3 day old bagels
⅓ cup olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
¼ cup freshly grated Parmesan cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a baking sheet with olive oil.
  • Slice bagels into 1/8 inch thick rounds using a serrated knife. Arrange them in a single layer on the greased baking sheet. In a small bowl, stir together the olive oil, garlic, Italian seasoning, and Parmesan cheese. Use a spoon or pastry brush to apply the flavored olive oil to the bagel chips. If you start to run out of the mixture, you can add a little bit more oil without sacrificing any flavor. Season the chips lightly with salt and pepper.
  • Bake for 15 to 20 minutes in the preheated oven, or until the chips are lightly browned. Remove from the oven and cool. The chips will become crispier as they cool.

1 1 1/2 to 2 pounds smoked whitefish, meat reserved, skin and bones discarded (about 3 cups)
1/4 cup whipped cream cheese
1/4 cup mayonnaise
1 tablespoon chopped fresh dill fronds
1 teaspoon lemon zest and 1 tablespoon lemon juice (from 1 lemon)
Pinch of cayenne pepper, optional
Freshly ground black pepper
2 celery stalks, finely chopped plus more sliced for serving
1 shallot, finely chopped
Nonstick cooking spray
For Serving: endive and sliced cucumbers

Steps:

  • Preheat the oven to 350 degrees F. Cut the bagels in half vertically through the center hole. Stand the bagel up on the flat side and cut 1/4-inch-thick slices. Add the slices to a rimmed baking sheet and spray with nonstick cooking spray. Bake until the chips are crispy and lightly browned, about 15 minutes. Let cool slightly.
  • Meanwhile, in a large bowl, combine the smoked whitefish, cream cheese, mayonnaise, dill, lemon zest, lemon juice, cayenne (if using) and 1/2 teaspoon pepper. Stir to combine.
  • Serve the whitefish salad with bagel chips, endive, cucumbers and celery.

5 large bagels
1/2 c cooking oil or olive oil
1/2 c butter or margarine
1 1/2 tsp garlic powder (or to taste)
1/2 tsp sea salt (or to taste)

Steps:

  • 1. Preheat oven to 430 degrees.
  • 2. Cut bagels in half crosswise. Cut very thin slices in each half to form chips.
  • 3. In a large skillet (or a roast pan), put in the oil, butter garlic powder and salt. Stir while heating to melt the butter.
  • 4. Add the sliced bagel chips to the pan. Use a spatula to turn or flip them over and over in the oil/butter mixture to coat them well.
  • 5. Quickly place the bagel chips on baking sheets. Place in oven and bake for 8-10 minutes.
  • 6. Remove from oven, turn the chips over and drain any oil that may be in the pan. Return to oven for an additional 3-6 minutes. *** (be care not to burn).
  • 7. Remove from oven. Place on paper towel lined dish (tray, bowl or pan), to cool completely before putting in zipper bags to store.
  • 8. Eat right away.. or set aside for a party! We eat these as is... but they are good with dips or plain cream cheese. *** WARNING! These are so good.... that you can't eat just a few.....

2 teaspoons crushed fresh garlic
2 teaspoons italian seasoning

3 tablespoons extra virgin olive oil
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper, coarsely ground
4 plain bagels, cut into 1/4 inch wedges
2 (12 ounce) containers whipped cream cheese
1 cup fresh spinach, chopped
1 (14 ounce) can artichoke hearts, drained and diced
1/4 cup roasted red pepper, diced
1 teaspoon garlic, minced
1 teaspoon kosher salt

Steps:

  • For the Bagel Chips:.
  • In a bowl, combine olive oil, thyme, oregano, salt and pepper.
  • Place bagel wedges in a large mixing bowl, drizzle with the oil mixture and toss thoroughly until evenly coated.
  • Place the bagel wedges on a cookie sheet in a single layer and bake for 12-15 minutes or until golden brown.
  • For the Dip:.
  • Place all ingredients in a mixing bowl and stir with a rubber spatula until thoroughly blended.

EVERYTHING BAGEL VEGGIE CHIPS



Everything Bagel Veggie Chips image

You'll never guess these tasty, crispy, colorful, veggie chips are made from only 3 ingredients! A spritz of cooking spray and a sprinkle of savory everything seasoning are all it takes to make potatoes into a quick easy snack. We threw in a creamy horseradish sauce, too, just because it goes so well.

Nonstick cooking spray, for the parchment and potatoes
1 1/2 pounds mixed potatoes, purple, sweet and red (about 1 small of each)
2 tablespoons everything seasoning
3/4 cup sour cream
1 1/2 teaspoons prepared horseradish
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
Pinch kosher salt
2 scallions, minced

Steps:

  • For the veggie chips: Preheat the oven to 400 degrees F. Spray 2 parchment-lined baking sheets with nonstick cooking spray.
  • Slice the potatoes crosswise into 1/8-inch rounds using a mandoline or sharp knife. Place the sweet potatoes on one baking sheet and the regular potatoes on the other and spread into an even layer on each. The potatoes can be tightly squeezed into one layer but should not be overlapping. Spray the potatoes with the nonstick spray, making sure you spray each one. Sprinkle the everything season evenly over both baking sheets.
  • Bake for 10 minutes, then rotate the baking sheets front to back and top to bottom. Continue to bake until the chips begin to brown and crisp, another 10 to 15 minutes. The sweet and regular potatoes will crisp at different rates. Let the chips cool on the baking sheets for another 5 minutes.
  • For the horseradish sauce: While the chips are baking, mix the sour cream, horseradish, Worcestershire, hot sauce and salt in a small bowl. Fold in the scallions.
  • Transfer the chips to a serving plate or bowl and serve with the horseradish dipping sauce.

SEASONED BAGEL CHIPS



Seasoned Bagel Chips image

Great with soup, salads or even a steak. Easy enough to make in a toaster oven for individual servings. Refrigerate any remaining mix for another occasion.

1/4 teaspoon salt
1 1/2 teaspoons cajun seasoning or 1 1/2 teaspoons creole seasoning
2 teaspoons minced garlic
5 tablespoons olive oil
2 bagels

Steps:

  • Position rack in center of oven and preheat 300 degrees. Line a baking sheet with parchment paper or aluminum foil.
  • Place bagels on a cutting board. Using a serrated bread knife, slice each bagel to form 1/4 inch slices. If they're not perfect, don't worry; still will be good. Place bagel slices on prepared baking sheet in a single layer.
  • In a blender, combine the oil and remaining ingredients and blend until smooth. Using a pastry brush, lightly coat one side of bagel with seasoned oil mixture. (Those silicon brushes work great.).
  • Bake slices for 16 to 18 minutes, until golden and crisp.
  • Remove pan from oven and transfer to a wire rack to cool.
  • Can be made several days in advance, cooled completely, then stored in an airtight container for up to 2 weeks.
