¼ cup olive oil, divided
2 tablespoons Dijon mustard
2 tablespoons apple cider
4 skinless, boneless chicken breasts
1 ½ teaspoons crushed rosemary
salt, divided
1 teaspoon ground black pepper, divided
5 cups cubed butternut squash

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a rimmed 13x18-inch baking sheet with cooking spray.
  • Whisk 2 tablespoons olive oil, mustard, and apple cider in a bowl.
  • Sprinkle chicken breasts with rosemary, 1 teaspoon salt, and 1/4 teaspoon pepper. Place on one side of the baking sheet; brush with mustard mixture. Place butternut squash on the other side of the baking sheet; drizzle with remaining 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper; toss until well coated.
  • Roast in the preheated oven until squash is tender and chicken is golden, 35 to 40 minutes. Baste chicken with mustard mixture several times during roasting.

1 head broccoli, cut into florets
½ head cauliflower florets
½ medium head red cabbage, cut into wedges
½ cup olive oil
1 teaspoon sea salt
1 teaspoon smoked paprika
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
4 boneless, skinless chicken thighs
8 slices bacon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large rimmed baking sheet with aluminum foil.
  • Combine broccoli, cauliflower, and cabbage in a large bowl. Whisk olive oil, salt, and paprika together in a measuring cup and pour over vegetables. Gently stir until all of the vegetables are coated. Set aside.
  • Combine chili powder, cumin, and garlic powder on a flat plate. Roll each chicken thigh in the spice mixture so that both sides are coated. Wrap 2 pieces of bacon around each thigh and place chicken in the center of the baking sheet.
  • Stir vegetables one last time and scatter them around the chicken in an even layer.
  • Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 tablespoon olive oil
1 tablespoon chili garlic sauce
1/4 teaspoon salt
1 butternut squash (2 to 2 1/2 lb), halved, seeded, cut crosswise into 1/2-inch slices
4 oz cream cheese, softened
2 tablespoons chopped fresh Italian (flat-leaf) parsley
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh oregano leaves
1/2 teaspoon salt
4 boneless skinless chicken breasts (6 to 8 oz each)
4 slices thick-cut bacon
1 tablespoon butter, melted
1 tablespoon packed brown sugar
1 tablespoon soy sauce
Additional chopped fresh parsley, thyme and oregano

Steps:

  • Heat oven to 450°F. Line large, rimmed sheet pan with foil. Spray with cooking spray. In large bowl, mix olive oil, chili garlic sauce and 1/4 teaspoon salt. Add squash, and toss to coat; place squash in single layer on foil. Place wire rack on top of squash. Spray rack with cooking spray.
  • In medium bowl, mix cream cheese, herbs and 1/2 teaspoon salt. In thick side of each chicken breast, cut 3-inch-long pocket to within 1/4 inch of opposite side of breast. Spoon about 2 tablespoons cheese mixture into pocket in each chicken breast. Wrap each breast with one piece of bacon, and secure with toothpicks. Place chicken on rack.
  • Bake chicken and squash 30 minutes. Meanwhile, in small bowl, mix melted butter, brown sugar and soy sauce. Brush chicken with butter mixture; bake about 5 minutes longer or until chicken stuffing reaches internal temperature of 165°F and squash is tender. Top with more fresh herbs, as desired.
