BACON AND CHEESE BLINTZES



Bacon and Cheese Blintzes image

Brunch for four? Serve thin Bisquick pancakes stuffed with cheesy eggs and bacon.

1/2 cup Original Bisquick™ mix
1/2 cup milk
1/4 cup butter, melted
8 eggs
3 tablespoons butter
1/4 cup whipping cream or half-and-half
1 package (3 oz) cream cheese, cut into small pieces
1/2 cup chopped green onions (8 medium)
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
8 slices bacon, crisply cooked, crumbled
1/2 cup shredded Cheddar cheese (2 oz)

Steps:

  • In small bowl, beat Bisquick mix, milk, melted butter and 2 of the eggs with wire whisk until blended. In 6- to 7-inch skillet or crepe pan, heat 1 tablespoon butter over medium heat until bubbly. For each crepe, pour 2 tablespoons batter into skillet. Immediately tilt and rotate skillet until batter covers bottom. Cook until light brown. Run wide spatula around edge to loosen; turn and cook other side until light brown. Stack crepes with waxed paper between each; keep covered.
  • In medium bowl, beat remaining 6 eggs and the whipping cream with fork or whisk until blended. Stir in cream cheese, 1/4 cup of the onions, the salt and pepper. In 12-inch skillet, heat 1 tablespoon of the butter over medium heat just until it begins to sizzle. Add egg mixture; cook 3 to 4 minutes, stirring frequently but not constantly, until eggs are thickened throughout but still moist.
  • Spoon 3 tablespoons egg mixture in center of each crepe. Sprinkle with bacon. Fold sides and ends of crepe over filling to form rectangle. In same skillet, melt 1 tablespoon butter over medium heat. Add 5 blintzes, seam side down, to skillet; cook 1 to 2 minutes, turning once, until golden brown. Remove to serving platter. Repeat with remaining 1 tablespoon butter and 5 blintzes. Sprinkle with Cheddar cheese and remaining onions.

This recipe is so easy and so delicious, it always turns out so moist! Add in some cayenne for extra heat if desired.

3 1/2 cups Bisquick baking mix
1/4 cup sugar
1 1/2 cups shredded cheddar cheese
7 slices bacon, cooked and crumbled (can use more)
1 egg
1 1/3 cups milk

Steps:

  • Set oven to 350 degrees.
  • Grease and flour 9-inch springform pan.
  • In a large bowl combine Bisquick baking mix and sugar; stir in cheese and bacon.
  • In a bowl beat the egg and milk; add to cheese mixture just until moistened, then pour into a greased and floured springform pan.
  • Bake for about 35-40 mins or until it tests done.
  • Cool 10 mins remove sides of pan and serve warm.

12 slices bacon
1/2 cup cheddar cheese, shredded
2 cups Bisquick baking mix
1 cup milk
2 tablespoons vegetable oil
2 eggs

Steps:

  • Grease jelly roll pan. 15 1/2 x 10 1/2 x 1 inch.
  • Sprinkle bacon and cheese evenly into bottom of pan.
  • Beat remaining ingredients with wire whisk, until well blended.
  • Pour over bacon and cheese, spread batter to edges.
  • Bake 14 to 16 minutes until light golden brown.
  • Cut into 6 pieces, serve immediately.

8 slices bacon
4 1/2 cups Original Bisquick™ mix
1 1/3 cups milk
6 medium green onions, chopped (6 tablespoons)
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper (cayenne)
1 1/2 cups shredded sharp Cheddar cheese (6 oz)
3/4 cup shredded mozzarella cheese (3 oz)

Steps:

  • Heat oven to 400°F. In 9-inch cast-iron skillet, cook bacon until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 2 tablespoons bacon drippings in skillet, coating bottom and side completely. Discard any remaining drippings.
  • In large bowl, stir Bisquick mix, milk, 1/4 cup of the onions, the garlic powder and red pepper until soft dough forms. On surface sprinkled with additional Bisquick mix, pat dough to 1-inch thickness. Cut dough with 2 1/2-inch round cutter. Arrange rounds in skillet; sprinkle 3/4 cup of the Cheddar cheese evenly between rounds.
  • Bake 15 to 17 minutes or until lightly browned. Sprinkle mozzarella cheese and remaining 3/4 cup Cheddar cheese on tops of biscuits. Bake 2 to 4 minutes longer or until cheese is melted. Sprinkle with bacon and remaining 2 tablespoons onions. Serve warm.

1/2 cup butter
2 cups Original Bisquick™ mix
2 cups milk
8 eggs
1 cup shredded Swiss cheese (4 oz)
1 lb cubed cooked ham (about 3 cups)
1 package (2.1 oz) precooked bacon, chopped
2 cups shredded Cheddar cheese (8 oz)
1/4 teaspoon salt
1/4 teaspoon ground mustard
Dash ground nutmeg

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Place butter in dish; place in oven until melted, about 10 minutes.
  • In medium bowl, mix Bisquick mix, 1 cup of the milk and 2 of the eggs with whisk until tiny lumps remain. Pour over butter in baking dish. Layer with Swiss cheese, ham, bacon and Cheddar cheese. In large bowl, mix remaining 1 cup milk, remaining 6 eggs, the salt, mustard and nutmeg. Pour over casserole.
  • Bake uncovered 35 to 40 minutes or until golden brown. Let stand 10 minutes before serving.
