2 (28 ounce) cans crushed tomatoes
2 (14 1/2 ounce) cans diced tomatoes with juice
1/4 cup extra virgin olive oil
2 garlic cloves, thinly sliced
1 teaspoon kosher salt
fresh ground black pepper
sugar (about 4 teaspoons)
1 sprig fresh basil
1/2 cup fresh basil leaf, torn into small pieces

Steps:

  • In a 3-4 quart. pot, heat the oil and garlic together. When garlic becomes pale gold and fragrant add the tomatoes, salt, pepper, sugar and basil sprig. Stir well to combine and bring sauce to a boil, then reduce to a simmer. Simmer sauce, 20-30 minutes, stirring occasionally until sauce has thickened and is richly flavored. Remove from heat, check for seasoning and stir in the torn basil leaves.
