My husband introduced me to this open-faced sandwich shortly after we got married, and it quickly became an all-time favorite. It's good made with plain or onion bagels. Have fun experimenting with various toppings and dressings, too.

2 bagels, split and toasted
8 tomato slices
8 cooked bacon strips
1 cup shredded part-skim mozzarella cheese
Ranch salad dressing

Steps:

  • Place bagel halves cut side up on a baking sheet. Top each half with two tomato slices and two bacon strips. Sprinkle with cheese. , Broil 4-6 in. from the heat for 1-2 minutes or until cheese begins to brown. Serve with ranch dressing.

1 (28-ounce) can diced tomatoes
2 cups Puttanesca Sauce, recipe follows
1 (11-ounce) can evaporated lowfat milk
1/4 cup chopped fresh basil leaves
4 teaspoons mayonnaise
4 slices whole-wheat bread
1 cup baby spinach leaves
8 slices turkey bacon, cooked until crisp (in the microwave or skillet)
8 ounces shredded sharp Cheddar
2 teaspoons olive or vegetable oil
1 medium onion, chopped
2 tablespoons minced garlic
2 (28-ounce) cans crushed tomatoes
1 cup pitted Greek (kalamata) olives, halved
3 tablespoons drained capers
2 teaspoons anchovy paste
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 cup red wine, optional

Steps:

  • In a large pot, combine diced tomatoes, Puttanesca Sauce and evaporated milk. Bring mixture to a simmer. Simmer 10 minutes. Working in batches, puree soup in a blender. Return to pot and stir in basil.
  • Preheat broiler.
  • Spread 1 teaspoon mayonnaise on each bread slice. Top with 1/4 cup spinach leaves, 2 bacon slices and 2 ounces shredded cheese. Place bread slices on a baking sheet and place under broiler. Cook 1 to 2 minutes, until cheese melts. Serve soup with Bacon Cheese Melts.
  • Heat oil in a large saucepan over medium heat. Add onion and garlic and saute 2 minutes. Add tomatoes, olives, capers, anchovy paste, salt, and red pepper flakes and stir to combine. Add the wine and bring mixture to a boil. Reduce heat and simmer 15 minutes.

2 large tomatoes
1/4 cup light sour cream
1 green onion, thinly sliced
1 clove garlic, minced
1/8 teaspoon cayenne pepper or 1/4 teaspoon paprika
1/8 teaspoon ground cumin
4 1/2-inch slices bakery-style or sandwich-style whole wheat bread
2 cups fresh spinach leaves
8 slices turkey bacon, cooked according to package directions
1/2 cup shredded reduced-fat Mexican-style cheese blend (2 ounces)

Steps:

  • Preheat broiler. Slice tomatoes. Seed and chop one or two of the slices to make 1/4 cup chopped tomato. Set remaining tomato slices aside. In a small bowl, combine the 1/4 cup chopped tomato, the sour cream, green onion, garlic, cayenne pepper, and cumin. Set aside. 2.Place bread slices on a baking sheet. Broil 4 to 5 inches from the heat for 2 to 3 minutes or until toasted, turning once. If desired, set aside some of the spinach leaves for garnish. Top bread slices with the remaining spinach leaves, tomato slices, sour cream mixture, and bacon. If desired, top with the reserved spinach leaves. Add cheese. I,ve used this Sandwich Recipe over the years when having Lunch guests. Can,t go wrong with this. Always a big hit.

- 6 hamburger rolls opened
- 12 slices of cheddar or american cheese
- 12 slices of tomatoes
- 24 slices of bacon
- 4 tbsp. melted butter or margarine

Steps:

  • In a skillet cook Bacon slices till about 3/4 of the way through and remove from skillet and drain on paper towel. They will finish cooking under Broiler later.
  • Next brush each roll with melted butter and put under the broiler and toast till lightly browned. Remove.
  • Top each roll with a slice of Cheese. Then each with a Tomato slice. Top each one with two slices of the Bacon (criscross them) and return them to the broiler. Broil till Bacon finishes cooking and Cheese is well melted. Serve hot.
