2 large eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 medium onion, chopped

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf in an ungreased 13x9-in. baking dish. Top with bacon., Bake, uncovered, at 350° for 70-80 minutes or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before cutting.

1/2 cup 2% milk

Steps:

  • In a small skillet, saute onion and garlic in oil for 4-5 minutes or until tender., Meanwhile, in a large bowl, combine the milk, eggs, Worcestershire sauce, Dijon, pepper sauce, saltine, parsley and seasonings; stir in onion mixture. Crumble meats over mixture and mix well. With wet hands, shape into a loaf and place in a greased foil-lined 13-in.x 9-in. baking dish., In a small saucepan, combine the sauce ingredients; cook and stir until the sugar is dissolved and sauce has thickened. Spoon some sauce over loaf; place bacon over top., Bake, uncovered, at 350° for 50-55 minutes or until no pink remains and a thermometer reads 160°.

1 large onion, chopped (1 cup)
4 cloves garlic, finely chopped
1 tablespoon Muir Glen™ organic tomato paste
1 lb lean ground turkey
1 box (9 oz) Green Giant™ frozen chopped spinach, thawed, squeezed to drain
1 slice uncooked bacon, chopped
1/4 cup fat-free (skim) milk
1/2 cup Progresso™ panko crispy bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 egg
1 egg white
2 tablespoons packed brown sugar
1 tablespoon lemon juice
1 can (28 oz) Muir Glen™ organic whole peeled tomatoes
2 teaspoons grated lemon peel
1/4 teaspoon crushed red pepper flakes

Steps:

  • Heat oven to 350°F. In small bowl, place 1/2 cup of the onion and half of the garlic; reserve for jam. Spray 8-inch skillet with cooking spray; heat over medium-high heat. Add remaining onion to skillet; cook 3 minutes, stirring frequently, until tender. Reduce heat to low; add tomato paste. Cook 2 minutes, stirring occasionally. Remove from heat; stir in remaining garlic.
  • Spray broiler pan with rack with cooking spray. In large bowl, mix onion mixture and all remaining meat loaf ingredients. Shape into 8x5-inch loaf on rack in broiler pan. Bake 1 hour or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes.
  • Meanwhile, make jam. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Add reserved onion and garlic to skillet; cook 3 minutes, stirring frequently, until golden. Add brown sugar and lemon juice, stirring to loosen browned particles from bottom of skillet. Stir in remaining jam ingredients; break up tomatoes with spoon. Heat to boiling; reduce heat. Simmer uncovered 20 minutes, stirring occasionally, until mixture begins to thicken. Strain jam though fine strainer; discard liquid.
  • To serve, cut loaf into 8 slices; top each slice with about 3 tablespoons warm jam.

2 1/2 lb ground beef chuck
1 large red bell pepper, chopped
1 large vidalia onion, chopped
3 medium jalapeno peppers, chopped
6 clove garlic, chopped
2 pkg dry ranch dressing mix, (i used a aldi's brand)
3/4 c coconut flour
1 c fancy shredded parmesan cheese
1 c grated parmesan cheese
3/4 c mozzarella cheese
1 can(s) petite diced tomatoes, well drained
3 large eggs , room temperature
3/4 c evaporated milk
1 Tbsp ground cumin
2 tsp coarse ground black pepper
2-4 slice thick sliced bacon, cut in half, i only had 2 slices
1 jar(s) ragu traditional spaghetti sauce 24 oz, or sauce of your choice
6 large poblano peppers, cut in half
3/4 c no sugar added catsup or bbq sauce i used my homemade version

Steps:

  • 1. Preheat oven to 375 degrees F. These are some of the main ingredients I used.
  • 2. Cut the onions, peppers & garlic and process in food processor or by hand to desired size.
  • 3. Using a very large bowl, add in the ground beef.
  • 4. Next add in the chopped veggies & dry ranch dressing & mix together to blend.
  • 5. Now add in both parmesan cheeses, catsup or BBQ sauce & stir to mix together.
  • 6. Drain diced tomatoes throughly before adding to meat mixture.
  • 7. Measure out the coconut flour and add to meat mixture along with the spices & evaporated milk and mix until mixture holds together. NOTE: COCONUT FLOUR HELPS TO KEEP THE MEAT MIXTURE TOGETHER.
  • 8. Wash & prep poblano peppers, cut in half, spray a large casserole dish with non stick cooking spray, and add in the pepper halves. I needed to use 2 dishes.
  • 9. Shape Meat mixture to fill each poblano pepper half. Then repeat until all are filled.
  • 10. Top each half with a half strip of bacon. I pre cooked mine in the microwave for a couple of minutes to remove some of the fat. Then pour sauce in bottom of dish around peppers. If you are making two dishes as I did, then reserve half of the sauce for the other casserole dish.
  • 11. Now cover each dish with a lid or tightly with aluminum foil. Then place in preheated 375 degrees F. oven & bake for 50 minutes.
  • 12. Remove lid or cover after 50 minutes, then top each portion with shredded mozzarella cheese. Return to oven for 10 to 15 minutes or until cheese melts.
  • 13. Remove from oven allow to sit for a few minutes before serving with some of the added sauce if desired. 2 pounds ground beef
2 eggs
2 tablespoons ketchup
1 cup dry bread crumbs
1 tablespoon Parmesan cheese
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon ground black pepper
1 small yellow onion, diced
6 slices bacon
8 ounces sharp Cheddar cheese, cut into quarters
1 tablespoon ketchup

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
  • Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.

3 small red onions (1 coarsely grated and 2 cut into wedges)

1 large egg
3/4 cup grated Gruyere or Cheddar (3 oz)
Kosher salt and pepper
1 1/4 lbs. carrots, cut into 3-inch lengths and halved lengthwise if large
2 tbl oil

Steps:

  • Heat oven to 400. In a medium bowl, combine the beef, bread crumbs, ketchup, grated onion, bacon, garlic, egg, 1/2 cup of the gruyere, 1/2 tsp. salt and 1/4 tsp pepper. Transfer the mixture to an 8-4 inch loaf pan and sprinkle with the remaining 1/4 cup cheese. Meanwhile, on large rimmed baking sheet, toss the onion wedges and carrots with the oil, 1/2 tsp salt and 1/4 tsp. pepper. Roast the meat loaf until cooked through 40-45 minutes. Pour off any accumulated fat and let rest 10 minutes before slicing. At same time roast the vegetables, tossing once, until tender, 35-40 minutes. slice loaf and serve with vegetables and addl. ketchup.

Steps:

  • MIX glaze ingredients in a small bowl; set aside.
  • COOK bacon and drain on paper towels; set aside.
  • PREHEAT oven to 350 F degrees. Saute onion and garlic in oil until softened, about 5 minutes; set aside to cool.
  • MIX eggs with thyme, salt, pepper, mustard, Worcestershire, steak sauce, hot pepper sauce, and milk. Add egg mixture to meat in a large bowl, along with crackers or bread crumbs, parsley and cooked onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. *If mixture does stick, add additional mil a couple tablespoons at a time and continue mixing until mixture stops sticking.
  • COVER a wire rack with foil, prick foil in several places with a fork. Place rack on a shallow roasting pan lined with foil for easy cleanup.
  • TURN meat mixture onto prepared rack and with wet hands form mixture into a loaf approximately 9 X 5 inches.
  • BAKE loaf for 35 minutes; remove from oven. Top loaf evenly with glaze mixture. Add bacon crosswise, over loaf, overlapping them slightly. Return to oven for 5-10 minutes or until bacon is crispy and glaze is bubbly.
  • REMOVE from oven and top with grated cheese. Return to oven for final time until cheese is melted and beginning to brown. Approximately 5 minutes.
  • Let cool 20 minutes. Slice and serve.

1/2 cup chili sauce
2 eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 medium onion, chopped
1 cup (4 ounces) shredded cheddar
cheese
2/3 cup dry bread crumbs

1/4 teaspoon pepper
2 pounds lean ground beef
2 bacon strips, halved

Steps:

  • 1. In a bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf in an ungreased 13-in. x 9-in. baking dish. Top with bacon. 2. Bake, uncovered, at 350° for 70-80 minutes or until meat is no longer pink and a meat thermometer reads 160°. Drain; let stand for 10 minutes before cutting.

2 lbs lean ground beef
3/4 cup old fashioned oats
1 cup diced yellow onion
2 garlic cloves, minced
2 eggs
1/2 cup ketchup
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 slices bacon

Steps:

  • Preheat oven to 400°.
  • Mix the beef, oats, onion, garlic, eggs, ketchup, Worcestershire sauce, salt, and pepper in a large mixing bowl.
  • Using your hands is the easiest and fastest way to mix.
  • Pack the beef mixture into a 4 1/2 x 8 1/2 inch loaf pan.
  • Cut the bacon slices into 4-inch pieces so they will fit on top of the meat loaf without hanging over.
  • Place the loaf pan on a rimmed baking sheet.
  • Bake for 60 minutes or until a meat thermometer reads 160°.
