1 package (12 ounces) bacon strips, chopped
1/2 cup chopped pecans
4 cups shredded sharp cheddar cheese
2 cups mayonnaise
1 small onion, chopped
2 tablespoons finely chopped sweet red pepper
1/8 teaspoon cayenne pepper
Assorted crackers

Steps:

  • Cook bacon until crisp; drain. Meanwhile, in a large bowl, combine the next 6 ingredients. Stir in bacon. Serve with crackers.

GREEN OLIVE AND CREAM CHEESE SPREAD

This is quick and easy to make and oh, so delicious! Be prepared, it disappears quickly. I had to make a second batch just to get pictures!

1 pkg (8 oz) cream cheese or neufchatel, room temperature
3 oz (about half a jar) gr olives, drained - save juice - rough chopped
2-3 oz (2-3 tbsp) saved olive juice, more or less to taste

Steps:

  • 1. Whip the cream cheese, with electric mixer, until smooth.
  • 2. Add the olive juice a tablespoon at a time, mixing well after each addition. You want the cream cheese smooth, easy to spread, but not runny, so you may not use all of the reserved juice.
  • 3. Stir in olives. If you can, allow to stand for 15-20 minutes for flavors to blend. Serve with crackers (I like triskets)

One 6-ounce can black olives, drained
One 6-ounce jar pimiento-stuffed green olives, drained
2 stalks green onions
1 stick butter, at room temperature
1/2 cup mayonnaise
12 ounces Monterey Jack cheese, grated
1 loaf crusty French bread, sliced lengthwise

Steps:

  • Preheat the oven to 325 degrees F.
  • Roughly chop both the black olives and pimiento-stuffed green olives. Slice the green onions into thin pieces.
  • Combine the butter, mayonnaise, cheese, olives and green onions in a mixing bowl. Stir together until thoroughly combined.
  • Spread the mixture onto the French bread. Bake until the cheese is melted and browning, 20 to 25 minutes.

BACON-OLIVE CHEESE BALL

My husband had to take a bacon dish to work for a luncheon, so I took my favorite cheese ball recipe and added bacon and a few other ingredients to it. It was a hit at the luncheon and was gone in a few minutes. I didn't measure the ingredients as I made the cheese ball, so I am "guesstimating" some of these ingredients. As for the seasonings, you can change them to your taste preference, but I would not recommend adding anything else with salt because of the olives and bacon that are already in the recipe.

8 ounce(s) cream cheese, room temperature
1 cup(s) salad olives with pimentos
2 or 3 dash(es) onion powder
2 or 3 dash(es) cajun seasoning
2/3 - 3/4 cup(s) real bacon pieces
2/3 - 1 cup(s) shredded cheddar cheese
1 cup(s) pecan pieces (finely chopped)

Steps:

  • In food processor, chop the olives and pimentos. Put into a bowl and set aside.
  • Place the cream cheese, onion powder and cajun seasoning into the food processor and process until creamy. Remove to a mixing bowl.
  • Add the olives, bacon pieces, and shredded cheese to the cream cheese mixture. Mix all ingredients thoroughly with a spoon. Form mixture into a ball. (It may be too soft to make the ball at this point, but do the best you can. You will be able to handle it better after the next step)
  • Wrap the "ball" in a sheet of wax paper and put into the freezer for approx 20 minutes.
  • Remove the ball from the freezer, reshape the ball and roll in pecan pieces until covered. Refrigerate in airtight container. Remove from refrigerator approx 1 hour before serving. Serve with Club, Ritz, or your favorite cracker.

I saw this recipe on Ricardo & Friends. Looks so yummy and easy to do. I guess that you can try with other olives. I will try with hot pepper stuffed olives. Note : Taste the olives the day before making the recipe. If they are too salty, soak them in cold water for up to 24 hours.

12 slices bacon
36 oil-packed almond-stuffed green olives (see note)

Steps:

  • With the rack in the middle position, preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
  • On a cutting board, cut each bacon slice crosswise into 3 equal pieces. Roll an olive in each bacon piece, securing with a toothpick. Place on the baking sheet. Bake until the bacon is nicely browned and crisp 30 to 35 minutes. Drain on paper towels. Serve in a large bowl.
  • NOTE : Taste the olives the day before making the recipe. If they are too salty, soak them in cold water for up to 24 hours.
