Number Of Ingredients 8

6 slices OSCAR MAYER Bacon, chopped
1-1/4 lb. Yukon gold potatoes (about 5), peeled, cubed and cooked (about 2 cups)
1 cup frozen corn
1 cup sliced onions
2 jalapeño peppers, seeded, sliced
1 clove garlic, minced
1 pkg. (8 oz.) KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
8 cups tortilla chips (8 oz.)

Steps:

  • Heat oven to 350ºF.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 tsp. drippings from skillet. Add potatoes, corn, onions, peppers and garlic to reserved drippings; cook 8 to 10 min. or until heated through, stirring occasionally.
  • Reserve 2 Tbsp. bacon for later use. Stir remaining bacon into potato mixture; spoon into 9-inch pie plate. Top with cheese.
  • Bake 12 to 15 min. or until heated through. Top with reserved bacon. Serve with chips.

•6 rashers bacon, diced
•2 jalapeno peppers, halved, seeded and thinly sliced
•1 tbsp flour
•1 bottle Corona (or other Mexican-style lager)
•2 cups grated sharp cheddar cheese
•1 package (8oz) cream cheese, cut into small cubes
•1 (4 oz) can chopped green chilies, drained

Steps:

  • 1.In large saucepan set over medium heat, cook the bacon for 3-5 minutes, or until it's starting to crisp and has rendered out most of its fat. Add jalapenos, and continue cooking for another 2-3 minutes, or until the bacon is crisp and the jalapenos are softened. 2.Add flour and cook for 1 minute, stirring constantly. Slowly add the beer, whisking briskly to break up lumps, and bring to a simmer, stirring constantly. 3.Reduce heat to low. Add the cheddar cheese and cream cheese, and simmer for 3-5 minutes longer, stirring constantly, until the dip is thick and smooth and bubbling hot. 4.Serve the dip immediately, preferably in a warming crock or small fondue pot to keep it melty and warm.

1 package(s) (8 oz.) light cream cheese, softened
1/2 cup(s) mayonnaise
1/2 can(s) (2 oz.) fire roasted diced green chiles, drained
3 tablespoon(s) red peppers, finely chopped
3 tablespoon(s) jalapeño peppers, seeded, ribs removed and finely chopped
2 slice(s) bacon, cooked and crumbled
1/2 cup(s) grated cheddar cheese, divided
1/4 cup(s) panko®

Steps:

  • In a medium bowl, add cream cheese, mayonnaise, green chiles, red peppers, jalapeño peppers, bacon and 1/4 cup grated cheese; stir to combine.
  • Transfer cream cheese mixture to a small baking dish and spread evenly with a spatula; set aside.
  • In a small bowl, mix together remaining cheese and bread crumbs. Sprinkle evenly on top of the cheese mixture.
  • Transfer to a 350ºF preheated oven and bake for 25 to 30 minutes or until cheese is bubbling. Serve immediately with tortilla chips.
