10 slices Dietz & Watson Gourmet Smoked Bacon
1 (8 ounce) package cream cheese, room temperature
½ cup unsalted butter, melted
1 cup sour cream
¼ cup minced chives
2 ½ cups Dietz & Watson Roasted Garlic Cheddar Cheese, grated
2 teaspoons kosher salt

Steps:

  • Preheat oven to 350 degrees F. Peel potatoes, and cut into 1 inch chunks. Place in a large saucepan, (remove comma) and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until tender, about 20 minutes. Drain potatoes, return to pan, cover, and set aside.
  • Meanwhile, heat a large skillet over medium heat. Add bacon, and cook until crisp and browned, turning once. Transfer to paper towels to drain; let cool, and crumble into pieces.
  • Using a fork, mash the potatoes in pan until light and fluffy. Add the cream cheese, butter, and sour cream, and stir until combined and smooth. Add the chives, 2 cups cheddar cheese, half the bacon, salt, and pepper. Stir until well combined.
  • Transfer to a buttered 3 quart baking dish. Top with remaining 1/2 cup cheddar cheese. Bake until top is slightly golden and potatoes are heated through, about 30 minutes. Remove from oven; garnish with remaining bacon. Serve immediately.

¾ pound bacon, cut into 1 inch pieces
1 cup crumbled feta cheese
3 tablespoons sour cream
⅛ tablespoon dried oregano
⅛ teaspoon ground black pepper
3 (4 ounce) skinless, boneless chicken breast halves
1 cup all-purpose flour
2 eggs, beaten
1 cup dry bread crumbs
4 potatoes, peeled and cubed
1 sweet onion (such as Vidalia®), chopped
2 tablespoons butter
3 tablespoons sour cream

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned but still soft. Reserve the bacon grease in the skillet, and cool the bacon slices on a paper towel-lined plate. Once cool, mix the bacon together with the feta cheese, 3 tablespoons of sour cream, oregano, and black pepper in a small bowl; set aside.
  • Lay a chicken breast flat onto your work surface. Use the tip of a sharp boning or paring knife to cut a 2-inch pocket in the chicken breast. Repeat with the remaining chicken breasts. Spoon the bacon mixture into the pockets. Pour the flour, egg, and bread crumbs into separate, shallow dishes. Gently press the chicken breasts into the flour to coat. Dip each into the beaten egg, then press into bread crumbs.
  • Reheat the bacon grease over medium heat. Brown the chicken breasts on both sides in the hot fat, about 2 minutes per side. Reserve the bacon grease in the pan. Place the breasts on a baking dish, and bake in the preheated oven until the chicken is no longer pink and the filling is hot, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Meanwhile, place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain.
  • While the potatoes are boiling, cook the onion in the remaining bacon grease over medium heat until very tender and golden brown, about 10 minutes. Once the potatoes are done, mash together with the onion, butter, and remaining 3 tablespoons of sour cream. Serve the chicken breasts accompanied by the mashed potatoes.

4 medium or 3 large russet potatoes
4 large cloves of garlic
Salt
1/4 cup milk or chicken stock
8 ounces ripe Brie or Camembert
White pepper or finely ground black pepper, to taste
4 pieces boneless, skinless chicken breasts
Salt and pepper
2 tablespoons EVOO
2 tablespoons butter
1 large or 2 medium shallots
2 cloves garlic
1 cup white wine
1 cup chicken stock or bone broth
About 1/3 cup creme fraiche or 1/2 cup heavy cream
2 tablespoons Dijon mustard
1/2 lemon
About 1/4 cup stemmed fresh tarragon
About 1 tablespoon olive oil
1 large bundle rainbow chard
6 slices meaty bacon
1 leek, trimmed
Salt and pepper
A little freshly grated nutmeg, to taste
1/2 lemon

Steps:

  • For the mashed potatoes: Peel potatoes and cube into uniform pieces, 8 per potato. Smash two cloves of garlic. Place potatoes and smashed garlic in saucepot, cover with water, cover pot and bring to boil. Season with salt and cook to tender, removing lid once potatoes boil. Return the potatoes and garlic to hot pot after draining, then add milk or stock and cheese and mash. Season with pepper of choice, then keep covered.
  • For the Dijon-tarragon chicken: While potatoes are coming to a boil, remove tenders from chicken and pound the breasts (if they are large) 1/2 inch thick, then cut each into 3 pieces. Season chicken breasts and tenders with salt and pepper.
  • Heat a large cast-iron skillet over medium-high heat with EVOO and melt butter into oil. When it foams, add chicken and brown on both sides, 6 to 7 minutes.
  • Peel and chop shallot and chop or grate garlic.
  • Remove chicken to a plate, add shallots and garlic and stir a minute or so. Add wine and reduce to 1/4 cup, then add stock and bring to boil. Add creme fraiche or heavy cream and simmer at low rolling boil 2 to 3 minutes, then add Dijon and juice of 1/2 lemon. Chop and add tarragon, slide chicken back into pan and leave on warm or cover pan.
  • For the chard with bacon and leeks: While chicken is working, heat a large nonstick skillet over medium-high heat with 1 tablespoon of olive oil, 1 turn of the pan. Stem chard and chop stems; shred the greens. Chop and add bacon to the pan and brown to crisp, 4 minutes. Quarter leek and trim root, then chop; add chard stems and leek to bacon, stir 2 minutes, then wilt in chard greens. Season with salt and pepper and nutmeg to taste, then add juice of 1/2 lemon.
  • Serve chicken alongside mashed potatoes and greens with bacon.

6 1/2 ounces wild mushrooms

1 shallot, minced

3/4 cup red wine

1 small head garlic, roasted and mashed
1 1/2 ounces butter
3 1/2 ounces bacon, cooked and chopped fine
1/2 cup milk, hot
1/4 pound asparagus, peeled and blanched
1/4 pound snow peas, trimmed and blanched
1/4 pound bok choy, blanched
1/4 pound string beans, trimmed and blanched
Butter, for sauteing

Steps:

  • Caribou Loin and Sauce: Preheat oven to 350 degrees F.
  • Put 2 1/2 ounces of butter and 1 tablespoon of vegetable oil in a large saute pan and heat. Season the caribou with salt and pepper. Sear caribou over low heat. Remove the meat from the pan, add the wild mushrooms and shallots. After searing the meat, put it in a pan and cook in the oven for 15 minutes. It is very important that you served this meat rare or medium rare.
  • Deglaze the pan with the red wine. Add the veal stock and the currant jelly. Reduce the mixture by half. Add salt and pepper, to taste.
  • Potatoes: Bring a large pot of salted water to a boil. Peel the potatoes and boil for 20 to 25 minutes. Drain the potatoes and mash. Place back in the pot with 1-1/2 ounce of butter, the mashed roasted garlic, the roasted bacon and the hot milk.
  • Vegetables: Working in batches, in a large saute pan over high heat, melt butter and toss to heat vegetable through. Season with salt and pepper.
  • Dressing of the plate: In a plate, place a quenelle of mashed potato, the blanched vegetables on the side and then the meat. Pour the sauce on the meat.

2 tablespoons extra-virgin olive oil, divided

3 pounds russet potatoes, peeled
8 ounces bacon, cut into a small dice
3 cups half-and-half, or less, to taste

  • Roasted garlic: Preheat oven to 350 degrees F. Slice off the top of the garlic head to expose the cloves; place in center of a sheet of foil. Drizzle 1 tablespoon olive oil over the top and season generously with salt. Wrap in foil and bake in the oven until golden and tender, about 1 hour.
  • Potatoes: Cut peeled potatoes into ½-inch dice. (Note: Potatoes can be peeled and diced 1 day in advance. Store completely submerged in cold water in the refrigerator, changing the water every few hours to prevent browning.) Place diced potatoes into a pot filled with cold salted water (as "salty as the sea"). Bring to a boil over high heat, 6-8 minutes. Once boiling, reduce to a simmer and cook until fork tender, 15-20 minutes.
  • Bacon bits: In a large saucepan over medium heat, cook the bacon until crisp and browned, about 10 minutes. Use a slotted spoon to transfer bacon bits to a paper towel-lined plate. Reserve the bacon fat in a small bowl and set aside.
  • Return the pan to stove over low heat, and add just enough half-and-half to coat the bottom of the pan. Use a wooden spatula to deglaze the pan, scraping up all the browned bits (or "fond"). When small bubbles form around the edges of the pan, add the rest of the half-and-half. Stir until warmed through, then remove from heat.
  • Potatoes are done cooking when you can easily cut a piece in half with a fork. Drain potatoes in a colander, then add back to the pot. Turn heat to medium-low and let them dry, uncovered, stirring occasionally, 1-2 minutes. When the bottom of the pot is dry, turn off the heat: they are ready for the potato ricer. Transfer potatoes to a large bowl. Work all the potatoes through the ricer and back into the pot. Fold in half of the warm half-and-half and gently stir to combine; avoid overmixing the potatoes, which could lead to a gluey texture. Add another ½ cup of half-and-half, and stir again. Drizzle with 2 tablespoons reserved bacon fat, and stir to combine. Add more half-and-half as needed to reach desired consistency. Then season to taste with salt and pepper (keeping in mind that the bacon bits will also add salt).
  • Squeeze roasted garlic out of its skin into a small bowl, and use a fork to mash it into a paste. Add 1 tablespoon olive oil to thin out the paste and continue mashing. Fold the garlic paste into the potatoes and stir to distribute evenly; then add half the bacon bits and gently stir to incorporate. Season to taste with salt and pepper. Transfer to a warmed serving bowl, garnish with remaining bacon bits, and serve immediately.

4 heads garlic

1/2 pound bacon, cooked and crumbled

Steps:

  • Put the potatoes in a saucepan; cover with cold water and add 2 tablespoons kosher salt. Bring to a simmer over medium-low to medium heat and cook, uncovered, until tender, about 45 minutes. Drain the potatoes and let sit until just cool enough to handle, then peel and transfer to a bowl.

2-1/2 pounds small red potatoes, scrubbed
4 ounces cream cheese, softened
1/2 cup butter, cubed
1/2 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 pound Stilton cheese, crumbled
6 bacon strips, cooked and crumbled
3 tablespoons minced fresh parsley, divided

Steps:

  • Preheat oven to 425°. Place garlic on a double thickness of heavy-duty foil. Drizzle with oil. Wrap foil around garlic. Bake for 15-20 minutes or until softened. Cool for 10-15 minutes., Meanwhile, place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain; transfer to a large bowl., Squeeze softened garlic into potatoes. Add the cream cheese, butter, milk, salt and pepper. Mash until potatoes are desired consistency and ingredients are combined. Stir in the Stilton cheese, bacon and 2 tablespoons parsley. Just before serving, sprinkle with remaining parsley and, if desired, additional crumbled blue cheese and bacon.

1 stick (8 tablespoons) cold unsalted butter, cubed
1 cup Three's BBQ Dry Rub, recipe follows
Three 2 1/2- to 3-pound whole chickens
1 lemon, quartered
Peels from 2 oranges, cut into 1/2-inch-thick slices
2 cups Orange-Hoisin Glaze, recipe follows
Wok-Fried Bacon Brussels Sprouts, recipe follows, for serving
Horseradish Mashed Potatoes, recipe follows, for serving
1 cup chili powder
1/2 cup brown sugar
2 tablespoons celery salt
2 tablespoons ground cinnamon
2 tablespoons ground coriander
2 tablespoons Chinese five-spice powder
2 tablespoons dried oregano
1 tablespoon red chile flakes
1 tablespoon yellow curry powder
1 tablespoon garlic powder
1 tablespoon ground nutmeg
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, cubed
1 cup brown sugar
2 cups orange juice
10 ounces hoisin
2 cloves garlic, smashed
1 medium white onion, thinly sliced
1 orange, rind peeled (no white pith) and juiced
1 lemon, rind peeled (no white pith) and juiced
1 lime, rind peeled (no white pith) and juiced
1 stalk lemongrass, cut down the middle and bruised using the back of a knife
1 small jalapeno, sliced
1 thumb-size piece fresh ginger, sliced
2 cups canola oil
2 cups brussels sprouts, halved
1 tablespoon bacon fat
1 tablespoon cooked bacon, roughly chopped
1 teaspoon minced ginger
1 clove garlic, minced
1/2 small carrot, thinly sliced or small-diced
1 tablespoon reduced balsamic
1 tablespoon store-bought kimchee
1 tablespoon thinly sliced Thai basil
2 tablespoons freshly grated Parmesan
4 large russet potatoes, peeled and cut into quarters
1 cup heavy whipping cream
2 cloves garlic, smashed
1 sprig rosemary
1 sprig thyme
2 tablespoons creme fraiche or sour cream
2 tablespoons unsalted butter
1 teaspoon horseradish
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F. Pour half the contents of each beer can into a shallow roasting pan, then set the cans upright in the pan.
  • In a medium bowl, toss the butter with the Three's BBQ Dry Rub and set aside. Rinse the chickens and pat dry. Generously rub chickens inside and out with the seasoned butter, being sure to stuff some butter under the skin as well. Put one lemon quarter in each cavity and then slide the chickens over the beer cans. Add the orange peels to the pan. Roast for 1 hour.
  • Pull the pan from the oven and generously ladle the Orange-Hoisin Glaze over the chickens. Return to the oven and cook until the glaze has caramelized and turned a dark golden amber, about 25 minutes. When done, the internal temperature of the thigh meat should register 160 degrees F. Let the chickens rest, lightly tented with foil, for about 15 minutes. Carefully cut out the back bone of each chicken and cut the breast down the center.
  • Serve a half-chicken per person, with Wok-Fried Bacon Brussels Sprouts and Horseradish Mashed Potatoes on the side. Strain the pan drippings and ladle over the chicken prior to serving.
  • In a bowl, mix together the chili powder, brown sugar, celery salt, cinnamon, coriander, five-spice powder, oregano, garlic, chile flakes, curry powder, nutmeg, 4 tablespoons kosher salt and 2 tablespoons black pepper. Store in a sealed container.
  • In a medium saucepot over medium-high heat, melt the butter and brown sugar together. Add the orange juice, hoisin, garlic, onions, orange rind and juice, lemon rind and juice, lime rind and juice, lemongrass, jalapeno and ginger. Bring to a boil, then reduce the heat and simmer for about 20 minutes.
  • In a deep saucepot, heat the oil to 350 degrees F. Fry the brussels sprouts until the edges start to turn golden brown, about 2 minutes. Remove with a spider and drain on paper towels.
  • In a medium wok or saute pan over medium-high heat, add the bacon fat and bacon. Then add the ginger, garlic, carrots and fried brussels sprouts; stir-fry for about 3 minutes. Add the balsamic and kimchee and cook, tossing, until everything is evenly glazed. Turn off the heat and add the basil. Divide into 4 portions and garnish with Parmesan.
  • Fill a large pot with 1 gallon of water. Add the potatoes and bring to a boil. Reduce to a rolling simmer (medium-low heat) and cook until the potatoes are fork tender, about 30 minutes.
  • Meanwhile, combine the whipping cream, garlic, rosemary and thyme and in a small saucepan. Bring to a simmer and cook until the cream is infused, about 10 minutes. Strain and keep warm.
  • Drain the potatoes when they are done and return them to the pot over low heat. Using a potato masher, mash in the infused cream, creme fraiche, butter, horseradish, 1 tablespoon salt and 1 teaspoon pepper until just combined.

I got this recipe out of the Martha Stewart Living Annual Recipes 2003 book. It's very tasty, and good enough for a week night side, or even good enough for a dinner party.

5 lbs russet potatoes or 5 lbs yukon gold potatoes
8 ounces bacon (About 10 Slices)
1 (8 ounce) package cream cheese, room temperature
1/2 cup unsalted butter, melted,plus
more unsalted butter, for baking dish
1 cup sour cream
1 small onion, grated on the large holes of a box grater,juice reserved
1/2 bunch fresh chives, finely chopped (About 1/4 Cup)
2 1/2 cups grated cheddar cheese (About 10 Ounces)
2 teaspoons coarse salt
1/2 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 350°F Peel potatoes, and cut into 1-inch chunks.
  • Place in a large saucepan, and add enough cold water to cover by about 2 inches.
  • Bring to a boil over medium-high heat, and reduce to a simmer.
  • Cook until easily pierced with a paring knife, about 20 minutes.
  • Transfer to a colander to drain; return to pan, cover, and set aside.
  • Meanwhile, heat a large skillet over medium heat.
  • Add bacon, and cook until crisp and browned, turning once.
  • Transfer to paper towels; let cool, and crumble.
  • Using a fork, mash potatoes in pan until light and fluffy; add cream cheese, butter, and sour cream, and stir until combined and smooth.
  • Add the onion and any onion juice, chives, 2 cups cheese, half the bacon, salt, and pepper.
  • Stir until well combined.
  • Transfer to a buttered 3-quart baking dish.
  • Top with remaining 1/2 cup cheese.
  • Bake until top is slightly golden and potatoes are heated through, about 30 minutes.
  • Remove from oven; garnish with remaining bacon.
  • Serve immediately.

1 clove garlic, minced

  • Place the cubed potatoes in a pot with enough salted water to cover. Bring to a boil, and cook until tender, about 30 minutes; drain. Add butter to drained potatoes to melt; set aside.
  • While the potatoes are cooking, place bacon in a large, deep skillet. Cook over medium high heat until very crisp, about 5 minutes. Remove bacon to paper towels to drain; allow to cool and crumble. Leave 2 tablespoons bacon drippings in skillet and return it to the heat.
  • Cook the onion and garlic in the bacon drippings until tender, about 4 minutes. Stir in the rosemary and cook for 1 minute more.

  • Cook potatoes in boiling water in large saucepan 15 to 20 min. or until tender.

This is a recipe that was inspired by an Emeril recipe but it is all original it is very good. It is an awesome take on normal mashed potatoes. The bacon it it gives it good crunch and flavor. And all the butter helps too.

5 -6 lbs red potatoes
1/2 cup butter
6 garlic cloves
1 tablespoon extra virgin olive oil (Extra Virgin Olive Oil)
1/3 cup of finely chopped chives
1/2 cup sour cream
1/4 cup milk
1/2 cup cooked bacon, chopped
2 tablespoons kosher salt, divided (to taste)
1 tablespoon black pepper (to taste)

Steps:

  • Cut potatoes in fourths and cut off all black spots.
  • Put in large pot with cold water and add 2 cloves of garlic, slightly crushed, on stove on high.
  • When water boils add 1 tbs of salt; cook till when poked with knife it easily comes out.
  • Mince and sauté remaining garlic with EVOO till brown and caramelized.
  • Drain potatoes and remove garlic cloves.
  • Mash and add sautéed garlic and remaining ingredients.
