1 small clove garlic
Pinch salt, plus 2 teaspoons
Juice 1 1/2 limes (about 3 tablespoons)
2 teaspoons kosher salt
1/4 teaspoon chili powder
1/4 cup extra-virgin olive oil
1 cup fresh corn kernels (from about 2 ears)
1 orange bell pepper, diced
1/2 small red onion, finely chopped (about 1/4 cup)
1 tablespoon extra-virgin olive oil
1 (15-ounce) can black beans, drained and rinsed
Kosher salt
Freshly ground black pepper
1 cup cherry tomatoes, halved
1 small hass avocado, halved, seeded and diced
1/4 cup chopped fresh cilantro, leaves and stems

Steps:

  • Make the dressing: Smash the garlic clove, sprinkle with a pinch of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Whisk the garlic paste, lime juice, salt and chili powder together in a bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream.
  • For the salad: Cook the corn, bell pepper, and onions in the olive oil until beginning to brown over medium-high heat in a skillet. Toss in the black beans and cook until warm. Add the dressing and toss to coat evenly. Adjust seasoning with salt and pepper. Remove from the heat and gently fold in the tomatoes, avocado, and cilantro. Serve.

1 (12 ounce) package romaine lettuce leaves
1 large tomato, diced
1 avocado, diced
1 pickling cucumber, diced
¾ cup crumbled feta cheese
¼ cup diced red onion
¼ cup white corn kernels
¼ cup cooked black beans
¼ cup crushed tortilla chips, or to taste
2 tablespoons olive oil
2 tablespoons lemon juice
¼ teaspoon ground cumin
1 pinch salt and ground black pepper to taste

Steps:

  • Place romaine lettuce in a large bowl. Add tomato, avocado, cucumber, feta cheese, onion, corn, and black beans; toss well. Sprinkle tortilla chips over salad.
  • Whisk olive oil, lemon juice, cumin, salt, and pepper together in a bowl until dressing is smooth; drizzle over salad.

This Southwestern black bean salad recipe is healthy and delicious! This fresh black bean salad is perfect for potlucks, parties and busy weeks. Recipe yields 4 large or up to 8 side servings.

3 cans of black beans (15 ounces each) or 4 1/2 cups cooked black beans, rinsed and well-drained
2 ears of corn, shucked, or 1 cup of canned corn (drained) or defrosted frozen corn
1 orange, yellow or red bell pepper, chopped
1 cup quartered cherry tomatoes
1 cup chopped red onion (from 1 small onion)
1/2 cup finely chopped fresh cilantro (about 1/2 medium bunch)
1 medium jalapeño, finely chopped (keep the seeds for heat if you'd like, or remove them for mild flavor) or 2 tablespoons finely chopped pickled jalapeño
1/2 teaspoon lime zest (from 1 lime, preferably organic)
2 tablespoons lime juice (about 1 lime), to taste
1/4 cup extra-virgin olive oil
1/4 cup white wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt, to taste
Optional garnishes: sliced avocado, crumbled feta, lime wedges

Steps:

  • In a large serving bowl, combine all of the ingredients and toss to combine. Taste, and adjust as necessary until the flavors really pop-I usually add another teaspoon or two of vinegar (you can use lime juice instead, for more mild flavor) and another 1/4 teaspoon salt.
  • Cover and chill to enhance the flavors-preferably for at least 2 hours, or overnight. Serve in individual bowls as is, or with any of the garnishes listed. Leftovers keep well for up to 4 days or so; you might want to wake up the flavors with an extra squeeze of lime juice or tiny splash of vinegar.

So this was my lunch yesterday and today. And I'm thinking about whipping up another bowlful this weekend to serve with some yummy grilled chicken (if it warms back up enough to be pleasant for eating outdoors! Brr!). And whipping up is probably not the best verb here...because there is no whipping involved. Just stirring really. So mabye I'll stir up another bowlful this weekend. ;) This dish is super "clean" and diet friendly recipe. It's almost paleo (I think...I can't keep the "rules" straight on this diet!), gluten free, dairy free, low carb, etc. There is minimal chopping...and just takes a few minutes to prep! Win-win-win...Baja-Cali Black Bean Salad FTW! I'm calling this Baja-Cali because it has all the flavors and colors of Baja...red/green...lime/cilantro...plus an avocado mixed in as well. Hence the Baja-Cali prefix for this black bean salad. Hope y'all enjoy this refreshing black bean salad!

1 (15 ounce) can diced tomatoes
1 (15 ounce) can black beans
1 (15 ounce) can corn
1 green pepper, seeded and diced
1 orange bell pepper, seeded and diced
1 small avocado, diced
2 small limes, squeezed
handful cilantro leaf
salt, to taste
pepper, to taste

Steps:

  • Add the diced tomatoes, black beans and corn to a colander in the sink and rinse well. Shake well to "dry".
  • In a mixing bowl, toss together all the ingredients. Add salt and pepper to taste.
  • A NOTE ON THE LIMES: Start with the juice from 1 lime, taste and then add another if you want more lime flavor. Not all limes have the same amount of juice in them, so thought I'd add a note. :).
  • Serve the Baja-Cali Black Bean Salad as lunch or a side dish -- as is, or with tortilla chips. Enjoy!

2 16-ounce cans black beans
1 sweet yellow pepper, cored, seeded and diced
1 sweet red pepper, cored, seeded and diced
1/4 cup chopped red onion
2 tablespoons sherry vinegar
1 teaspoon ground cumin
4 tablespoons extra-virgin olive oil
Salt and freshly ground pepper

Steps:

  • Turn the cans of beans upside down and open them from the bottom. This makes it easier to remove the beans. Dump the beans into a colander and rinse them with cold water. Drain them well and place them in a mixing bowl.
  • Fold in the yellow and red pepper and the onion.
  • Beat the vinegar and cumin together, then beat in the oil. Fold the dressing into the bean mixture and season with salt and pepper. Transfer the salad to a serving dish and cover. It can be kept at room temperature for many hours before serving or refrigerated. Remove it from refrigerator at least 1 hour before serving.
