MISS MARY'S FAMOUS APRICOT CASSEROLE
The name says it all. This recipe comes from Miss Mary Bobo's Boarding House in Lynchburg, Tennessee, and it's famous. Is it a breakfast? A side dish? A dessert? You decide!

Steps:
- In greased casserole dish arrange apricot halves cut side up.
- Sprinkle with brown sugar, then cracker crumbs.
- Dot crumbs with butter.
- Bake at 350 for 35 minutes, or until casserole has thickened and is crusty on top.
BAKED APRICOTS
I had not thought about apricots for a long time, but we had an apricot dish when a group that I belong to ate at the Woodford Reserves for our Christmas celebration. Their apricots did have bourbon and were delicious and a little different than the usual casseroles. I thought I would be able to see their recipe on line, but could not find it. I did find a couple sites that talked about this southern dish. They compared the apricots and ham to cranberries and turkey. I tried it out for a brunch that I was having and found them to be very good. Even my DH who turned up his nose, but thought that he should try them really did like them.

Steps:
- Spray casserole dish with PAM.
- Lay apricots pit side up in pan.
- Sprinkle brown sugar over the top and them sprinkle some cinnamon.
- Crush crackers and put on top.
- Melt 1 to 1 1/2 sticks butter and pour over crackers.
- Bake at 325 for 40 minutes.
APRICOT CASSEROLE
This recipe is from the Colonial Park United Methodist Church cookbook in Memphis, TN. There's no date on the cookbook, but I remember my mother being the editor for it when I was in high school, so late 60's. This recipe was submitted by Elizabeth Riggins. She classified it as a side dish, but I think of it as a dessert.

- preheat oven to 325.
- grease a 13x9 baking dish.
- in a large skillet add 2 tbsp butter, heat pine nuts until lightly toasted.
- remove and set aside.
- in same skillet heat remaining butter, saute barley and scallions until tender, 2-3 minutes.
- add broth, bring to a boil.
- stir in apricots, raisins, and nuts.
- pour into the grease baking dish and bake uncovered for 1 1/4 hrs or until barley is tender.

BAKED APRICOTS
This is a super quick and delicious dish to put together. I listed it as a side because we eat it with veggies and a meat, but it could be used as a desert. Either way it is very good.

- 1. Preheat oven to 350 degrees. Spray 8 inch square pyrex dish, (or one of approximate size). Pour apricots with juice in dish, sprinkle brown sugar over, top with 1/2 the butter, sprinkle crushed Ritz crackers over mixture, covering well. Top with rest of the butter. Bake until mixture is bubbly and crackers are slightly browned, approximately 20-25 minutes.
APRICOT SWEET POTATO CASSEROLE
This recipe came from a neighbor when I requested recipies for a cookbook our local history group was getting together. It has been a favorite of my family and many others that read it in our self published cookbook " The Main Menu of Memories". If you use fresh potatoes, they should be cooked first to al dente stage.

Steps:
- Grease a 1 to 1 1/2 quart baking dish.
- Arrange sweet potatoes in single layer.
- Mix sugar, cornstarch, salt and cinnamon in a 1 quart saucepan.
- Stir in apricot nectar and 1/3 cup water.
- Cook and stir on high heat until the mixture comes to a boil.
- Remove from heat and add margarine and apricots.
- Pour evenly over potatoes.
- Sprinkle with pecans.
- Bake uncovered at 375 degrees for 25 to 30 minutes.
- The casserole will be hot and bubbly.
