CARAMELIZED ONION PIZZA WITH GORGONZOLA, BACON AND ARUGULA
One of my new favorites is pizza topped with fresh arugula. My favorite is plain cheese pizza with arugula on top, but this is a VERY close second. A wonderful combination! NOTE: Bacon and Onions can be prepared ahead of time.

Steps:
- Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving 2 teaspoons drippings. Set bacon aside.
- Add oil to bacon drippings in skillet over medium-high heat. Add onion, and sauté 5 minutes, stirring frequently.
- Stir in 1 teaspoon rosemary, salt, and pepper. Continue cooking 15 to 20 minutes or until onion is a deep golden brown, stirring frequently.
- Preheat oven to 400°.
- Place pizza crust on 12-inch pizza pan. Top with onion. Add cheese and walnuts; bake 7-10 minutes or until cheese melts.
- Remove from oven; top with 1 teaspoon rosemary, reserved bacon and arugula.

BACON GORGONZOLA AND HONEY APPETIZER
There is just something about sweet and savory together that makes this appetizer amazing.

Steps:
- 1. Bake sliced french bread at 350 until lightly crisped.
- 2. Top with gorgonzola and bacon. Bake until gorgonzola begins to melt.
- 3. Drizzle with honey and enjoy!
BACON JAM
Steps:
- Add the bacon to a skillet over medium heat. Cook the bacon until it's just starting to brown slightly and render its fat, 3 to 4 minutes. Add in the chopped onions and stir to combine. Cook, stirring occasionally, until the onions are soft and almost melting into the bacon fat, 30 to 40 minutes. If the pan starts to look dry or is browning too much, add a splash of water to deglaze.
- Stir in the brown sugar, cayenne pepper and grated garlic, then add the balsamic vinegar. Cook until the sugar dissolves and the mixture is thick, about 5 minutes. Turn off the heat.
- Transfer the mixture to a food processor. Pulse until the bacon is chopped slightly finer, 5 to 6 pulses.
- To serve, top the toast with the bacon jam and garnish with chopped chives.
BACON JAM AND GORGONZOLA APPETIZER
This is a very decadent delicious appetizer. It easy to make but has a very impressive presentation. I hope you give this one a try.

- Slice bread very thin. Bake at 350 degrees 5 minutes until just crisp.
- Spread bacon jam over the french bread rounds. Top with a little gorgonzola cheese. A little goes a long way.
- Place back in oven and bake until gorgonzola is melted.
