1/2 cup chili sauce
2 eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 medium onion
1 cup shredded cheddar cheese
2/3 cup dry breadcrumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 lbs lean ground beef
2 slices bacon, halved

Steps:

  • In a bowl, combine the first eight ingredients.
  • Crumble beef over mixture and mix well.
  • Shape into a loaf in an ungreased 13 inch by 9 inch by 2 inch baking dish.
  • Top with bacon.
  • Bake uncovered at 350° for 70-80 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees.
  • Drain, let stand for 10 minutes before cutting.

3/4 cup grated zucchini, all moisture squeezed dry with paper towel
2 tablespoons onion, minced
2 tablespoons diced red pepper
1/2 cup seasoned breadcrumbs
1/4 cup barbecue sauce
1 large egg
1 teaspoon smoked paprika
1 teaspoon kosher salt
1.3 lb raw 93% lean ground turkey
5 slices center cut bacon, cut in half
2 1/2 tablespoons barbecue sauce

Steps:

  • Preheat the oven to 350°. Lightly spray a petite loaf pan with oil (if you don't have a petite loaf pan you could use a muffin tin). In a large bowl, mix the zucchini, onion, red pepper, breadcrumbs, BBQ sauce, egg, paprika and salt. Add the turkey and combine until mixed through. Create 5 equal loafs and place them into the loaf pan. Place the 2 bacon halves over each loaf and top each with 1/2 tbsp additional BBQ sauce. Bake about 25 minutes or until cooked through.

Instead of turning a meatloaf into a red-centered burger-loaf, why not turn a burger into a tender, juicy meatloaf patty? You get the inimitable meatloaf flavors of beef laced with ketchup and onion but in a far more delectable form. Simply broil the burgers until they are just past purple on the inside, and seared mahogany brown on the outside. This takes about five minutes - 55 minutes less than a traditional meatloaf. Put the patties on a potato bun and bite in. The meat is juicy enough to soak the roll, and is flavored in that meatloaf manner - brawny yet barely sweet, porky from the bacon, aromatic with herbs, onion and garlic, all commingled with a deep, beefy flavor. Excellent!

3 tablespoons ketchup
2 tablespoons Dijon mustard
1 teaspoon Worcestershire sauce
1 1/2 pounds ground beef, or a combination of beef, pork and veal
1/2 cup finely chopped onion
1 tablespoon chopped fresh thyme leaves or 1 teaspoon dried thyme
1 garlic clove, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 slices bacon, cut into thirds crosswise
Burger buns and trimmings like pickles, tomato, lettuce and mayonnaise, if desired

Steps:

  • Preheat broiler. Position oven rack 4 inches from heat. In a small bowl, mix together ketchup, mustard and Worcestershire sauce. In a separate medium bowl, mix together the meat, onion, thyme, garlic, salt and pepper. Mix in half the ketchup mixture, reserving other half as a glaze.
  • Form meat mixture into six equal patties, about 1 1/4 inches thick. Transfer patties to a baking sheet. Brush each patty with glaze.
  • For rare burgers, broil for 1 minute, then add bacon slices to tops of patties and continue broiling until bacon is browned and meat is cooked as desired, about 4 minutes longer. For medium, add bacon after 2 minutes of broiling, and for well-done, after 3 minutes. Serve with buns and trimmings if desired.

2 lbs lean ground beef
1 egg
1/2 cup breadcrumbs
1 tablespoon Worcestershire sauce
2 teaspoons balsamic vinegar
2 teaspoons mrs. dash original seasoning (or any dried herb)
1/2 teaspoon black pepper, freshly ground
2 green onions, thinly sliced (including whites)
1/4 cup carrot, grated
3 slices bacon, each cut into 4 pieces

Steps:

  • Preheat oven to 350F and spray muffin tin with cooking spray.
  • Gently mix all ingredients, except for the bacon, with your hands in a large bowl.
  • Fill each muffin cup with meatloaf mixture. They should be almost full. Place 1/4 piece of bacon on top of each meatloaf muffin.
  • Cook for 30 minutes or until internal temperature reaches 165°F You can quickly brown the bacon under the broiler for a couple of minutes if you prefer.
  • Tip: After cooking muffins, pry each one out with a fork (or really any utensil) and set on top of the dividers between each cup. This lets the fat drain of a bit before placing on a serving dish.
