ONION SOUP image

Yield 8 to 10 bowls

Number Of Ingredients 9

8-10 onions, chopped
3 tbl butter
white wine or honey lager
10 oz beef consumme
10 oz chicken broth
10 oz apple cider
assorted fresh herbs
Fresh bread
cheese, parmesean and fontina mix

Steps:

  • Chop the onions. Heat an electric skillet to 250 degrees. Once at temperature, add butter to pan. Add onions and let cook. Allow onions to carmelize fully, do not worry if they burn slightly. Add enough white wine or lager to cover the onions. Turn pan to highest heat. Allow liquid to cook down, around 5 to 10 minutes. Add remaining liquids. Turn heat to simmer. Using a bowl to cut out rounds of bread. Place bread under high broil for 30-60 seconds until brown. Before serving add small amount of brandy. Add soup to bowl, leaving around 1 inch of space. Place bread toasted side down. Add cheese on top of bread. Place in oven and allow cheese to melt.
