1 lb ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon pepper
2 teaspoons salt
¼ cup bread crumbs
3 cloves garlic, minced
½ onion, diced
⅓ cup fresh parsley, loosely packed
1 egg
1 tablespoon ketchup
1 tablespoon mustard
1 teaspoon worcestershire sauce
1 tablespoon honey
4 medium onions
8 oz cheddar cheese, cubed
16 strips bacon
1 bottle barbecue sauce

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • In a large bowl, mix the ground beef, garlic powder, onion powder, pepper, salt, bread crumbs, garlic, diced onion, parsley, egg, ketchup, mustard, Worcestershire sauce, and honey until evenly combined. Set aside in the refrigerator.
  • Cut the 4 onions vertically on cutting board. Remove the stem and root from each piece. The layers of each onion will act as "shells" to wrap around each meatball.
  • Remove the meatball mixture from the refrigerator and pinch off golf ball-sized pieces of meat. Press a small cube of cheddar cheese into the middle of each meat portion, then form into a meatball shape with your hands.
  • Wrap each meatball in 2 onion "shells", then with 2 strips of bacon, and transfer to the prepared baking sheet.
  • Brush the meatballs with barbecue sauce, covering them completely.
  • Bake for 45 minutes, brushing again with BBQ sauce halfway through, until deep brown with a nice crust on the outside.

1 tablespoon Worcestershire sauce
1 package onion soup mix
1/2 cup panko bread crumbs

1/4 cup olive oil
1 yellow onion, finely diced
2 tablespoons minced garlic
2 tablespoons freshly chopped basil leaves

2 (14-ounce) cans crushed tomatoes
2 (14-ounce) cans diced tomatoes in puree

  • Preheat the oven to 400 degrees F.
  • Arrange the bacon slices on a sheet pan. Put in the oven and bake until crisp, about 8 to 10 minutes. Remove the bacon from the pan to a cutting board and chop. Set aside.

Steps:

  • In a medium-sized bowl, mix the ground beef, onion, parsley, bread crumbs, egg, garlic, oregano, basil, salt, and pepper until combined. Set aside.
  • Preheat oven to 400°F (200°C).
  • Line two empty ice trays with bacon, overlapping each piece to cover the tray completely.
  • Press the bacon down into each round with two fingers.

240g cider vinegar
120g ketchup
55g soft brown sugar
1 tbsp Dijon mustard
1 tsp liquid smoke (see tip below)
1 tsp red chilli flakes
500g lean beef mince
1 egg
2 thick slices brown bread , blitzed into breadcrumbs
1 tsp smoked paprika
1 tsp cumin
1 tsp liquid smoke
20 mini mozzarella balls
10 slices smoked streaky bacon

Steps:

  • Put all the ingredients for the smoky BBQ sauce in a pan, add 125ml water and season well, then bring to a simmer, whisking until combined. Leave to cool.
  • In a bowl, mix together all the meatball ingredients, except the cheese and bacon, and season well. Take a walnut-sized piece of the mixture and flatten it with your hands, then wrap it gently around a mozzarella ball and roll it into a circle the size of a ping-pong ball. You should end up with 20 balls.
  • Cut each slice of bacon in half across the short side and wrap half a slice around each ball. Transfer the balls to a baking tray with the overlapping bacon edges underneath, and cook at 190C/170C fan/gas 5 for 20 mins. Brush with the BBQ sauce and return to the oven for 8-10 mins more or until nicely browned. Brush again with sauce and eat warm, with even more sauce on the side for dipping.

2 slices white bread, torn into small pieces (see NOTES)
2 tbs water
2 tbs finely chopped onion
1 tsp garlic powder
1/2 tsp salt

16 slices bacon (in UK it's streaky bacon--don't use thick cut)
8 - 1/2-inch cubes sharp cheddar cheese -OR- mozzarella

  • Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil (for easy clean up) and place a rack in the pan (I use a rack like you use to cool cookies) In a large bowl, mix the ground beef, torn bread, water, onion, garlic powder, salt, pepper and egg. Blend well. Divide meat into 8 equal portions. Form meatball around a cube of cheese. Wrap with one slice of bacon, then turn the meatball 90 degrees and wrap in another slice of bacon. Place meatballs, bacon seam-side down on the rack in the prepared pan. Bake for 30-40 minutes or until bacon is nicely browned and beginning to look crisp (the bacon won't crisp on the bottom, FYI).

1 large onion, diced
1 clove garlic, minced
Salt and freshly ground black pepper
Two 28-ounce cans chunky ground tomatoes, such as Pastene Chunky Kitchen Ready
Oil, for greasing pan
2 pounds 80-percent lean ground beef
3/4 cup breadcrumbs (made from day old Italian bread)
3/4 cup freshly grated Parmigiano-Reggiano, plus more for serving
3/4 cup fresh parsley leaves, chopped
2 or 3 cloves garlic, minced (not too fine)
2 eggs
Salt and freshly ground black pepper
1 pound bucatini pasta

Steps:

  • For the bacon sauce: Cut the bacon into pieces. Using a big saute pan or skillet that has a cover, cook over medium heat until almost crispy. Don't drain the fat. Add the onions to the pan. When the onions are almost cooked and start to become translucent, add the garlic and salt and pepper to taste. Cook for 1 to 2 minutes, and then add tomatoes and bring to a boil. Reduce the heat, cover and simmer on low for about an hour to an hour and a half.
  • For the meatballs: Preheat the oven to 425 degrees F. Grease a baking sheet. In a large bowl, combine the beef, breadcrumbs, Parmigiano-Reggiano, parsley, garlic, eggs and some salt and pepper. Form into 1- to 1 1/2-inch meatballs and place on the prepared baking sheet. Bake for 5 minutes. Then turn the oven down to 350 degrees F and bake for an additional 10 minutes. Make sure to turn every few minutes to brown on all sides.
  • Cook the bucatini according to the package directions.
  • Serve the bacon sauce over the pasta with the meatballs on the side. Garnish with freshly grated Parmigiano-Reggiano.

¾ cup ketchup
½ cup warm water
2 eggs
1 (1 ounce) package dry onion soup mix (such as Lipton®)

1 (16 ounce) package bacon slices, halved crosswise

1 pound hickory-smoked bacon
1 pound ground turkey
½ cup bread crumbs
1 egg
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a rimmed baking sheet with cooking spray.
  • Cut each slice of bacon in half, crosswise.
  • Mix together turkey, bread crumbs, egg, Worcestershire sauce, garlic powder, onion powder, pepper, and salt in a large bowl. Form mixture into 1-inch meatballs and wrap each meatball with bacon. 1 medium onion, minced
8 slices raw bacon, diced
2 lbs ground beef
6 ounces cheddar cheese, grated
1/2 cup breadcrumbs
3 eggs, lightly beaten

Steps:

  • Preheat oven to 450. Brush 13x9 pan with 1 tablespoons Olive Oil.
  • 1) Heat 1 tablespoons Olive Oil in large skillet at medium heat. Add onions and bacon, saute, stir often until golden brown, approximately 10 minutes.

1 cup ruby port
4 shallots, sliced
2 bay leaves
4 sprigs thyme
10 black peppercorns
2 slices bacon
4 cups low-sodium chicken broth
2 tablespoons unsalted butter, at room temperature
2 tablespoons all-purpose flour
3 tablespoons heavy cream
Kosher salt
For the meatballs:
6 slices bacon, chopped
1/2 onion, roughly chopped
1 1/2 pounds ground beef sirloin
1/2 cup breadcrumbs
1/2 cup chopped fresh parsley
1 large egg, lightly beaten
3 cloves garlic, minced
2 tablespoons dijon mustard
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil Chopped fresh chives, for topping

Steps:

  • Make the sauce: Combine the red wine, port, shallots, bay leaves, thyme, peppercorns and bacon in a medium saucepan. Bring to a simmer over medium-high heat, reduce the heat to medium and cook until reduced by one-third, about 30 minutes. Add the chicken broth and continue cooking until reduced by half, about 40 more minutes (you should have about 2 cups liquid). Strain into a clean saucepan.
  • Mix the butter and flour in a bowl to form a paste. Whisk the paste into the sauce and simmer over medium heat, whisking, until slightly thickened, about 10 minutes. Whisk in the heavy cream and season with salt. Set aside.
  • Meanwhile, make the meatballs: Pulse the bacon and onion in a food processor until finely chopped. Transfer to a bowl and add the beef, breadcrumbs, parsley, egg, garlic, mustard, Worcestershire sauce, 3/4 teaspoon salt and 1/2 teaspoon pepper; mix until just combined. Dampen your hands and form into about 48 meatballs, 1 inch each.
  • Heat the vegetable oil in a large nonstick skillet over medium heat. Working in batches, add the meatballs to the skillet and cook, turning, until browned and cooked through, 5 to 7 minutes. Drain on a paper towel-lined plate.
  • Wipe out the skillet, add the sauce and the meatballs, and cook over medium heat until the sauce is simmering and the meatballs are heated through, about 2 minutes. (Add 1 to 2 tablespoons water if the sauce is too thick.) Top with chives.
