The recipe for these tangy lemon bars comes from my cousin Bernice, a farmer's wife famous for cooking up feasts. - Mildred Keller, Rockford, Illinois

3/4 cup butter, softened
2/3 cup confectioners' sugar
1-1/2 cups plus 3 tablespoons all-purpose flour, divided
3 large eggs
1-1/2 cups sugar
1/4 cup lemon juice
Additional confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, beat butter and confectioners' sugar until blended. Gradually beat in 1-1/2 cups flour. Press onto bottom of a greased 13x9-in. baking pan. Bake 18-20 minutes or until golden brown., Meanwhile, in a small bowl, whisk eggs, sugar, lemon juice and remaining flour until frothy; pour over hot crust. , Bake 20-25 minutes or until lemon mixture is set and lightly browned. Cool completely on a wire rack. Dust with additional confectioners' sugar. Cut into bars. Refrigerate leftovers.

1 ½ cups all-purpose flour
⅔ cup confectioners' sugar
¾ cup butter or margarine, softened
3 eggs
1 ½ cups white sugar
3 tablespoons all-purpose flour
¼ cup lemon juice
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking pan.
  • Combine the flour, 2/3 cup confectioners' sugar, and butter. Pat dough into prepared pan.
  • Bake for 20 minutes in the preheated oven, until slightly golden. While the crust is baking, whisk together eggs, white sugar, flour, and lemon juice until frothy. Pour this lemon mixture over the hot crust.
  • Return to the preheated oven for an additional 20 to 25 minutes, or until light golden brown. Cool on a wire rack. Dust the top with confectioners' sugar. Cut into squares.

1 ½ cups all-purpose flour
⅓ cup powdered sugar
¾ cup butter, softened
1 ½ cups white sugar
3 eggs
¼ cup lemon juice
3 tablespoons all-purpose flour
⅓ cup powdered sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
  • Combine 1 1/2 cups flour, 1/3 cup powdered sugar, and butter in a bowl. Pat dough into the prepared pan to form a crust.
  • Bake crust in the preheated oven for 20 minutes. Remove from the oven and leave oven on.
  • Whisk white sugar, eggs, lemon juice, and 3 tablespoons flour together in a bowl and pour filling over crust.
