The basic classic: bacon, lettuce, and tomato -- nothing fancy, just delicious. (I personally use fake vegetarian bacon these days, and it's still really good!)

Steps:
- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

How can you beat this?? All the perfect ingredients are between two slices of lightly toasted bread...the juicy height-of-summer red tomatoes, the crunchy green lettuce leaves, the creamy mayo binding it all together, and, best of all, the incomparable meaty, smoky, salty-sweet flavor of the bacon. It doesn't get get better than this!!!!

Steps:
- In a small bowl, mix the chives (or scallions) with the mayonnaise.
- Cook the bacon in a large skillet over medium heat, keeping the slices separate as they cook, until golden brown, about 10 minutes. Remove the bacon from pan with tongs and place on a paper-towel covered plate to drain.
- Spread one side of all slices of the toast with the mayonnaise. Layer 4 slices of the toast with tomatoes and bacon and grind black pepper over the top, add a lettuce leaf, close the sandwiches with remaining slices of toast, cut in half diagonally, and serve.

BACON, LETTUCE, AND CANTALOUPE SANDWICHES

- Preheat oven to 425°F.
- In a shallow baking pan cook bacon in one layer in middle of oven, turning occasionally, until golden and crisp, 16 to 18 minutes, and transfer to paper towels to drain.
- In a small bowl whisk together mayonnaise, mustard, lemon juice, and honey until smooth.
- Seed cantaloupe. Cut melon into 12 slices and discard rind. Cut out and discard lettuce ribs.
- Spread mayonnaise mixture on all 8 slices of bread. Stack lettuce, melon, and bacon on 4 of the slices and top with remaining 4 slices, gently pressing them together.
