LORRAINE'S BACON-CHEDDAR STRAWS

Lorraine's Bacon-Cheddar Straws image

Provided by Lorraine Pascale

Categories     appetizer

Time 1h10m

Yield 14 cheese straws

Number Of Ingredients 6

All-purpose flour, for dusting work surface
One 13-ounce package puff pastry
1 tablespoon prepared English mustard
14 strips good-quality streaky bacon
3 ounces mature Cheddar, grated
1 free-range egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • On a lightly floured work surface, roll the puff pastry into a large rectangle, 1/4-inch-thick.
  • Rotate the pastry so that the longer side is facing you. Spread the mustard evenly over the pastry. Lay the bacon slices on the pastry, long side facing you, leaving a small gap in between each slice. Trim any messy edges that spill over the puff pastry, to neaten the rectangle into a straighter edge. Sprinkle the Cheddar over the bacon. Cut in between each slice to form individual pastry-bacon strips.
  • Carefully twist each strip 4 or 5 times, so it looks like a curly straw. Place on the prepared baking sheet and brush with beaten egg. Chill in the fridge for 15 to 20 minutes.
  • Remove the twists from the fridge and brush a second time with beaten egg. Bake until the pastry is well risen and golden-brown, 15 to 20 minutes. Set aside to cool.

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 5

1/4 cup maple syrup
2 teaspoons red pepper flakes
1/2 orange, juiced
1 pound regular uncured bacon (not thick cut)
1/4 cup finely shredded Cheddar

Steps:

  • Preheat the oven to 375 degrees F and fit a baking sheet with a wire rack.
  • In a small saucepot, mix the maple syrup, red pepper flakes, orange juice and 1/4 cup water. Bring to a boil, then remove from the heat.
  • Line up the bacon slices on the wire rack and brush with the hot maple syrup mixture. Sprinkle some cheese on each piece of bacon. With a skewer in hand, fold the end of a piece of bacon in half lengthwise and press the skewer through the end. Do this to 4 pieces of bacon, spreading them out evenly across the skewer, and place the skewer on the baking sheet. Twist the bacon pieces into long spirals so as to create straws. Take another skewer and skewer the bottom of each piece of bacon to keep the bacon twisted. Do this to all the bacon.
  • Bake until the bacon browns, about 35 minutes. Let cool slightly on the rack; the bacon will get crunchy as it sits. Serve immediately.

BACON CHEESE STICKS

Categories     Condiment/Spread     Cheese     Pork     Quick & Easy

Yield Estimate 3-4 per person.

Number Of Ingredients 3

Breadsticks - one package or more of plain short breadsticks.
1 lb of uncooked bacon - enough for one slice of bacon per breadstick.
Parmasian Cheese - freshly grated is best or you can use pre-grated deli cheese. Comercial pre-grated cheese is not recomended.

Steps:

  • Wrap each breadstick around with a slice of uncooked bacon. Place on a microwavable bacon tray/rack(Note: Breadsticks should be raised as to allow breadsticks to absorb a minimum of bacon grease). Place tray in microwave on high and cook until bacon just begins to brown. Do not overcook, bacon should be a bit "soft". Remove from oven and roll each breadstick, while still hot, in cheese as to cover. Place in a footed "Celery" or tall glass or on a tray and serve.

i was just playing around in my kitchen and came up with these, they taste great and make good lunchbox fillers, snacks or appetisers. It really is best to use puff pastry but the toppings could easily be changed.Prep time does not include thawing pastry(15min)

Categories     Lunch/Snacks

Time 10m

Yield 30 serving(s)

Number Of Ingredients 3

1 sheet puff pastry
1/2 cup finely grated cheese, i use colby, but any cheese will do
1/2 cup finely diced bacon

Steps:

  • Lightly sprinkle bacon over pastry, followed by cheese.
  • Cut into strips 1/2" wide 2 or 3" long.
  • Bake 230deg for approx 5-10 mins, or until golden. (keep an eye on them they will not take long to burn if forgotten!)
  • These can be made with any topping you like, i sometimes add olives, but you could just as easily make it a sweet by using choc spread and nuts.
