BAHAMA MAMA BANANA RUM CAKE

Bahama Mama Banana Rum Cake image

A cake that blends a favorite drink with a rum cake and pound cake. This is dense, but not heavy, and the spicy molasses kick from the dark rum enhances the banana flavor. You may use light or dark brown sugar.

Provided by Scarlett516

Categories     Dessert

Time 1h30m

Yield 10 serving(s)

Number Of Ingredients 18

1/2 cup unsalted butter
1/4 cup water
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1/2 cup dark rum
1 1/2 cups chopped pecans, toasted
1 1/2 cups unsalted butter
2 cups granulated sugar
1 cup firmly packed brown sugar
5 large eggs, room temperature
1 cup mashed banana, very ripe
2 teaspoons vanilla extract
3 tablespoons dark rum
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3/4 cup sour cream

Steps:

  • TO MAKE THE GLAZE.
  • Combine the butter, water, and sugars in a heavy-bottomed saucepan over medium-high heat and bring to a boil. Reduce heat to medium-low and simmer for 5 minutes. Remove from heat and stir in the rum. Set aside and keep warm.
  • TO MAKE THE CAKE.
  • Position a rack in the middle of the oven and heat to 350°F Spray a 10-cup tube pan with nonstick cooking spray. Sprinkle the pecans in the bottom of the pan and set aside.
  • In a large bowl, use an electric mixer to beat together the butter and sugars until light and fluffy.
  • One by one, beat in the eggs, taking care to mix well between each addition.
  • Beat in the mashed bananas, vanilla, and rum.
  • Sift the flour, baking soda, baking powder, and salt over the batter and fold in using a rubber spatula, just until no streaks of flour remain.
  • Fold in the sour cream.
  • Spoon the batter into the pan and spread to the pan using the back of a rubber spatula.
  • Bake about 60-80 minutes, or until a toothpick inserted in the center comes out clean. Transfer to a wire rack and allow to cool for 5 minutes. Use a wooden skewer to poke holes all over the cake and pour 1/4 cup glaze over the cake.
  • Allow to cool for 5 more minutes. Place a serving platter over the pan and invert to release the cake. Spoon the remaining glaze over the cake, little by little, and let stand until the glaze is completely absorbed by the cake. If the glaze starts to pool at the base of the cake, use a small metal spatual to spread it up and around the sides of the cake. As the glaze cools, it will form a rummy, sugary shell.
  • Allow to cool completely before serving.

BAHAMA MAMA ( NON ALCOHOLIC PUNCH )

A nice blend of tropical flavors that will keep you cool. A taste of the Bahamas! This makes a large batch but can easily be scaled down. From Recipes from Friends. Ingredients in parenthises are scaled down to 1/4 of the recipe to make a smaller batch.

BAHAMA MAMA

This is a great summer drink from Dale Degroff (The Essential Cocktail) that will go by the pitcher! This recipe is by the glass, though, for sipping on the patio. If you don't have all four rums, you can improvise by doubling up (I would recommend making sure to use dark rum and coconut rum, however). Angostura bitters really make the drink, but could be left out if you don't have them (usually found in the tropical drink section at a supermarket or liquor store).

Categories     Beverages

Time 2m

Yield 1 glass, 1 serving(s)

Number Of Ingredients 10

3/4 ounce white rum
3/4 ounce golden rum (anejo)
3/4 ounce dark rum (preferably Myers's)
1/2 ounce coconut rum
3 ounces unsweetened pineapple juice
2 ounces orange juice (preferably fresh-squeezed)
1 teaspoon grenadine
1 dash Angostura bitters
1 maraschino cherry (optional)
1 orange slice (optional)

Steps:

  • Combine rums, juices, grenadine and bitters in a glass with ice. Shake well, or stir if you do not have a shaker (two glasses top-to-top work well as a shaker, just make sure they seal tightly).
  • Pour into a large glass and garnish with the cherry and orange slice, if desired.

BAHAMA MAMA CHICKEN MARINADE

Bahama Mama Chicken Marinade image

This chicken has the wonderful flavors of lime juice, rum, onions, garlic, and island spices - plus a little bite of hot peppers. Adjust the heat to your liking, and either grill or oven-bake the chicken - it's delicious either way. Prep time includes marinating. Cook time is approximate for marinade only, not chicken itself.

BAHAMA MAMA SEAFOOD FRITTERS WITH TANGY CARIBBEAN COCKTAIL SAUCE

Bahama Mama Seafood Fritters With Tangy Caribbean Cocktail Sauce image

This is a recipe for warm seafood fritters served over a bed of fresh Romaine lettuce and green plantains. The recipe was included in the Royal Caribbean International Cookbook, which is a collection of recipes that represent the favorite Caribbean dishes that have been served in the dining rooms during Royal Caribbean cruises.

Provided by Northwestgal

Categories     Caribbean

Time 30m

Yield 10 seafood fritters, 3-4 serving(s)

Number Of Ingredients 17

1/4 cup fresh lime juice (60ml)
2 cups ketchup (500ml)
1 tablespoon Worcestershire sauce
1/2 tablespoon pickapeppa red hot sauce
salt and pepper, to taste
1 1/2 cups all-purpose flour (210g)
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon white pepper
5 ounces conch, cooked and finely chopped (150g)
5 ounces cod, cooked and flaked (150g)
3/4 cup bottled clam juice (200ml)
1/2 cup milk (125ml)
1 1/2 quarts peanut oil (1.5L) or 1 1/2 quarts light olive oil, divided (1.5L)
1 green plantain
10 romaine lettuce leaves, cleaned and dried
1 red pepper, diced small

Steps:

  • COCKTAIL SAUCE - Combine all the ingredients for the cocktail sauce, and cover and refrigerate until ready to use.
  • FRITTERS - In a large bowl, combine the flour, baking powder, salt and pepper. In a medium bowl, combine the remaining ingredients (expect the oil). Make a well in the dry ingredients, and add the liquid. Stir with a rubber spatula until just combined.
  • In a deep, heavy saucepan, heat half of the oil to 375°F/190°C (To test temperature: A small piece of bread dropped into the oil should float up to the surface almost immediately and brown within 45 seconds.).
  • Drop the fish mixture by spoonfuls into the hot oil. Deep fry the fritters in batches until golden brown, for about 5 minutes. Transfer to a paper towel-lined plate (to absorb excess oil).
  • Peel and slice the plantain lengthwie as thinly as possible. In a deep, heavy saucepan, heat the remaining oil to 375°F/190°C (Try the bread test again.) Carefully place the plantain strips into the hot oil, frying in batches so they do not stick to one another. With a slotted spoon move the strips around for about 1 minute until they become crsip. Immediatgely remove them and transfer to a paper towel-lined plate. Sprinkle with salt while they are still warm.
  • To serve, place a Romaine leaf inside a bowl, then top with a couple of the plantain strips. (Placing them against the side of the bowl gives the dish a little height.) Add about 3 seafood fritters. Sprinkle some diced red peppers on top of each fritter.
  • Serve with Caribbean Cocktail Sauce on the side.
