Making Bacon Wrapped Dates with Blue Cheese is one of my favorite appetizers because it's easy to do and delicious to eat!

Number Of Ingredients 3

12 oz pack of Pitted Medjool Dates (about 20 large pitted dates)
1 lb thick cut bacon (cut in half)
4 oz Point Reyes Blue Cheese

Steps:

  • Preheat oven to 375F. Line a baking sheet with tinfoil and place a cooling rack on top.
  • Cut the side of each date (being careful not to cut all the way through) and add a pinch of blue cheese and stuff it inside. Press the date back together and wrap each date with a half slice of bacon. If at all possible, try to keep the cheese cut-side facing up, with the bacon cut-side facing down. This will help keep the cheese from cooking out while also keeping the bacon wrapped around each date.
  • Bake for 20-30 minutes or until the bacon is cooked through. Remove from heat and let cook for 10 minutes.
  • **OPTIONAL** If you're making the bouquet - Skewer each bacon wrapped date and place them in a small vase. If you're having trouble with them slipping down, try to skewer it through the bacon as it's thick texture holds up the best.

24 large dried Medjool dates with pits (14 ounces)
6 ounces sharp blue cheese, such as Bleu d'Auvergne
1/4 pound thinly sliced prosciutto (8 to 10 large slices)

Steps:

  • Preheat the oven to 400 degrees F.
  • With a small paring knife, slit each date lengthwise and spread open just enough to remove the pit while leaving the date intact. Fill the cavity of each date with a small piece of blue cheese and fold the date over the cheese, pressing it back into its original shape.
  • Cut a strip of prosciutto as wide as each date is long and wrap it around twice, enclosing the date almost completely. Place the dates on a sheet pan and bake for about 8 minutes, until the prosciutto is browned and the cheese starts to melt.
  • Cool slightly and serve warm.

1/2 cup blue cheese, at room temperature
1 pound thick-cut bacon (12 slices)

Steps:

  • Preheat the oven to 400 degrees F.
  • Slice the dates lengthwise three-quarters of the way down. In a small bowl, press the cream into the blue cheese with a fork. Press a small scoop of the blue cheese into the center of the dates and close them back up. Cut each piece of bacon in half. Wrap each halved bacon strip around a date. Secure with a toothpick.

1 pound sliced bacon, cut in half
1 pound pitted dates
4 ounces blue cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. 18 pitted dates (preferably Medjool)
18 salted and roasted whole almonds
6 slices bacon cut crosswise into thirds

Steps:

  • Heat the oven to 400 degrees F.
  • Stuff 1 piece of cheese and 1 almond into each date, then wrap one piece of bacon around each date and secure bacon with a toothpick if desired. Arrange dates, bacon seam down and 1 inch apart in a shallow baking pan.
  • Bake 5 minutes, then turn dates over with tongs and bake until bacon is crisp, 5 to 6 minutes more. Drain on a paper towel or parchment. Serve immediately.
