BACON-WRAPPED CHICKEN BREASTS

Boneless skinless chicken breasts stay moist and flavorful when wrapped in bacon and roasted. Plus, a filling of cream cheese flavored with onions, garlic and Worcestershire sauce infuses the meat with even more flavor from the inside.

1 tablespoon olive oil
1/2 small yellow onion, minced
2 cloves garlic, minced
6 ounces cream cheese, at room temperature
2 tablespoons finely chopped chives
1 1/2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
Four 6- to 8-ounce boneless skinless chicken breasts
12 slices bacon (not thick-cut)

Steps:

  • Preheat the oven to 375 degrees F. Heat the olive oil in a medium skillet over medium heat. Add the onion and cook, stirring, until golden brown, about 6 minutes. Stir in the garlic and cook 30 seconds more. Remove the pan from the heat and add the cream cheese, chives and Worcestershire sauce and stir until evenly combined. Season the filling with salt and pepper.
  • Halve each chicken breast horizontally, leaving it attached at one side so it opens like a book. Sprinkle the chicken with salt and pepper, then divide the filling among the breasts, spreading it evenly on the inside of each. Close the chicken breasts and sprinkle the outsides lightly with salt and pepper.
  • Lay 3 strips of bacon side-by-side on a cutting board and position a chicken breast right-side-up at the end of the strips. Tuck the thinner "tail" of the chicken breast underneath for even cooking, then roll the breast up in the bacon. Repeat with the remaining bacon strips and chicken breasts.
  • Set a cooling rack in a rimmed baking sheet and transfer the chicken breasts with the bacon seam-side down to the rack. Bake until the chicken is almost cooked through and an instant-read thermometer inserted in the middle of each breast reads 155 degrees F, about 35 minutes. Heat the broiler and broil the breasts until the bacon turns golden brown and crisp, about 5 minutes. Serve hot.

¼ cup brown sugar
2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
¼ teaspoon onion powder
4 (4 ounce) skinless, boneless chicken breast halves
1 (16 ounce) package bacon
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
  • Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.
  • Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Serve topped with parsley.

8 wooden toothpicks
1 lb boneless skinless chicken breast, cut into 2 x 1 inch pieces
3 fresh jalapeno peppers, seeded and cut onto thin strips
1 package thick sliced bacon
mccormick gourmet collection all purpose Greek seasoning
bottled ranch salad dressing or bottled sweet and sour sauce (optional)

Steps:

  • Soak toothpicks in water for 15min.
  • drain.
  • Preheat grill.
  • Wrap 1 piece of chicken and i piece of jalapeno pepper in each slice of bacon.
  • Secure the wrap with toothpick.
  • Sprinkle with greek seasoning.
  • Grill chicken pieces on the rack of an uncovered grill directly over medium coals for 10 to 15 min.
  • or until chicken is no longer pink.
  • Turn occasionally and sprinkling with greek seasoning.
  • Serve with salad dressing or sauce.

Excellent choice for the grill lover! Great choice for a barbecue or anyone who loves chicken! It's a fairly simply recipe, but it comes out so tasty! Jalapenos are completely optional-- I prefer mine without, but it seems to go over great with those who love some spice!

4 large chicken thighs (or breasts)
1 cup sweet baby rays barbecue sauce
2 large onions, sliced
16 slices bacon
salt, to taste
pepper, to taste
garlic powder, to taste
1 small jalapeno, sliced (optional)
1 cup mushroom, sliced (optional)

Steps:

  • On four large sheets on aluminum foil, place 4 slices of bacon in the center of each.
  • Evenly divide onion slices, and neatly place on top of the bacon slices (add jalapenos and/or mushrooms on top of the onions).
  • Place the large chicken pieces on top of the onions (and other vegetables) and add salt, pepper and garlic.
  • Smother chicken in sweet baby ray's barbecue sauce (1/4 cup to each chicken thigh--- add more if desired).
  • Wrap chicken in tight foil packets; double wrap for extra support.
  • Place wrapped packets on hot coals; Cook for one hour, turning over ever 25 minutes.
  • Let sit for 10 minutes once you remove from grill (be very careful when opening-- very hot!).

12 asparagus spears
1/2 cup pesto sauce
1 tablespoon olive oil
1/2 teaspoon italian seasoning
1/4 cup parmesan cheese, grated
salt and pepper, to taste
4 slices bacon

Steps:

  • Preheat oven to 400º F.
  • Line baking sheet with heavy-duty foil.
  • Pound out of the chicken to approximately 1/2" thickness.
  • Place chicken and pesto in medium bowl; toss to coat.
  • Cut asparagus to approx size of chicken roll (so that the asparagus will not peep out too much from the end).
  • Place olive oil and Italian seasoning in a shallow pan or ziplock bag and toss asparagus until coated well.
  • Place 3 asparagus spears and top with parmesan cheese.
  • Roll chicken around asparagus and wrap each roll with a bacon strip (2 if necessary to get good coverage).
  • Place, seam side down, in lined pan.
  • Bake, uncovered, at 400ºF for 35-40 minutes or until juices run clear.
  • Broil 6 inches from the heat for 3-5 minutes or until bacon is crisped.
  • Enjoy.

8 slices thick-cut bacon
1 onion, finely chopped
1 celery rib, finely chopped
1/2 red bell pepper, chopped
4 ounces shrimp, peeled, deveined and chopped
1 cup crumbled cornbread
4 boneless skinless chicken breasts (approx 6oz each)

Steps:

  • In a large skillet, cook the bacon over med heat turning often, until half cooked approx 3 minutes.
  • Transfer to a paper towel lined dish.
  • Add the onion, celery and bell pepper to the skillet and cook until softened, about 3 minutes.
  • Stir in the shrimp and cook approx 2 minutes until shrimp is opaque.
  • Stir in the cornbread; season with salt and pepper.
  • Cut a 2 inch wide slit through the center of each chicken breast, beginning from the thicker side and cutting horizontally toward the center to make a pocket.
  • Fill each with one quarter of the stuffing; press the opening to seal.
  • Place 2 strips of bacon on a work surface.
  • Lay chicken breast crosswise on the strips and wrap the bacon around the breast; secure with toothpicks.
  • Wipe out the skillet and heat over med heat.
  • Add the wrapped chicken and cook for 3 minutes.
  • Turn the chicken, cover the pan with a lid and cook, turning once or twice, until th bacon is crisp and the chicken is cooked through -- approx 5 minutes.

Two 3-ounce packages cream cheese, softened
1 jalapeno pepper, seeded and finely chopped

  • Preheat the oven to 400 degrees F.
  • Top each piece of chicken with 1 teaspoon cream cheese and 1/4 teaspoon chopped jalapeno. Roll up each filling-covered chicken piece and wrap with 1 slice of bacon, securing with a toothpick. Transfer to a baking sheet and place in the oven for 20 minutes, flipping halfway through.
