This recipe comes from my grandma, and it's one of my family's favorites. We love the combination of bacon, tomatoes and cheese for brunch at any time of year.

1 pastry shell, unbaked
1 pound sliced bacon, cooked and crumbled
1 large tomato, peeled and sliced
1 cup shredded cheddar cheese
3 large eggs, separated
3/4 cup sour cream
1/2 cup all-purpose flour
1/2 teaspoon salt
Paprika

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil. Bake 5 minutes longer. Cool completely. , Sprinkle bacon over the crust. Top with tomato and cheese. In a large bowl, beat the egg yolks, sour cream, flour and salt until smooth. In another large bowl, beat egg whites until stiff. Fold into sour cream mixture; spread over cheese. Sprinkle with paprika. , Bake at 350° until a knife inserted in the center comes out clean, about 45 minutes. Let stand 5-10 minutes before cutting.

2 pounds beef from shank or chuck or lamb from shank or shoulder (from the butcher), hand trimmed and chopped into 1/2 inch pieces
2 tablespoons olive or canola oil
6 slices smoky thick-cut bacon, diced
Salt and coarse black pepper
1 onion, chopped
2 carrots, chopped
2 small ribs celery, chopped
4 cloves garlic, chopped
1 large bay leaf
Bundle of sage and parsley, a few sprigs each
2 rounded tablespoons flour
About 3 tablespoons Worcestershire sauce
Cup dry red wine
2 1/2 cups beef or veal stock
For the topping:
2 to 2 1/2 pounds Russet potatoes, 5 large, peeled and cubed
1 cup warm milk
Cup sour cream
2 rounded tablespoons prepared horseradish
1 cup smoked blue cheese or blue cheese crumbles
1 cup grated Parm or sharp cheddar
A few grates of fresh nutmeg
1 cup finely chopped chives
2 large egg yolks
Sprinkle of paprika

Steps:

  • To meat drippings add onions, carrots, celery, garlic, bay herb bundle, salt and pepper. Cook partially covered 10-12 minutes to soften, stirring occasionally. Add flour and stir one minute to cook out raw flour taste, add Worcestershire and wine, and stir. Add stock and beef or lamb and bacon back to pan reduce heat to simmer and cook covered until tender, stirring occasionally, up to 40 minutes.

Bake at 450° for 8-10 minutes or until lightly browned. Cool slightly., In a large bowl, beat cream cheese until fluffy. Add eggs and milk; beat until smooth. Add cheese, onions, bacon, salt, pepper and cayenne; mix well. Pour into the crust., Bake at 350° until set and a knife inserted in the center comes out clean, 40-45 minutes. Cool 20 minutes. 1 cup elbow pasta
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese

2 tablespoons butter, melted
½ teaspoon garlic powder

Steps:

  • In a large pot or skillet, add 2 cups (470ml) of milk, pasta, salt, and pepper. Bring it to boil, stirring constantly so the milk and pasta do not burn.
  • When the liquid is evaporated halfway, add the rest of the milk. Stir until pasta is al dente. Add shredded cheeses and mix until melted.
  • Take off the heat to prevent mac 'n' cheese from over cooking.
  • In a oven-safe ceramic bowl, coat the inside with butter (or oil). Place sliced cheese until the bowl is fully covered.
  • Add bacon (or any desired fixins'), and add the pasta to the top.
  • Roll or spread out pizza dough to fit the bowl and place over the top.
  • In a small bowl, melt butter. Add in garlic powder, salt, and Italian seasoning, then brush on top of dough.
  • Bake in a 350°F (180°C) over for 25 minutes.
  • Carefully place a plate over the dough and flip the bowl. Use a butter knife or fork to separate from the bowl.

5 slice bacon, fried and chopped
2 large yellow onions, chopped
1 pinch salt
3/4 c ricotta cheese
1 egg yolk
1 pinch pepper
3/4 c gruyere cheese
1/4 c parmesan cheese
1 frozen pie shell or your own pie crust

Steps:

  • 1. Preheat oven to 350. Fry bacon, remove and pat with paper towels and leave fat in the pan.
  • 2. Add onions to the pan and brown. Sprinkle with salt. Once they are browned , let them cool.
  • 3. Mix ricotta, egg yolk and Gruyere in a separate dish. Spread into the pie shell. Scrap onions on top of that, ( even the little brown bits) than shake Parmesan on top. Sprinkle with pepper.
  • 4. Spread bacon evenly on top of that and bake until the pie shell has baked, approx. 30 - 40 minutes depending on your oven. ( when the pie shell has baked a golden brown, that's when I take it out)
  • 5. Enjoy all the raves!!

1 1/2 cups flour
1/4 teaspoon salt
1/2 cup chilled butter, cut into pieces (4 ounces)
3 tablespoons sour cream
1 -2 tablespoon water
3 slices bacon
1 lb vidalia onion, thinly sliced
3 eggs
1/2 cup milk
1/2 cup sour cream
1 tablespoon flour
1/4 teaspoon nutmeg
1/8 teaspoon pepper
1 cup grated swiss cheese (about 1/4 pound)
2 tablespoons chopped parsley, for garnish

Steps:

  • MAKE THE PASTRY: In a large bowl, combine the flour and salt. With a pastry blender or two knives, cut the butter in until the mixture resembles coarse meal. Blend in the sour cream. Sprinkle on 1 tablespoon of the water and work it into the dough, adding up to 1 more tablespoon of water to form a dough that can be gathered into a ball. Pat the dough into a disc shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • On a lightly floured surface, roll the dough into a 12-inch circle, then fit it into a 9-inch pie pan. Trim the overhang to an even 1/2-inch all the way around. fold the overhang over and crimp the dough to form a decorative border. Prick the bottom of the crust lightly with a fork. Refrigerate the pie shell for 30 minutes.
  • Preheat the oven to 400 degrees. Line the pie shell with foil and fill with dried beans or pie weights. Bake for 8 minutes. Remove the foil and beans, and bake the pastry for 8 to 10 minutes longer, or until lightly golden. Remove the pie shell from the oven and reduce the the oven temperature to 375 degrees.
  • MAKE THE FILLING: In a large skillet, cook the bacon over medium heat until crisp, about 10 minutes. Reserving the fat in the skillet, drain the bacon on paper towels; crumble and set aside.
  • In the bacon fat, saute the onions over medium heat until softened but not browned, about 10 minutes.
  • Meanwhile, in a medium bowl, whisk together the eggs, milk, sour cream, flour, nutmeg, and pepper.
  • Spread the onions evenly over the bottom of the pie shell. Sprinkle the reserved bacon and the cheese evenly on top. Pour the custard mixture into the pie shell and bake for 20 minutes, or until the custard has set and the top is golden brown.

Please taste the filling as it is cooking before you add stock. Try to find a salt free or make it yourself because the bacon and cheese are salty enough. Also- thicken to your own liking

3 cups plain flour
2 tablespoons dried onion flakes
2 teaspoons paprika
1/4 teaspoon fresh ground black pepper
1 cup butter, cold and chopped
1 egg, beaten
6 -8 tablespoons cold water
4 slices bacon, diced
1 large onion, diced
1 kg of casserole beef, small dice
6 small eggs
3/4 cup flour
3 tablespoons oil
5 fresh garlic cloves
2 tablespoons paprika
1 teaspoon dried marjoram
1 teaspoon dried thyme
2 liters low sodium beef broth (I used homemade)
100 g cheddar cheese (to taste)
2 tablespoons parmesan cheese (optional)

Steps:

  • Pastry.
  • Put flour, onion flakes, pepper and paprika in a food processor. Add the butter and process until crumby.
  • Add half the cold water to the beaten egg and pour in while still mixing. Add water very slowly until it starts to resemble dough. Don't let it form a ball.
  • Divide dough in half, roll one lot out and line your pie dish. Prick and cover with dried beans and bake on 200 celsius until almost cooked -- about 15 minutes.
  • Wrap the other dough in wrap and refrigerate until needed.
  • Filling.
  • Sauté onion, bacon, garlic and paprika in the oil in a pan until cooked just through.
  • coat the beef with the flour and add to the pan, cook it for about five minutes and then add the stock slowly stirring it constantly to avoid lumps.
  • Depending on what meat you are using, add enough water to cook it down for a while (1-4 hours) and keep adding it as needed. Add the Marjoram.
  • When the meat is just about tender enough cook it down until it is thick.
  • Empty out the beans and pour the filling into the case. Break the eggs straight on top, spread out evenly and cover with the cheese (Save some for the top of the pie).
  • Roll out the pastry and put it on top. Prick a few air holes.
  • Brush with egg wash and sprinkle some extra bacon pieces, grated cheese (not too much and the parmesan on top. You can grind some pepper over it too.
  • Bake until golden brown on high for about 30 mins or so -- watch it!

2 (8 ounce) packages Red Leicester cheese
2 ¼ pounds red potatoes, cubed
1 (8 ounce) package unsmoked back bacon
3 ½ ounces Cheddar cheese, grated
freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cut Red Leicester cheese into 1/2-inch cubes; set aside.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until almost cooked through, 10 to 15 minutes.
  • While the potatoes are cooking, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until completely cooked but not too crisp, about 10 minutes. Drain bacon slices on paper towels and roughly chop when cool enough to handle.

Add the cheese, onions, bacon, mushrooms and spices to the cream cheese mixture and stir by hand until well incorporated. Pour into crust. Brown potatoes and sprinkle with paprika to serve.

10 slices bacon, in 1-inch pieces
1 (8 ounce) can crescent roll dough
2 medium tomatoes, sliced
1/2 teaspoon salt
pepper
5 slices American cheese
1/2 cup flour
paprika
3 eggs, separated
3/4 cup sour cream
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Fry bacon until crisp and drain on paper towels.
  • Unroll Crescent dough and separate into 8 triangles.
  • Place triangles into 9-inch pie plate with narrow point toward center. Press pieces together to form crust.
  • Sprinkle bacon over crust.
  • Top with tomato slices.
  • Season with salt and pepper.
  • Place cheese slices on top of tomatoes.
  • Beat egg whites until stiff and set aside.
  • In large mixing bowl, combine egg yolk, sour cream, flour, salt, and a dash of pepper.
  • Blend well then gently fold beaten egg whites into mixture until a few lumps of egg white remain. Do NOT overblend.
  • Pour mixture over cheese layer and sprinkle with paprika.

1/4 tsp pepper
1 sheet refrigerated pie pastry
1 cup (4 oz) shredded sharp cheddar cheese
2 Tbsp grated parmesan cheese

  • Place garlic on a double layer of heavy-duty foil, drizzle with oil, wrap and bake at 425 for 15-20 min until softened. Remove and cool. In a large skillet, cook bacon until crisp. 1 3/4 pounds bacon
8 ounces uncooked cellentani (corkscrew-shaped) macaroni
1/4 cup plus 2 tablespoons butter, divided
2 1/2 tablespoons all-purpose flour
2 cups milk
4 cups (16 ounces) shredded sharp Wisconsin Colby Jack Cheese
1/2 cup (about 1 ounce) grated Wisconsin Parmesan Cheese
1/2 cup bread crumbs
1 pinch ground nutmeg
1 pinch fresh basil, chopped

Steps:

  • Take 1 pound of bacon and tightly weave it into a square, alternating over and under with the strips of bacon, that is roughly the size of your pie tin. Flip the bacon weave into your pie tin and press down, conforming the bacon to the shape of the tin. Create another bacon weave using the remaining 3/4 pound of bacon. This will be the lattice top for the pie, so with this one you'll want to leave some space in between the slices of bacon. Place the bacon pie crust and lattice top on separate baking sheets and cook at 400°F for 15 minutes. Meanwhile, cook the macaroni according to the package directions, drain it and set aside. In a saucepan, melt 1/4 cup butter over medium heat and stir in the flour. Add milk to the mix slowly while stirring constantly. Stir in the cheeses and cook over low heat until the cheese is melted and the sauce is slightly thick. Melt remaining 2 tablespoons butter in a skillet over medium heat. Add breadcrumbs and brown. When the bacon is done cooking remove the second pie tin from the top of the crust and let it cool for a few minutes. (Pat the bacon gently with paper towel to absorb any excess grease.) Spoon the macaroni mixture into your bacon pie crust and sprinkle the breadcrumbs over the macaroni and cheese. Sprinkle with nutmeg and basil leaves. Cover your pie with the bacon lattice top and cook at 400°F for 15 minutes. Once your pie is done cooking let it cool and then dig in and enjoy!

Trying to use up some garden vegetables from 2012 season, I made this the other evening and turned out delicious.

1 - 9" deep dish pie plate
1 - homemade or prepared pie crust
1-1/4 cup(s) fresh or frozen broccoli - roughly chopped
1/4 cup(s) onions, chopped
3 - strips crisp bacon - crumbled
5 - eggs
1 3/4 - milk ( % of your choice)
1 1/2 cup(s) cheese, shredded - mixture of romano, cheddar, asiago, etc..
1 teaspoon(s) butter, melted
- salt and pepper to taste

Steps:

  • Saute broccoli and onion in a little oil, just crisp/tender. In medium bowl, beat eggs, add broccoli, onion, bacon.
  • Mix in melted butter, and milk.
  • Spread 1/2 amount of shedded cheese in the bottom of raw - empty pie shell. (cheese mixture of your choice - I used what I had already in the frig.) Pour the egg mixture slowly on top of the bottom layer of cheese. Spread the remaining 1/2 shredded cheese on top of the pie filing.
  • On bottom oven rack - Bake 350 degrees for 45 minutes or until knife inserted in pie comes out clean. Cover your pie crust edge with foil, or crust protector if its getting browned too fast - if you don't like dark crust.
  • Remove from oven to let it settle for a few minutes before cutting. Serve has you like with sides.

That's how my mum used to call this alsatian tart. The real name is flammekueche, in my family, we make it with "fromage blanc", which is something creamier than plain yogurt. You can find a lot of different recipes for this tarte, using creme fraiche or not, very thin bread dough or puff pastry. I like it this way, try it with some gruyère cheese (grated) on top, Miam !

230 g puff pastry
6 tablespoons fromage blanc
200 g lardons or 200 g Canadian bacon, slices
4 onions
pepper

Steps:

  • Preheat oven 200°C.
  • Put the puff pastry sheet on wax paper, on a cookie sheet or pizza pan (i don't know how to say that in english, sorry).
  • Spread le fromage blanc (don't use too much, you don't want it to overflow, so maybe you'll need less than 6 tablespoons).
  • Bake the lardons or canadian bacon slices, with the onions, in a skillet, until crispy (bacon) and tender (onion).
  • Spread the onion mixture over fromage blanc, and add some pepper.
  • Bake for 10 or 15 minutes, until dough is golden.
  • Enjoy it with some salad :).

1 tomato, chopped, divided
2 green onions, thinly sliced, divided
1 cup KRAFT Shredded Sharp Cheddar Cheese
8 slices cooked OSCAR MAYER Bacon, crumbled
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese
1 cup milk
5 eggs

Steps:

  • Heat oven to 375°F.
  • Prepare pie crust in 9-inch pie plate as directed on package for one-crust filled pie.
  • Reserve 1 Tbsp. each tomatoes and onions for later use. Spread remaining tomatoes and onions onto bottom of pie crust; top with cheddar and bacon.
  • Microwave cream cheese in large microwaveable bowl on HIGH 30 sec. or until softened; whisk until creamy. Gradually whisk in milk, then eggs until blended. Pour over ingredients in pie crust. Place on rimmed baking sheet.
  • Bake 40 to 45 min. or until knife inserted in center comes out clean. Sprinkle with reserved tomatoes and onions. Let stand 10 min. before cutting to serve.

1 unbaked pastry shell (9 inches)
1 lb bacon, cooked and crumbled
1 large tomato, peeled and sliced or 2 - 3 small
1 c (4 ounces) shredded cheddar cheese ( i always add a bit more )
3 eggs, seperated
3/4 c sour cream
1/2 c all purpose flour
1/2 tsp salt
1/4 tsp pepper
paprika

Steps:

  • 1. Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil. Bake 5 minutes longer. Cool completely. I use homemade crust for two pies, and double ingredients for filling, as this is great leftover meal. Just re heat in microwave.
  • 2. Sprinkle bacon over the crust. Top with tomato and cheese. In a large bowl, beat the egg yolks, sour cream, flour and salt until smooth. In another large bowl, beat egg whites until stiff. Fold into sour cream mixture; spread over cheese. Sprinkle with paprika.
  • 3. Bake at 350° for 30 - 45 minutes or until a knife inserted near the center comes out clean. Let stand 5-10 minutes before cutting. Mine is always baked in 30 minutes.

10 strips bacon, crumbled
1/3 cup dried minced onion
1 cup Swiss cheese, grated
4 eggs
2 cups heavy cream
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon ground red pepper

Steps:

  • 1. Preheat oven to 425° F. Sprinkle bacon, onion and cheese in bottom of well greased pie tin. Beat eggs slightly in a bowl. Beat heavy cream, salt, black pepper and red pepper, if using. Pour into pie shell. 2. Bake at 425° F for 15 minutes, then reduce heat to 300 degrees F and bake 30 minutes longer, or until knife inserted 1-inch from edge comes out clean. Let stand 10 minutes before cutting into wedges.
