.
  • Mash 1/2 of the banana in a medium bowl. Whisk in the milk, melted butter, vanilla and egg until combined.
  • Stir the wet ingredients into the dry ingredients until fully incorporated. Very gently fold in the blueberries with a rubber spatula.
  • Pour the oatmeal into the prepared baking dish and smooth the top. Thinly slice the remaining 1/2 banana crosswise and arrange the slices in an even layer over the top. 1/3 cup sugar
1/2 teaspoon cinnamon

1 egg
2 ripe bananas, mashed
1/4 cup coarsely chopped pecans
1/4 cup golden raisin (optional)
1/4 cup crushed pineapple (reduce milk if add pineapple due to added moisture, optional, optional) (optional) or 1/4 cup pineapple tidbits (reduce milk if add pineapple due to added moisture) (optional)
2 -4 tablespoons sugar (to create brulee topping) (optional) or 2 -4 tablespoons brown sugar (optional)

Steps:

  • Preheat oven to 350°F.

1 teaspoon baking soda
½ teaspoon salt
1/2 cup chopped walnuts
3 ripe bananas (mashed)
2 eggs
1/4 cup maple syrup
1 teaspoon vanilla
1/2 cup unsweetened almond milk

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9x13 pan with cooking spray and set aside.
  • In a large bowl, combine oats, cinnamon, baking soda, salt, and walnuts. Toss until well combined.
  • In a separate bowl, mash bananas and stir in eggs, maple syrup, vanilla, and almond milk.
  • Pour wet ingredients into the bowl of dry ingredients and stir to combine until all oats are coated.

1/4 cup honey
2 cups milk or water
1 egg
2 tsp vanilla
2 cups blueberries
2 tbsp brown sugar

Steps:

  • Preheat oven to 350. Slice bananas and layer in an 8x8 buttered baking dish. Mix melted butter & cinnamon, pour over bananas. Cover with foil and bake 10 minutes. Allow to partially cool and mash bananas. while baking bananas, mix oats, 1/4 cup nuts, baking powder & salt. In a separate bowl, whisk bananas, honey, milk, egg and vanilla. Mix oat mixture with banana mixture. Fold in 1 1/2 cup blueberries. Pour into baking dish, sprinkle remaining nuts blueberries, and brown sugar over top. Bake for 30 to 45 minutes or until set. Serve warm.
