This dish is everything you love about a BLT sandwich in pasta form! This pasta salad recipe is perfect for BBQs, potlucks, and summer parties.

1 12-oz. package bacon
1 16-oz. box fusilli or curly pasta
1 c. mayonnaise
3/4 c. whole milk
1 1-oz. packet ranch seasoning mix
Juice of one lemon
1/4 c. grated parmesan cheese
1/2 tsp. ground black pepper
1 pint grape tomatoes, halved
2 c. thinly sliced romaine lettuce
1/2 c. chopped red onion
1/4 c. chopped fresh herbs, such as dill and/or parsley

Steps:

  • Cook the bacon in a large skillet over medium heat, turning as needed, until the fat has rendered and the bacon is golden and crispy, 8 to 10 minutes. (You may need to cook the bacon in two batches, draining the rendered fat from the skillet between batches.) Let the bacon cool to room temperature, then crumble up into bite-sized pieces.
  • Cook the pasta according to package directions. Drain, rinse with cold water, and let cool.
  • Meanwhile, in a large bowl, whisk together the mayonnaise, milk, ranch seasoning, lemon juice, parmesan cheese, and black pepper. Add the pasta, tomatoes, lettuce, onion, herbs and half of the crumbled bacon to the bowl with the dressing. Gently fold together to coat. Top with remaining bacon and serve.

10 slices bacon, finely chopped
1/3 cup olive oil
Kosher salt and finely ground black pepper
2 tablespoons white wine vinegar
1 small shallot, minced
8 ounces dried orecchiette
2 cups loosely packed arugula
1 cup torn fresh basil leaves
3 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the bacon in a large, cold skillet then cook over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain. Set aside.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the arugula, basil and tomatoes to the bowl and toss to combine. Season with salt and pepper and top with the bacon. The pasta salad is best if served right away.

3 tablespoons chili sauce
2 tablespoons lemon juice
1 teaspoon sugar
3 cups cooked elbow macaroni

4 bacon strips, cooked and crumbled

Steps:

1/4 cup sour cream
1/2 cup mayo
2 garlic cloves (minced)
3 Tbsp lemon juice (freshly squeezed)

24 strips (cut 1/4 inch thick) bacon, (1 pound)
2 1/2 bunches lettuce, such as romaine, Bibb, or green oakleaf
1 cup Avocado Dressing for BLT Salad
2 pounds tomatoes, preferably red and yellow
1 pint cherry tomatoes
Salt and freshly ground black pepper

Steps:

  • Heat oven to 350 degrees. Arrange bacon strips on a wire rack set over a baking pan. Place pan in oven until bacon is golden brown and crisp, about 40 minutes. Remove from oven, being careful of the bacon fat that has collected under the rack, and set aside.
  • Arrange lettuce in the bottom of a salad bowl; drizzle with half the avocado dressing. Cut tomatoes into 1/4-inch-thick slices; cut cherry tomatoes, depending on size, in half. Arrange tomato slices over lettuce; scatter cherry tomatoes over tomato slices.
  • Arrange whole bacon strips over tomatoes. Drizzle with remaining avocado dressing, season with salt and pepper to taste, and serve immediately.

8 slices bacon, fried and crumbled
1/4 cup onion, finely diced
1/4 cup celery, chopped
1/2 cup cucumber, finely chopped
1/2 cup tomatoes, chopped
1/3 cup mayonnaise
1 tablespoon balsamic vinegar

Steps:

  • Mix cooked macaroni, bacon, onion, celery, cucumber and tomato.
  • Toss with mayonnaise.
  • Add balsamic vinegar. Toss to coat.
  • You could mix the mayo and vinegar first, then put it on , it would ensure even distribution of the vinegar I guess! :).
